CULINARY TIP OF THE DAY #1

Image
New Feature: CULINARY TIP OF THE DAY #1: Let raw potatoes stand in cold water for at least half an hour before frying to improve the crispness of french-fried potatoes. My grandmother always did this when I was growing up in her house and she did make the crispiest fried potatoes. She also cut them in little chunks and I remember them as the best fried potatoes ever.

MACS & CHEESE SOUP (Comfort Food at it's Best)

Image
Adapted from http://www.foodnetwork.com/food-network-magazine/ My husband found this recipe when he was looking through some of my magazines and placed it in my hand and said, "we have to have this and sooner would be better than later." So I obliged him and put my own spin on it as I am bad to do and it is now ranked amongst our 'very favorite things'. It is not low calorie, though it is lower calorie than the classic baked macs & cheese, and it is most definitely not low carb either. But when you cook for a tall, thin man, whom I have been cooking for over 35 years, and have not put even 1 ounce of fat on him, you come to the reality that it is not going to happen, so when he asks for something special I don't mind to deliver. And deliver I did! It is delicious and I guarantee it to warm not only your belly but your soul. 1 cup elbow macaroni 2 Roma tomatoes, skin-on, sliced 1/2-inch thick 4 (1/2-inch thick) slices baguette sea salt freshly ground black pepp...

Easy Microwave Caramels

I LOVE caramels, especially soft caramels! I love the sweetness, the butteriness, and the smooth texture. So I'm thrilled that I can now make my own homemade caramels, thanks to my friends Elisa and Angie (see Elisa's recipe here ). And these are some of the best caramels I've ever had. In the past, I've been afraid to try making something like this. Candy making intimidates me. But I shouldn't have worried. This recipe is a lot easier than I expected. I tinkered with the microwave times the first couple of batches to get the desired consistency I was after, but now I've got it down. I am in heaven! 1 cup corn syrup 2 cups sugar 1 pint whipping cream Dash of salt 1/4 cup butter 1 teaspoon vanilla Combine sugar, corn syrup, salt, and 2/3 cup cream in a microwave-safe bowl (it needs to be a deep bowl because the caramel mixture bubbles up quite a bit, and you don't want it to spill over into the bottom of your microwave; I use the liner from my slow cooker) an...

Meat Pies

Image
Here's a hearty meal idea for ground beef that's especially delicious in the winter. Meat Pies (Serves 4) Crust 1 cup flour 3 Tbs. butter 2 Tbs. sesame seeds 1/2 tsp. salt 1/3 cup milk Pie Filling 2 lbs. ground beef (I use chuck or sirloin) 1 lb. block of Swiss cheese 1 Chinese cabbage (explained below) (You can also use a Celery cabbage.)  1 onion chopped 2 tsp. ground sage salt and pepper to taste You can find a Chinese cabbage in most grocery stores, but sometimes they are out of season. It looks like this: Preheat oven to 425 degrees. To make the crust, use a pastry blender to cut the butter into the flour. You can also use 2 knives to do this. Cut in until you have what looks like lumpy flour. Add the sesame seeds, salt and milk. Stir together. Use your hands to press the dough into a ball. Spray 4 oven-safe bowls with cooking spray. Divide the dough into four equal balls and put one in each bowl. Press the dough into the bottom to form the crust. Bake the crusts for...
