Tuna and Tomato Galette

Image
I love make galettes , its a free form tart.  No blind baking required. I saw a few tomato galettes on Pinterest and wondered if I can use some tuna along with it and extra cheese. It turned out quiet delicious and I think any Maldivian will like it as its got that chili kick ( although I dont go mad with the chilli like some people), the tuna flavor and the cheese and  sweet tomatoes. So give it a go and serve it along with a nice green salad. If you are making this on a hot day, chill the dough after rolling it  before you put the filling. This way it makes it easier to fold the edges. Recipe : Tuna and Tomato Galette Pastry:           250g flour           125g  butter or use margerine if you like           1/2 tsp dried mixed herbs           1-2 tbsp cold water           1/4 tsp ground black pepper           1 egg, ...

Kashikeyo Baipen (Screwpine fruit Porridge)

Image
I know I posted this a long time ago but I took some of my old posts out due to some comments I got but then again , I realized  different people make their recipes differently, so why bother what people say. Anyway, the first time I heard of this recipe was from my husband. We had just been married and living in Kulhudhufushi as my husband was working there for 6 months.  I love screwpine fruit and its heady perfume. So there I was making, or rather trying to make, kashikeyo kandhi and hubby kept hovering around, going that's not how my mum used to make. Yes I know ladies,  there are lots of new weds, who read this who have heard this line LOL??. Anyway , a few years later,  I finally tasted the  dish , which by the way was a totally different  dish altogether, so my hubby was right???? .   My mum in law  showed me how to make  it and I love making this, especially during Ramadhan, as its not just a desert dish , it can even be eating...

Chicken Curry puff

Image
One of my favorite Malaysia snacks is Curry puffs. I made Sardine Curry puff  before, and then recently I  tried the chicken one.  It was a big hit in my home and also with my  in laws.  The best curry powder I would recommend would be Baba's meat curry powder, although you can still use the local roasted curry powder, which is also great. I have tried this using uncooked chicken as well as with left over roast chicken. Even left over chicken from a curry is great. What really makes this puff so special and extra delicious is the pastry. I learned this pastry recipe from Zoe @ Bake for Happy Kids. Even though you can use the regular shortcrust pastry to make this or even my patties pastry for this  recipe, just give this pastry a try once and you will want to make it again  and again.  Now , I prefer to make jumbo ones but you can try and make smaller ones. Recipe : Chicken Curry Puff  recipe adapted from  Spiral chicken Curry puff reci...

Banbukeyo Hithi ( Breadfruit Curry)

Image
For ages I kept meaning to try one of the Hithi recipes. Hithi means bitter but this is not a bitter curry. Its called hith i because its uses a spice known locally as hithi damui . My mum kept saying its difficult getting hithi damui you can only get it from the local ayuvedhi stalls until my sister discovered after seeing the spice that it was in fact ajwain/ carom seeds . I have seen ajwain seeds in a local shop and also in some of the Indian specialty shops. Ajwain seeds although it looks a lot like tiny cumin seeds  has a slightly different taste. There  are two kinds of hithi , one is this banbukeyo ( breadfruit )  hithi and the other is maalhoskeyo hithi ( plaintain). Recipe : Banbukeyo Hithi Serves 4 -6 1/4 piece of a regular size banbukeyo (about 250g) 2 garlic cloves, finely grated 1/2 inch ginger grated 10 curry leaves small piece pandan leaf 1/4 tsp tumeric 100g smoked tuna 1 small onion thinly sliced 1/2 tsp ajwain or hithi damui 150 ml coconut milk 700...

Tuscan Soup... requested by a guy that hates soup!

Image
Last time... "My guys don't eat soup. One night I was making this soup for my step-mother who wasn't feeling well. My son and husband were in the back of the house playing the play station. They came into the kitchen asking what the terrific smell was... Needless to say, I had to make another batch of soup!" This time the hubby actually asked me to make this soup!  I decided to make it a little heartier. I used Kielbasa because that was all I had on hand. I added large chunks of mushrooms and a teaspoon of minced garlic. I also a cup of evaporated milk. The basic recipe is listed below. Fell free to add or take out what you'd like! Tuscan Soup 6 cups chicken broth 1 onion, chopped 3 (3.5 ounce) links Johnsonville Italian sausage 3 large potatoes, cubed 1 bunch fresh spinach, washed and chopped 1/4 cup evaporated milk salt and pepper to taste Remove skin from sausage and crumble into frying pan. Add chopped onion, and cook over medium heat until meat is no longer p...
