Amish Baked Oatmeal

This was a favorite breakfast way back in Window Rock.  It's still a favorite.  It can be mixed in the evening, stuck in the fridge and baked in the morning.  Sammi always takes a second helping.

3 c. oatmeal
1 1/2 c. milk
2 eggs
1 1/2 tsp. salt
1 c. sugar
1/2 c. margarine, melted
2 tsp. baking powder
2 tsp. vanilla

Mix well.  Spread in greased 9x13 pan. Bake at 350 for 25-30 min. or until edges are golden brown.  Add cinnamon for flavor instead of vanilla, if desired.
