Mexican Chicken
Keep the ingredients for this in your cupboard and you can throw together a casserole in minutes. Good enough to serve company. Recipe is from Jo and Bren.
2 cans Costco chicken (or 2-3 cups cooked chicken)
1 can mushroom soup
1 can cream of chicken soup
1 can stewed tomatoes
1 tsp. chili powder
1/4 tsp. salt
1/2 lb. grated cheese
1 bag crushed tortilla chips (Dorito Nacho Cheese)
1 small onion, diced
Mix together and put in greased 9X13 pan. Bake at 350 for 45 min. Serve with lettuce, tomatoes, salsa, and sour cream. I like to save a handful of chips and cheese to sprinkle on top.
