Mocha Streusel Coffee Cake
This is a yummy, yummy coffee cake. Literally a coffee cake because it really has coffee in it. Gwen sent me the recipe. Thanks, Gwen, we loved it.
Streusel:
3/4 cup brown sugar
1/3 cup flour
4 T. cocoa
1 1/2 tsp. cinnamon
1/4 cup margarine
Combine all ingredients and set aside.
Cake:
3/4 cup margarine
1 cup sugar
1 - 2 T. instant coffee
2 T. hot water
3 eggs
1 1/2 tsp. vanilla
3 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/4 cups sour cream
Beat margarine until creamy. Add sugar and beat 3 minutes. Combine coffee and hot water; add along with eggs and vanilla. Mix dry ingredients together and then beat in alternately with sour cream, ending with flour. Spread 1/2 of batter into 9x13 pan. Sprinkle with 1/2 of streusel. Repeat. Bake for 30 to 35 minutes. Cool 15 minutes.
Glaze:
1 cup powdered sugar
2 T. milk
2 tsp. vanilla
Mix together and drizzle over cake. Serve warm with coffee and friends!
