WEDNESDAY MORNING SMOOTHIE

Every morning I enjoy a smoothie and I truly love coming up with new versions of my favorite morning drink. This morning I went through my refrigerator and freezer to see what new concoction I could come up with. After careful inspection I decided on 1/2 cup Chobani fat-free vanilla yogurt, 1/2 cup diet orange Sunkist, 1/2 of a large frozen banana and 1 cup of frozen strawberry slices.  The end result~Deliciousness! Pumpkin Chocolate Chip Cookies

It's the last week of February and here's our last cookie recipe. This cookie is cakey, yummy and spiced with just the right spices. I made some the other day and the smell and flavor were just amazing. Unfortunately I wasn't able to get a picture, hopefully I can add one really soon!  Pumpkin Chocolate Chip Cookies 1 cup butter, softened 3 cups sugar 2 eggs 2 cups pumpkin 2 teaspoons vanilla 2 teaspoons cinnamon 1 teaspoon nutmeg 1/2 teaspoon ground cloves 5 cups cake flour (5 cups all purpose works too!) 1 teaspoons salt 2 teaspoons baking powder 2 teaspoons baking soda 2 cups chocolate chips Preheat oven to 350 degrees. Beat butter and sugar together for about 2 minutes or until smooth. Add eggs, pumpkin, vanilla and spices. Continue beating for about 2  additional minutes.  Add rest of ingredients to bowl and mix just until flour disappears and all ingredients are combined. Peanut Butter Cookies

Here's yet another cookie recipe. These are one of the most popular varieties that we sell. I have heard that they are really yummy with or without the peanut butter and or chocolate frosting. But, if it's too much work and time to make these, you can always just come buy them from us! :) Peanut Butter Cookies 1 cup butter, room temperature 1 cup brown sugar 1 cup white sugar 1 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon vanilla 2 eggs 3 1/4 cups cake flour (again if using all purpose flour, start with 1/4 cup less and check for stickiness) 1- 12 oz bag Reese's Peanut Butter chips (no substitutions) Pre-heat oven to 350 degrees and place rack in center of oven. Cream together butter, sugars, salt, baking soda and powder.  Add vanilla and eggs. Mix well. Add flour and peanut butter chips. Mix just until flour and chips are blended together. SKINNY NO-BAKE COOKIES

These awesome 'lower in fat' no-bake cookies comes from one of my most favorite food blogs at http://www.skinnytaste.com/no-bake cookies and the beauty of this recipe is that they weigh in at only 1 point per cookie. Oh Yeah....bring um on down the line! 2/3 cup sugar 1/2 cup cocoa 2 tablespoons Brummel & Brown Yogurt spread 1/2 cup fat-free milk 2 1/2 cups quick oats 3/4 cup Better-n-Peanut Butter 1 teaspoon vanilla extract powdered sugar, cocoa powder  Combine first 4 ingredients and boil in a small pan for 2 minutes. Remove from heat and mix in oatmeal, peanut butter and vanilla. Drop by tablespoons onto wax paper or roll into balls with slightly moist hands and refrigerate overnight. The next day you can roll them in powdered sugar or cocoa if desired. STUFFED POTATOES WHICH BECOME POTATO CHOWDER TO FOLLOW

I cruise food blogs to the point that if I were getting paid for it I would be rich. It's an incurable addiction for me. This recipe comes from a very funny lady and I always enjoy reading her posts. You start out making the STUFFED POTATOES..... 2 large baking potatoes, baked until done 2 teaspoons olive oil 1/4 of a large onion, chopped 1 cup broccoli, chopped fine 1 cup carrots, chopped fine 2 cloves garlic, minced 1/2 cup fat-free sour cream 1/4 cup fresh parsley, chopped 2 tablespoons grated Parmesan cheese + more for sprinkling  In a medium skillet, heat oil. Saute onion about 5 minutes. Add broccoli, carrot and garlic, stir until soft, about 5 minutes. Reduce heat, cover and cook 4 minutes longer. Halve potatoes and scoop out pulp. Brownie Marshmallow Cookies

For the second week of February we give you another one of our most popular cookies. The Brownie Marshmallow Cookie is an awesome chocolate cookie with a layer of marshmallow underneath a layer of chocolate frosting. I'm getting hungry just thinking about it! If you don't want to go to the trouble of making them, you can always just come buy some from us. We won't tell! Brownie Marshmallow Cookies 1 cup butter 1 2/3 cups white sugar 2 eggs 1 � teaspoon vanilla � cup unsweetened cocoa � teaspoon salt 1 � teaspoon baking powder 2 1/3 cups cake flour (you can also use all purpose flour, just start with a bit less and check dough for stickiness) Cream butter and sugar. Add eggs and vanilla and mix until blended well. Add dry ingredients and mix.  Cookies can be rolled, formed into drop cookies, or pressed into a 9 x 13 pan (double recipe and bake time).  Roll out dough and cut into circles. Gourmet Potatoes

Now I don't have to search three or four cookbooks on a Sunday morning for just the 'right' Gourmet Potato recipe.  It will be right here.  Sigh...  How comforting! 1 bag hashbrowns 1 can cream of chicken soup 1 1/2 cups shredded cheese 1 1/2 cups sour cream 1 cup milk chopped green onion chopped red pepper seasoning salt garlic powder salt and pepper to taste Topping: 1 1/2 cups crushed cornflakes 1/2 cup shredded cheese 2 T. melted margarine Mix together and bake for 1 to 1 1/2 hours at 350.  Mix topping together and put on potatoes for last 15 min. of baking.  Makes one 9x13 inch pan. It's good without the topping, too.  I just realized that I forgot to put it on today!!

Mandarin Orange Lettuce Salad

So good!  So easy!  I added sliced red onions and a bit of feta cheese to the original recipe.  I think I'll be making this one again. 1 cup slivered almonds 1/4 cup sugar 1 head leaf lettuce, chopped (or a box of salad greens) 1 can mandarin oranges sliced red onion crumbled feta cheese Dressing: 1/4 cup oil 2 T. vinegar 2 T. sugar 1/2 tsp. salt 1/2 tsp. pepper 1/8 tsp. Tabasco sauce Fry almonds in sugar over medium heat, stirring constantly, until browned.  Cool and break apart.  Combine with remaining ingredients and toss with dressing.  Serve immediately.

Sugar Cookies

It's February! And to celebrate January being over, our blog will focus this month on our very own cookie recipes. Since Valentine's Day is next week, I thought we'd start with our famous Sugar Cookies. Last year, these cookies were featured on Studio 5 as one of the 5 best in the state. So, here's the recipe if you want to try making your own, but you can always come and buy them from us too!  Sugar Cookies 1 1/2 cups butter (3 sticks or equivilant mix of margarine and butter) 2 cups sugar 3 eggs 2 teaspoons vanilla 2 teaspoons baking powder 1/2 teaspoon salt 5 cups cake flour (you can use all purpose flour too, start with 4 3/4 cups of flour and increase if the dough seems to sticky) Cream butter and sugar. Add eggs and vanilla and mix until blended well. Add dry ingredients and mix. To make dough easier to work with, chill before rolling. Roll  to about 1/4 inch thick and form (cut) cookies and bake at 350 for 10 minutes.  Cookies are done when top is slightly cracke...

BROCCOLI & CHEESE SOUP~4 WW Points+

I have lost 4 lbs. in 6 days following Weight Watchers Points + system. I am faithfully keeping a journal, logging in every morsel of food that has entered my mouth. It is working. I am also lifting weights, doing set-ups and push-ups, leg lifts and walking the dogs each day. It is a journey that I do not intend to fail at. By the time that I get back to work this Spring, I will be well on my way to a new me. A stronger more confident me. 1 (24 oz.) pkg. frozen broccoli with 3 cheese sauce 3/4 cup low-fat chicken broth 1/2 teaspoon pepper 1  (12 oz.) can evaporated fat-free milk 1/3 cup reduced-fat shredded sharp cheddar cheese Combine broccoli, broth, pepper and milk in a saucepan. Bring to a boil, stirring occasionally; reduce heat, cover and simmer 10 minutes or until broccoli is crisp-tender and cheese is melted. Place half of the mixture in a blender. THAI TURKEY LETTUCE WRAPS with DIPPING SAUCE

Thai food flips my trigger! The tastes, the smells, the visual aspects.....all of these rolled into one makes me a very happy camper. One of my best friends has a new girlfriend and she is part American, part Thai. When he told me this and that she cooked the best spring rolls like EVER, I was down on my knees begging him to sign me up for that class. No other food does this for me the way that Thai food does.
