How to Make Silken Tofu - Vege Angel : "Homemade/DIY Silken Tofu : servings � 6 Ingredients 1 cup soybeans (wash, soak in water overnight, drain and wash) 2 3/4 cups water 1 tsp gypsum powder - calcium sulfate/tofu coagulant Method Place soybeans and water (1 1/2 cups) in a blender and pulse until smooth. Lay a large piece of muslin or cheesecloth in a mixing bowl. Transfer the soy puree onto the cloth. Bring up the sides of the cloth, wrap, twist and squeeze to extract the soy milk. Return the soy pulp from the muslin cloth to the blender, add water (1 1/4 cups) and pulse until smooth. Repeat steps 3 � 4. Better Than Anything Cake

This is my favorite cake that my mom made when I was growing up, I never knew what it was called though. I've seen variations of this cake on some of my favorite cooking blogs and this is my favorite name for it. It's the perfect cake for summer. I made it a couple of weeks ago for my husband's birthday and it was a big hit with our whole family. It's really rich and super yummy. Well worth every calorie! Better than Anything Cake 1 Chocolate cake mix, plus ingredients to make it 1 jar (17 ounces) Mrs. Richardson's Butterscotch Caramel ice cream topping 1 tub (12 ounces) Cool Whip, I used light 3 Heath candy bars, broken up Bake the cake according to the directions, I only made a half because for our small family we didn't need a whole cake. Swiss Chicken

This is yummy!  My friend suggested it one day when I was complaining about not knowing what to cook for dinner.  I have made it a few times since. It's very quick and easy to throw together and I usually have everything on hand, so it's a no-brainer.  I have made it with provolone cheese and it was just as yummy. I don't cut up my chicken into smaller pieces. I just put in one breast for each person I am serving and put a piece of cheese on top of it. I guess if your chicken breasts are HUGE, you may want to cut them up. Tyler loves it because he is a sucker for Thanksgiving dinner and it makes him feel all "Thanksgiving-ish" anytime of the year.  Original post can be found  here . Pizza Crust with Almond Flour AKA Low Carb Pizza Crust you Can Eat WithYour Hands!

My son was having a DiGiorno pizza for lunch and I knew I would snitch a piece if I didn't come up with something for myself. So I got out my bag of almond flour and got busy. My pizza crust worked out so well that I just had to share. This made a pizza round of 6 inches in circumference. I ate half for lunch and the other half for an afternoon snack. I am going to try this recipe and see if it will work for an English muffin. Low-carb pizza crust 1/2 C almond flour 1/4 C shredded mozzarella cheese 1 egg 2 T heavy whipping cream 1 pinch of salt I mixed this up well and formed it into a pizza crust shape in a greased pie pan and baked it for 10 minutes in a 450 degree oven. After this I put the toppings on that I wanted and put it back in the oven for twelve minutes or until the cheese was done to my liking. This crust stayed together and tasted way better than the cauliflower crust I have made before.

Cookie Salad

It's that time of year, barbecue season. I've taken this salad to several barbecues and it's one that our kids request that I make. You won't find a better sweet salad recipe, we love it! I've seen several versions of it, but this is the one that I make. This time I played with some dark chocolate fudge striped cookies that I found at Target, but I didn't think they really added a whole lot, so next time I'll stick with the original fudge striped cookies. Plus it has fruit in it, so it's healthy! Cookie Salad 2 small packages instant French Vanilla Pudding 3 cups buttermilk 1 container (12 ounces) Cool Whip, I use light 2 cans (20 ounce) crushed or chunk pineapple, drained 2 cans (11 ounce) mandarin oranges, drained 1 package fudge striped cookies, broken up In a large bowl, whisk together the pudding, buttermilk and Cool Whip. Add the drained fruit. Just before serving stir in the cookies.

Low Carb Brownies

My job has done a number on my hips! I started working full time last fall. I tried to stay true to the diet but I slipped a number of times. I stopped exercising daily and found it difficult to have time to cook the low carb food that I needed. Yikes! Here is my plan..... Go back on the low carb diet, exercise daily and relax for a few days. I have so many planned projects that I can only relax for this week, then re-do the wood floors, clean out the basement so we can put away the food storage, clean about five cars so Spike can sell them, go on a family reunion, get the kiddo to basketball camp, oh yes...keep working about ten hours a week for a continuing education summer program. Ingredients: 1 (16-oz) can 'Chicken of the Sea' Crab Meat 1 beaten egg 2 tbsp mayonnaise 1 tbsp mustard (prepared) 1 tsp Worcestershire 1 tsp mustard (dry) 1 tsp seafood seasoning 1/2 tsp lemon juice hot sauce (optional) 1/4 cup bread crumbs Here's How: Combine all ingredients except crab and bread crumbs. Add crab to mixture. Fold bread crumbs in gently. Form into desired size crab cakes by hand. Pan fry.

Ingredients: For the pizza crust: 1/8 cup Alaska Sweetened Condensed Milk 1/8 cup grated cheese 4 pcs. thin pizza crust (small) For the Pizza Cream: 1 1/2 cups cream cheese, softened 1/2 cup Alaska Crema 1 1/2 tbsps powdered sugar 1/2 tsp vanilla extract For the Pizza Toppings: 2 pcs kiwi, sliced 10 pcs strawberries, sliced 1/2 cup flaked coconut 1/3 cup pumpkin seeds 1/2 cup cereals Procedure: For the crust, spread Alaska Sweetened Condensed Milk on the pizza crusts then sprinkle with grated cheese. ALASKA CHILI CON CARNE RICE

Ingredients: 2 tbsp oil 1/4 cup onion 1 tsp garlic 1 cup ground beef 1/3 cup red kidney beans 1/3 cup corn 1 pc beef cube 1 tbsp cumin 1/2 tsp cayenne pepper 1/2 cup Alaska Crema 2 cups cooked rice 1/4 cup bell pepper Procedure: In a pan, saute onion and garlic in oil until onion is translucent and garlic is golden brown, add ground beef and stir until cooked. Add in kidney beans, corn, beef cube, cumin, cayenne pepper and Alaska Crema. Mix until everything is well incorporated. Stir in cooked rice and bell pepper. Season with salt and pepper to taste.

ALASKA CREMA BEEF STEW

Ingredients: 2 tbsp oil 1/4 cup onion 1 tbsp garlic 1 1/2 cups beef strips 2 cups beef broth 1/2 cup potatoes 1/2 cup carrots 1 pc. beef broth cube 1/2 cup bell pepper 1 cup Alaska Crema salt and pepper Procedure: Pressure Cook beef until beef is tender. After pressure cooking, set aside beef broth. In a pan saute onion and garlic in oil, add cooked beef then add beef broth. Simmer for a few minutes. Add beef broth cube, potatoes carrots and bell pepper. Allow to simmer until vegetable become tender. Add in Alaska Crema and stir until well incorporated. Season with salt and pepper.

ALASKA MANGO & CHOCOLATE CHIP NAPOLEON

Ingredients: 18 pcs otap cookies 1 whole ripe mango (cut into slices) 1-1/2 tbsp Alaska Sweetened Condensed Milk 2 tbsp chocolate chips 1 pack Alaska Crema Procedure: Arrange a layer of otap cookies in a container and set aside. Whip Alaska Crema until it has doubled in volume. Gently fold in Alaska Sweetened Condensed Milk into the whipped cream. Place a layer of the cream on top of the prepared otap cookies. Place sliced mangoes, another layer of cream and sprinkle with chocolate chips. Top with another layer of otap cookies Chill and serve.

ALASKA GRAHAM MUNCHBALLS

Ingredients: 5-1/2 cups graham crackers, crushed 1 can Alaska Condensada 300ml 2/3 cup Alaska Evaporada 3 cups desiccated coconut 1/3 cup powdered sugar 3 cheeks ripe mango cut into small cubes Procedure: 1. Combine graham crackers, Alaska Condensada and Alaska Evaporada in a bowl. 2. Shape mixture into balls and insert mango in the middle. 3. In a separate bowl, combine desiccated coconut and powdered sugar. 4. Roll balls in desiccated coconut and powdered sugar mixture. 5. Chill and serve. KAPECHINO ALASKA Ingredients: 1-3/4 cups Alaska Condensada 1 can Alaska Evaporada 370 ml 4 liters water 1 cup instant coffee powder 4 pieces star anise (optional) Procedure: 1. Boil water with star anise. Remove from heat then add in instant coffee powder 2. Strain out star anise and mix in Alaska Evaporada. Divide coffee among cups. 3. Serve with a drizzle of Alaska Condensada.

CREAMY CARBONARA

Ingredients: 1/2 cup chopped bacon 2 tbsp chopped garlic 2 packs Nestle All Purpose Cream 250 ml 1/4 cup grated parmesan cheese 1/4 cup grated cheddar cheese 1/2 cup water 300 grams spaghetti or flat noodles cooked al dente Procedure: 1. Fry bacon in a pan until crisp. Add garlic and cook until lightly browned. 2. Lower heat and pour in Nestle All Purpose Cream, followed by cheeses. Thin out with water and stir to combine. 3. Toss cooked spaghetti into the sauce until well-coated. Serve immediately.

Eclair Cake

This no-bake eclair cake is more of a dessert than a cake, but I didn't come up with the recipe or the name. While this may not be the kind of thing you choose to serve foodies, I love it nonetheless. And I'm not embarrassed to say that. :-) 2 (3.4 oz) packages vanilla instant pudding 3 1/2 cups milk 12 oz. package Cool Whip 2 (14.4) oz packages graham crackers Frosting 6 tablespoons butter 6 tablespoons milk 6 tablespoons cocoa 2 cups powdered sugar Blend milk and vanilla pudding mix for about 2 minutes. Fold in Cool Whip. In a 9 x 13 pan, layer graham crackers to cover entire bottom of pan. You may need to cut and shape the crackers to fit nicely. Pour half of pudding/Cool Whip mixture on top and level. Put another layer of graham crackers to cover entire surface. Cut and shape graham crackers accordingly. Favorite Sweet and Sour Chicken

(Ah-yee)  I watched her last time and wrote down the amounts.  This is a real favorite. 1 lb. chicken breast 1 purple onion 1 or 2 green peppers 1 inch knob of ginger, chopped finely Salt Oil for frying 3 eggs 1/4 cup flour 1/4 cup cornstarch 2 T. soy sauce 1/4 cup ketchup 2 T. vinegar 1-2 T. sugar   Slice the chicken, then cut into 1 inch pieces, or so.   Put in a bowl and add salt to taste and the chopped ginger.  Stir. Cut onion and green pepper into large chunks.   Stir-fry in a little oil several minutes.   Set aside. Mix eggs, flour, cornstarch and soy sauce.   Mix into chicken strips until the chicken is all thoroughly coated.   Heat a thin layer of oil in a non-stick frying pan.   Fry the chicken in batches until browned and cooked through.   Mix ketchup, sugar and vinegar.   In a large skillet or wok heat a little oil over medium heat.   Add chicken pieces, then onions and peppers. ...

Chinese Food (the way we eat it in China)

Firstly, I am in no way qualified to write intelligently about Chinese cuisine.  There is simply a huge variety of food, ingredients, and ways of preparation.  All I can write about is the everyday food that Ayi prepares for us and the common dishes we like to eat at restaurants.  I don't think we have once eaten deep fried chicken balls.  At least not in the shape we think of.  Ayi makes us a dish with fried chicken pieces that's even better.  I'm going to post the recipe, and hopefully some more recipes will follow through the summer.  I'm planning to spend time in the kitchen with her.  Come on, let's go see what's cooking. DELECTABLE PINEAPPLE-GLAZED CARROTS

These wonderful glazed carrots are always a hit with the young and the old and everyone else in between. This is one of my aunt, Nan Hamwey's, recipes. The pineapple-glaze sets them off and the flavors are undeniably powerful to the taste buds. I served them with a roasted chicken and sauted cabbage but they would be equally at home next to slices of ham or a platter of my Buttermilk Fried Chicken and a bowl of fresh cooked green beans. 6 big carrots, sliced 1 (8-oz.) can crushed pineapple, drained 1/2 stick butter 1/2 cup fresh orange juice 1/2 cup packed light brown sugar  Combine the carrots with all of the remaining ingredients in a 12-inch baking dish.
