Raspberry Yogurt Salad

Or "Salad so easy your kid can make it" No measuring, just dump and stir. This is perfect for a summer barbecue or Sunday dinner. This is what it looks like freshly made when the berries are still frozen. Once the berries thaw and you stir it up, it gets bright pink. It's delicious to eat both ways. 32 oz vanilla yogurt 1 large box vanilla pudding 8 oz container Cool Whip 1 bag frozen raspberries In a large mixing bowl, mix the vanilla pudding powder into the yogurt unit there's no powder lumps. Fold in the Cool Whip and raspberries. It's good right then, even better in a few hours, and sooo good the next day.

Peanut Butter Granola

I tried this recipe for peanut butter granola quite awhile ago but never got around to posting it. While I didn't love it as a cereal, I have found that I enjoy this granola very much as a snack. I've been munching on it at work. So here it is, peanut butter granola, courtesy of Mel's Kitchen Cafe . 1/3 cup creamy peanut butter 1/3 cup honey or pure maple syrup 1 teaspoon vanilla 2 tablespoons coconut oil Pinch of salt 1 cup chopped, toasted nuts (almonds, peanuts, etc) 3 cups old-fashioned rolled oats 1/2 cup mini chocolate chips (also optional) Preheat the oven to 325 degrees F. Line a large, rimmed baking sheet with parchment paper and lightly grease the parchment with nonstick cooking spray. In a bowl (for the microwave) or in a saucepan (for the stove), combine the peanut butter, honey, vanilla, coconut oil and salt. Melt over low heat until the ingredients are smooth and well-combined. Incredibly Simple Mango Avocado Salsa

Here is what you need to get started: Ingredients: � 2 mangoes, de-seeded and diced into squares � 1 avocado, chopped into cubes � 2 tomatoes, finely diced � 1/2 cup cucumber, chopped into cubes � 2 tbsp. finely diced red onion � 1/4 cup finely chopped cilantro � 1 clove of garlic, crushed � Juice of 1 lime � Optional: sprinkle of himalayan sea salt and some cracked black pepper to taste Method: 1. Add all ingredients into a large bowl. 2. Let ingredients incorporate and flavours blend for 30 minutes to an hour. 3. Eat this salsa as is, or fill �lettuce boats,� dip with zucchini slices or other veggie �chip� rounds like carrots, cucumber, jicama or jerusalem artichokes! Crazy Crab and Avocado Salad

Ingredients 1/3 C. red onion, chopped 3 Tbs. mayonnaise 2 Tbs. cilantro, chopped 3 tsp. lime juice � tsp. cumin, ground � tsp. lime zest 8 oz. imitation crabmeat 1 dash salt 1 dash pepper 1 lg. avocado, halved, pitted, peeled Directions   Combine the onion, mayonnaise, cilantro, lime juice, cumin and lime zest in a mixing bowl. Fold in the crab and add salt and pepper to taste. Squeeze remaining lime juice over the avocado halves. Spoon the crab mixture in to the avocado halves and enjoy! Ingredients 12 ounces crab � fresh cooked, frozen or canned (if canned rinse and dry well) � cup mayonnaise 1 � � 2 teaspoons prepared Wasabi 1 teaspoon wheat free soy sauce, plus more for serving Zest of 1 lime � finely grated 1 large carrot � peeled and grated with large holes of a box grater 1 seedless cucumber � grated with large holes of a box grater 2 scallions, white and green parts � thinly sliced on the diagonal 2 avocados � sliced lengthwise 6 romaine lettuce leaves, ribs removed 1 handful cilantro leaves removed from the stems 6 large rice papers Directions Mix crab with mayonnaise, wheat free soy sauce, lime zest, grated carrot and cucumber and the sliced scallions. Place lettuce leaves on prepared rice paper, put 1/6th of the crab mixture on the lettuce leaves, add two slices of avocado and top with some cilantro leaves. Roll and cut in halve. The Potato House Fries

If you are from my area and have been to the Sumter County Fair, you know exactly what I'm talking about when I mention the Potato House! Many people wait every year for the fair to come to town around the end of September, beginning of October, so they can sample all the fair foods! My favorite was always the french fries at the Potato House. Long, straight, square cut, deep fried potatoes that are perfectly salted and served with your choice of condiments. Whether you are a purist and like them oh natural, or you like malted vinegar or ketchup, it's up to you! Just step up and get your cone of fries and move on to the fixin's table! These potatoes are deep fried in a large batch and fried for about 4-5 minutes or until floating and golden brown. There is not time to fry them at a low temperature and then re-fry them at another temperature! Drop 'em. Drain 'em. Wrap 'em and serve 'em! SANDRA'S HOMEMADE APPLE-BANANA-CRAN BARS with CREAM CHEESE FROSTING

Very moist and flavorful homemade bars, with a distinct hint of banana, apple and cinnamon, including the pop here and there of delicious craisins...  Yields (32 bars) Prep: 10 Mins. Bake: 20 Mins. INGREDIENTS: 1/2 cup (1 stick) unsalted butter, room temperature 1-1/2 cups granulated sugar 2 large eggs 1 cup sour cream 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon ground cinnamon 1 teaspoon baking soda 1/2 teaspoon double-acting baking powder (or regular) 1/4 teaspoon fine-grain kosher salt 1/2 cup mashed ripe banana (1 medium banana) 1/2 cup unsweetened applesauce 1/4 cup craisins, roughly chopped --Cream cheese frosting (recipe below) METHOD Preheat oven to 350 degrees. Line a 10x15" baking sheet with parchment paper, and spray top; set aside. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, then stir in sour cream and vanilla. Easter Eggs... Boiling the perfect Egg!

Deviled Eggs The best way to insure beautiful boiled eggs (without that ugly green film on the yolk) is to start off with the eggs in cold water. Bring the water to a boil, and boil for 3 minutes. Then, turn the heat off, cover the pot and let them sit for ten minutes. To dye the boiled eggs, use small juice glasses or coffee cups. I like the glasses because you/the kids can see the egg. Add water and a tablespoon of vinegar to the glasses. (about half way full) Then add a few drops of food coloring. Let the eggs sit for a minute.* Remove the eggs and let them drain and dry on paper towels. Don't try to wipe them dry. * Tip... The longer you let the egg sit in the dye, the darker it will get.  Easter Eggs ready to hide! :-) I like to make deviled eggs, potato salad , chicken salad , tuna salad and egg salad with my left over Easter Eggs! These have bacon added to them!

Pull Pork for Sandwiches

Whole Boston Butt 1 cup Apple Cider Vinegar Kosher Salt Black Pepper Garlic Powder Preheat the oven to 250 degrees. Pour about 1 cup Apple Cider Vinegar over the pork, and then coat with salt, pepper and garlic powder. Bake  the Boston Butt at 250 degrees for about 6-8 hours uncovered... until the bone slides out easily and clean. I picked the fat off, and it actually fell apart easily... no fork shredding necessary! Then I added Daddy's BBQ Sauce to it. This time I used a Hamilton Beach Automatic Roasting Oven that my step-mother, Pixie gave me. I put the pork in it on 225 degrees at 12 midnight, and the Hubby cut it off when he left for work. Remove the bones. They should slide out clean. Take two forks and "pull" the meat apart or shred it. Add "Daddy's BBQ Sauce" to taste! If you don't have any sauce you can order some here... A crazy-good clam fritter recipe I created for lunch today! It's like a party in your mouth, really... Yields: 16 to 18 fritters Prep: 10 Mins. Cook: 4 to 5 Mins.
