SANDRA'S MOOSEY ALASKAN SLOPPY JOES (Quick N Easy)

A surprisingly quick and easy method to prepare terrific sloppy joes for a crowd that's nearly as fast as opening the traditional store-bought canned version,  but tastier... Serves: (6-8, depending on bun size) Prep: 5 Mins. Cook: 10 Mins. INGREDIENTS 1 lb. lean moose burger (or venison, buffalo, caribou, elk, poultry, beef...) Pinch of red pepper flakes 1 tablespoon finely chopped green bell pepper 1 tablespoon finely chopped celery 1/2 teaspoon garlic powder 1 teaspoon chili powder 1 teaspoon low-sodium tamari (or soy sauce) 1 teaspoon worcestershire 1 (15 oz. can) tomato sauce 1/2 cup ketchup 1/2 teaspoon yellow mustard 6-8 potato buns (or your preference) Side options: -Potato Chips -Dill Pickle Spears - Sandra's Best Coleslaw  (click for recipe) - Sandra's Best Potato Salad  (click for recipe) METHOD In a medium skillet over medium-high heat, brown the burger (drain if using non-lean).  Add the remaining ingredients; bring to a gentle boil, then reduce heat to ...

Fruit "Cake"

The hubby and I made this whimsical Birthday "Cake" for a friend. Her daughter contacted me and told me that her Mom really didn't care all that much for cake, so could I make her a cake out of fruit. She sent me a picture as a reference, to let me know what she was looking for in a fruit cake. It also had to be sturdy enough to make the trip to the beach where they are vacationing! The hubby and I went through image after image trying to find just the right designs to make the cake special... after all this lady shares the same name as my Mama... Judy! So, she's pretty special to me anyway! Love you, Judy! I hope your birthday was as special as you are! Have a great time at the beach with your family!!! Have fun and Safe travels! Basic Cheese Strata

You put this dish together the night before, so it's a great choice for a leisurely breakfast because all you have to do is bake it. The recipe comes from Becky Ririe, a former neighbor and friend. 6 slices white bread 2-3 cups shredded mild or medium cheddar cheese 3 eggs 2 cups milk 1/4 teaspoon seasoning salt 1 teaspoon dry mustard 1/2 of 4-oz can of diced green chilies Cut bread into small cubes. Layer bread and cheese in a buttered 7 x 10-inch baking dish. Beat together eggs, milk, salt, and mustard; mix in green chilies. Pour over cheese and bread. Cover and refrigerate overnight. Bake uncovered at 350 degrees for 45 minutes or until light and fluffy. Serve immediately. Homemade chili sauce is perfect with this. Serves 6.

Fish-Fragrant Eggplant ????

Now before you say how strange this sounds, just wait a minute.  This is one of Sichuan's famous dishes, fried eggplant in a lovely fragrant sauce.  There really is no fish in it.  The name, I believe, came from originally using these flavors for cooking fish.  It is one of our restaurant favorites and this version turned tasting just like the restaurant version.  This makes one dish for your Chinese meal. 2 decent sized eggplants, or a few thin Oriental eggplants salt oil 1 1/2 T. chili bean paste (douban jiang) 1 T. finely chopped fresh ginger 1 T. finely chopped fresh garlic 2/3 cup cooking stock (use water from cooking meat or water with some chicken bullion added) 1 1/2 tsp. white sugar 1/2 tsp. light soy sauce 1 rounded teaspoon cornstarch mixed with 1 T. cold water 1 1/2 tsp. dark vinegar 4 green onions, green parts only, sliced into fine rings 1 tsp. sesame oil Prepare the eggplant by slicing into chunks 3" long and 1" thick or so.  Sprink...

Green Chili and Chicken Pizza

Okay, here it is.  This is super good topped with fresh salsa.  While you are making the pizza just chop some extra onion and pepper and your salsa is half made!  Enjoy! 1 pizza crust 2-3 chicken breasts oil black pepper seasoning salt 1/2 cup mayonnaise 1 1/2 cups grated Monterey Jack cheese 1 small can chopped green chilies 1/4 cup chopped purple onion 1 T. lemon juice 2 T. chopped fresh parsley 1 green pepper, sliced Additional grated Monterey Jack cheese Pre-bake pizza crust until just done.  Cut chicken into strips.  Stir-fry chicken in small amount of oil and season with pepper and seasoning salt.  Set aside.  Mix mayonnaise, cheese, green chilies, onion, lemon juice and parsley. Spread cheese mixture on baked crust.  Top with chicken strips, green peppers and additional cheese. Bake at 375 for 15-20 min. or until mayonnaise and cheese mixture is melted and bubbling.

Judy's Ice Cream Base and 4 Flavor Options

Mama was famous for her Ice Cream Socials! She would invite everyone over to the pool for a swim, while 5 different churns were whirling away inside the pool house! (For course, there was also a pitcher of her poolside lemonade on hand in the freezer!) Mama's Ice Creams were simple, but tasted better than any ice cream shop in the world. Her favorite was Strawberry! She started with a standard base. Ice Cream Base 6 Eggs 2 cups Sugar 2 quarts Milk Bring to boil, cool and put in a churn or your freezer device. Strawberry Cheesecake Ice Cream 4 cups Ice Cream Base 8oz Cream Cheese, softened 1/4 cup Sugar 1 pint Strawberries, stemmed and diced 1/4 cup Sugar 1/2 Graham Cracker Crumbs 1 T sugar 1 tsp butter, melted Combine the strawberries and 1/4 sugar and set aside. Pour the base in a 13x9 casserole dish and freeze. Meanwhile, in a mixer, blend the cream cheese and 1/4 to 1/2 of sugar, to taste, until cream and combined. Bread Pudding | Absolutely incredible

Ingredients: 2 cups whole milk (or 2 cups half & half) 1/4 cup butter 2/3 cup brown sugar (light or dark, depending on taste preference) 3 eggs 2 teaspoons cinnamon 1/4 teaspoon ground nutmeg 1 teaspoon vanilla extract 3 cups bread, torn into small pieces (french bread works best) 1/2 cup raisins (optional) Directions: 1. In medium saucepan, over medium heat, heat milk (or half & half) just until film forms over top. Combine butter and milk, stirring until butter is melted. Cool to lukewarm. 2. Combine sugar, eggs, cinnamon, nutmeg, and vanilla. Beat with an electric mixer at medium speed for 1 minute. Slowly add milk mixture. 3. Place bread in a lightly greased 1 1/2 quart casserole. 4. Sprinkle with raisins if desired. Pour batter on top of bread. 5. Bake at 350 degrees F for 45 to 50 minutes or until set. Serve warm. If you make the sauce to put on top of your bread pudding, adjust the brown sugar in the bread pudding recipe. Reduce the amount in the recipe to 1/3 cups...

SANDRA'S ALASKAN RHUBARB UPSIDE-DOWN CAKE ~ from scratch

Newly created recipe thanks to my neighbor for providing me with fresh rhubarb and my sis Tina for the inspiration. This is guaranteed to be my best recipe to date of the most succulent, moist and flavorful homemade rhubarb cake, ever!  Servings: (9-12) Prep: 15 Mins. Bake: 25 to 30 Mins. INGREDIENTS: 1st Layer: Rhubarb Mixture: 2-1/2 cups chopped fresh rhubarb (about 1/2" pieces; measure after chopping) 1/2 cup dark brown sugar 1 teaspoon freshly squeezed lemon juice 1/4 cup (1/2 stick) 1/2" cold unsalted butter cubed pieces 2nd Layer: Cake Batter: --Wet: 1/2 cup (1 stick) unsalted butter (not margarine), at room temperature 1-1/2 cups granulated sugar 2 large eggs 1/2 cup mayonnaise 2 teaspoons vanilla extract 1-1/4 cups milk --Dry: 1-1/2 cups all-purpose flour 2-1/2 teaspoons double-acting baking powder (or regular) 1-1/2 teaspoons baking soda 1/2 teaspoon salt METHOD: Preheat oven to 350 degrees. Mexican Pizza

1 pound Ground Beef 1 package Taco Seasoning 4 Flour Tortillas 1 can Refried Beans Taco Sauce Shredded Colby~Jack Cheese Possible Toppings... Lettuce, tomatoes, sour cream, guacamole and/or scallions Brown hamburger, drain and season with your favorite taco seasoning. (Follow the package direction.) Spread all 4 of the tortillas with refried beans. On two tortillas spread half of the meat mixture. Drizzle with 2 T of taco sauce. Top with cheese. Add a second layer with the other tortillas and repeat layering meat, sauce and cheese. Bake for 15-20 minutes at 350 degrees or until cheese is melted and starting to get golden brown. Top with your favorite toppings and enjoy!
