Vidalia Onion Rings

Well, this has been a challenging week. My laptop screen got cracked and nobody knows how it happened. OK! I ordered a new laptop and it should be here Wednesday. In the meantime, I am working through the cracks in the screen. I got to show the hubby something and didn't realize the camera was still attached to the USB. Down the camera goes to the floor! Long story short? Camera doesn't work now! My son took the pictures for this post. Not my usual look and angles... thanks for helping Mama out Elliott! I used some of the Vidalia Onions that I got a couple of weeks ago! I cut thick slices and dredged them in flour. I made a tempura batter  (click for the link). Heat the oil to 350 degrees. Dip the floured onion rings in the batter and completely coat. Let them drip off a bit. Drop into hot oil. when brown on the bottom, flip with a couple of wooden skewers and brown the other side. (Like a donuts) Drain on paper towels. Season and serve with your favorite sauce!

Grandma Syme's Chocolate Cake

Since tomorrow is Memorial Day and not all of us can make it to Moroni, I'm posting this recipe so you can bring a little Moroni, a little family history, to your own home. I asked Mom if this was indeed a recipe Grandma Bardella made up or just one we associate with her. She didn't know. But Mom did write out the steps better which I hope I captured below. Grandma Syme's Chocolate Cake In a large bowl beat together with hand mixer 2 cups sugar 1 cup shortening or butter 4 eggs 1 tsp vanilla In a separate bowl whisk together 1 cup flour 2 tsp soda 1 tsp salt 6 T cocoa Add dry mixture to butter/sugar mixture and blend together. Then add 1 cup buttermilk Then add 1 1/2 cups flour 1 cup boiling water a little at a time Beat until smooth. Batter is much runnier than a cake mix batter. Pour into greased 9x13 pan and bake at 350 for 40-45 minutes.

Risotto with Vegetables and Crispy Oyster Mushrooms

Risotto is paired with vegetables, crispy oyster mushrooms and fresh lemon juice. I use a Trader Joe's frozen organic "Soycutash" vegetable blend comprised of shelled edamame (soybeans), corn and red pepper, but you can substitute with any vegetable blend. The dish includes ramps too, which are generally available at farmers or whole food markets during the spring. Ramps are in the onion family and similar to leeks or scallions so you can easily substitute either one. Serves 2 - 3 Ingredients : 6 ounces frozen "Succotash" or any vegetable blend  1 small red onion, peel and thinly slice 1 purple-top turnip, peel and dice 2 ramps, clean, trim and thinly slice; roughly chop green tops 1 cup risotto 4 ounces oyster mushrooms, clean and roughly chop 2 Tbsp butter Juice from 1 lemon 2 Tbsp grated parmesan cheese Salt and pepper, to taste Instructions: In a medium saucepan, add 1 inch of water and insert steamer basket. Fantastic warm! Feel free to take these Chocolate-Lover Fudgy Brownies over the top by serving them with French vanilla bean ice cream alongside... Servings: (12) Prep: 15 Mins. Bake 30 to 35 Mins. INGREDIENTS Brownies: 3/4 cup semisweet chocolate chips 1/2 cup (1 stick) unsalted butter, cut into cubes 1 cup dark brown sugar, packed 1 teaspoon vanilla extract 2 large eggs, beaten 1/4 teaspoon instant espresso Pinch of cayenne 3/4 cup + 2 tablespoons all-purpose flour 1/4 teaspoon double-acting baking powder (or regular) 1/4 teaspoon baking soda 1/4 teaspoon fine-grain sea salt 1/2 cup white chocolate chips Post-bake finishing: 1/4 cup semisweet mini chocolate chips METHOD Preheat oven to 350-degrees. Sweet Potato and Guacamole Tostadas

In the mood for a light, healthy and refreshing meal tonight? Sweet potatoes, guacamole and pickled shallot, splashed with lime, make this  crispy baked corn tostadas a real winner!  There are a few steps to this recipe ~ but it's well worth the little extra effort. Serves 2 Guacamole Ingredients 1 ripe avocado 1 lime, juiced 1 handful fresh cilantro, chopped 1 small yellow onion, chopped 1 clove garlic, minced Salt and pepper to taste Tostadas Ingredients 4 corn tortillas 1 shallot, thinly sliced 1/2 Tbsp pure cane sugar 1/2 lime, juiced (reserve other 1/2 to serve on the side) 2 large sweet potatoes 1 tsp garlic powder 1 tsp smoked paprika 1/2 tsp salt 1/8 tsp pepper to taste 2 ounces arugula 2 Tbsp goat cheese Instructions: Preheat oven to 450 degrees. Pasta With Chicken Meat Balls In Napoli Sauce ( An adapted Curtis Stone recipe)

My boys love pasta ,  so its a regular at the dinner table at my home.  I saw this simple recipe by Curtis stone , where he served pasta with   chicken meatballs in Napoli sauce. He served it with fettucine pasta but I used spagetti instead. As for the meat balls I  ground or rather chopped up a piece of boneless chicken piece and replaced the breadcrumbs with oatmeal. Or use half a 500g packet of ground chicken(Ayamas Brand found in some of the shops locally). Recipe : Pasta with Chicken meatballs in Napoli sauce, a slightly modified version from Curtis Stone's Fettucine with Chicken Meatballs in Napoli sauce.  check the video here About 300g of spagetti cooked till al dente' in large pot of boiling salted water. Marcella Hazan's Tomato Sauce

My kind of recipe. The New York Times has this to say about it: "This is perhaps the most famous recipe created by Marcella Hazan, the cookbook author who changed how Americans cook Italian food. It also may be her easiest. Use your favorite canned tomatoes for this and don�t be scared off by the butter. It gives the sauce an unparalleled velvety richness." 2 cups tomatoes, in addition to their juices (for example, a 28-ounce can of San Marzano whole peeled tomatoes) 5 tablespoons butter 1 onion, peeled and cut in half Salt Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt. Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed. Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.

I created this recipe using what I had on hand today, and I tell you... this Chicken and Fresh Vegetable Taco Soup  is quite phenomenal,  you truly must give this recipe a whirl... Servings: (4-6) Prep: 10 Mins. Cook: 30 Mins. INGREDIENTS --1 cup uncooked mini-macaroni, cooked according to pkg directions but only to par-cook for 5 minutes, reserve after draining to add back during 'finishing' below... Tandoori Seer Fish Wraps

My brother in law once brought me this big chunk of Seer fish. Seer Fish has a  white meaty flesh and is really great used in curries and for grilling, as it holds its shape, its a lot like tuna and sword fish. I didn't want to make a curry and was looking around the kitchen when I noticed a packet of tandoori  spice mix.  So I made a tandoori spiced fish , a lot like making tandoori chicken, marinating the fish and then placing in a hot oven to cook. If you are having a barbecue or grill then just  pop them on it. SANDRA'S HEALTHIER PEL'MENI in 5-MINUTES

My healthier version of pel'meni in 5 minutes... we're nearly addicted to 'em  ??  they're that good, really... Servings: (2) Prep//Cook: 5 Mins. INGREDIENTS: 14 frozen potstickers (Costco Bibigo veggi brand ) 1 tablespoon coarse sea salt 2 tablespoons unsalted butter (Costco  brand, again ) 1 tablespoon dry cilantro ( McCormick Signature Gourmet brand ) 1 tablespoon sriracha 1 tablespoon rice vinegar 1 tablespoon sour cream METHOD: Bring 4 quarts of water to boil in a medium sauce pan/pot. In the meantime, melt 2 tablespoons unsalted butter in a large ramekin in the microwave for about 1.5 minutes. Add the dry cilantro leaves and let bloom for a couple of minutes (they need the melted butter to do so). When water comes to a boil, add the sea salt (doing so just beforehand or it will pit your pot). It's time to get back to healthy spring salads! This vegetarian salad includes quinoa, shaved brussels sprout and fennel ~ an aromatic herb with a slightly sweet licorice flavor that's rich in vitamin C and dietary fiber. Shredding the sprouts and fennel gives these heavier veggies a nice lighter texture. Strawberry Jam 3 Ways!

My friend Mary at All Things Food~Cooking with Mary and Friends  brought me two gallons of strawberries the other day from Willard Farms . They are beautiful, fragrant and delicious! I decided to make three different types of jam. One regular batch of Strawberry Jam. One batch of Strawberry Jalapeno and one batch of Strawberry Basil Jam. I washed and trimmed the stems of one gallon of strawberries. That yielded about 6 cups of chopped strawberries. It would have been a little more, but my hubby and son kept sneaking strawberries from the bucket! LOL Strawberry Jam Base: 6 cups chopped strawberries 8 cups sugar (more or less depending on the sweetness of the berries) 1 pkg Sure-Jell fruit pectin Add the strawberries to a large pot and mash a little with a large spoon or potato masher. Culantro and Cuban Oregano/ Broadleaf Thyme

A few days  ago I was in the shop next door . No episodes today but I came across this rather strange looking greens.  The leaves were long, bright green with spines around the edges. The packet said it was parsley (!!!!),  I decided to buy it , it was pretty expensive too. Came home with a bunch and googled parsley. But when I googled parsley I got either  flat leaf parsley or the curly parsley.. a fter much digging I finally came across across Thai parsley..... Culantro . Its most commonly known as culantro , has a flavor going towards cilantro rather than parsley but you dont get that heady smell that you get as you get in cilantro.  Its usually used in Thai food and more often in Caribbean food. (I wish they brought regular parsley instead.) Wheat Crackers with Sea Salt

Most of us don't have time to make homemade crackers on a regular basis ??, but everyone should make them at least once ??. And they're actually easy to make since there's no yeast / no kneading. I found a spelt sea salt cracker recipe in Kroger's, My Magazine  and the crackers looked so darn cute, I just had to try it. I used white whole wheat flour instead of spelt and had to increase the amount of buttermilk to get the dough to form a ball. When you have a little extra time, give this recipe a try. These crackers taste a bit like Wheat Thins (but no additives ;o) They are delicious with any cheese ~ and also avocado dip! What's not to love about Buttercrunch Lettuce...  tender leaves, a slightly sweet taste, and it's nutritional value with high amounts of fiber and beta carotene. And to top it off, its eloquent looking leaves make a beautiful salad. This salad pairs several traditional Mexican ingredients (black beans, corn and avocado) with quinoa, for added protein, and a tangy creamy avocado dressing ~ not only healthy, but totally delicious?? SANDRA'S PERFECT BUTTERCREAM FROSTING or ICING

A truly delightful and airy buttercream frosting or icing that I often prepare, as this confectioners' delight enhances most any cake, bar, cookie, or sweet bread recipe... Yields: (2-1/2 cups) Prep: 7 Mins. INGREDIENTS 1/4 cup (1/2 cube) unsalted butter, room temperature 1/4 cup (1/2 of an 8-Oz. block) cream cheese, room temperature � teaspoon  vanilla extract 2 cups confectioners� sugar, sifted 1-2 tablespoons milk for frosting | 3-4 tablespoons milk for icing METHOD In a medium mixing bowl, using a hand mixer to cream together softened butter and cream cheese on high for about 2 minutes. Sift confectioner's sugar over wet ingredients, add milk (depending on your desired consistency for frosting or icing), blend on medium speed until light and fluffy for about 3 minutes. Scrape down the sides of the bowl with a spatula, as needed. Bittergourd Pilau

I am not a fan of bittergourd, mainly due to its bitter taste.  Locally they care called faaga. I remember eating the ripe ones when they were bright and orange just scooping out  bright red fleshy seeds  and eating it but  I  never liked them in their green stages. Its also known for its medicinal qualities, my father has started to soak thinly sliced bittergourd in water, leave it over night and drink the water the next day. Apparently it reduces the blood sugar but please don't start doing this before consulting a doctors, my father like most patients his age like to take matters to his own hand and try to cure himself rather than see another physician ,a stubborn or ego problem  which comes along with old age , I guess... Hearty Vegetable and Super Grains Soup

It's mid-May but a cold and rainy day here in Columbus, Ohio, so I thought I'd make some healthy vegetable soup... red potatoes, carrots, zucchini and french-style green beans, along with some super grains and a splash of crushed red pepper flakes to add a nice zing. I used a super grain blend of buckwheat, millet, red quinoa, and white quinoa, but you can use any one or a combination of these grains. A delicious, healthy and hearty soup ~ enjoy??
