Lime Rice

Its the last few days of Ramadhan  , which means Eid is  just round the corner , so everyone is busy buying new clothes or thinking of getting new clothes, presents for the little ones , and of  course the Eid day lunch. So  to get to the festive mood I am starting with a rice dish. There is a South Indian recipe known as Lemon Rice, and while pondering about a nice but easy way to cook rice for Eid day lunch  I saw this recipe on TLC in a programme called Ravinder's kitchen. I decided to do something quite similar but using lime instead of lemon. It was a lovely way to jazz up rice and best part  can cook the rice ahead as its best made with cooled cooked rice. Binbifathafolhi ( Spicey Sorghum Pancakes)

This is something mum used to make when we were abroad. My version is more like a pancake while the ones mum used to send us were crispier , so they stayed fresh longer. Its made using Binbi fuh or in English  as according to the label , its Sorghum flour. A slightly dark nutty tasting flour. What makes this extra delicious is the addition of Rihaakuru, so use a good quality one if you are making this ( sorry for those who are unable to get hold of them especially if you are not maldivian or living abroad.) My mum likes to finely slice and squash the onions by hand but I did it the easy way by blitzing everything in a food processor.  Either way it tastes yumm. Mexican Salad with Roasted Chickpeas and Charred Corn

Eating a salad a day is a great way to get a good portion of your greens into your daily diet. I'm more likely to eat salads if I serve the greens with some of my favorite foods... like roasted chickpeas and charred corn! This salad is not only healthy, but satisfying. Passion fruit Mousse Cake

I love passion fruit and the tart sweet taste it has especially when paired in deserts like these.  I adapted this recipe I found in a magazine and used products that were easily available over here. Anyway I used agar agar powder, which is like a vegetarian gelatin of sorts. For cream I used Nestle canned cream, its a bit thick but easily available and cheaper than the usual whipping cream. Breakfast in an Oatmeal Smoothie Bowl

Why have a plain bowl of oatmeal for breakfast when you can have your oatmeal in a smoothie bowl ??  Yield: 1 smoothie Ingredients : 1/4 cup rolled oats 1/2 frozen banana 1/2 cup strawberries or rasberries 1/2 cup blueberries 1 tsp raw honey (more, if desired) 1/2 tsp pure vanilla extract Toppings as shown: Roasted coconut chips Toasted pine nuts Chia seeds Instructions: In a blender, combine oats, banana, berries, honey and vanilla; puree until smooth, adding a splash of water, if needed. Pour into a bowl and top with your favorite healthy toppings. To toast a small amount of pine nuts (or any nuts), put nuts in a dry skillet and cook over medium-high heat, stirring frequently, until nuts start to brown. 

Bread Rolls

Yup, its another bread recipe, sorry my photo is a bit grainy took it during the night so the light was awful. To tell you  the truth I wasn't sure how it was going to turn out but surprisingly everyone, even the boys ,enjoyed it. Gave some for my mom to try who loves fried bread, and she was like" you have to teach me how to make this!!!". I found this in one of the blogs . I   added some canned tuna , hey I am Maldivian with a tuna loving husband, so its a must to add the tuna or some form of meat. I followed the recipe I found in Ruchi's Kitchen but decided to go the unhealthy way by frying it. I did try to pan fry but it kept spitting oil, so I deep fried the rest. Gerikiru Boakibaa 1

The first time I heard of this new  form of   boakibaa or cake was while visiting Nadhu's blog. Nadhu is a local entrepreneur, and blogger ( she is doing some video recipes on her blog this Ramadhan. ) Anyway I didn't give it much thought about this particular boakibaa . It was until my sister in law , brought it up again saying  my brother in law's wife, Shiu,  makes a very delicious   gerikiru boakibaa. So when I visited her place  , I asked her what all the fuss was about. So she gave me her recipe.  Now the thing is  I never tasted  one ,  so even after making it I was like , is this how its  supposed to look like?  and taste like this? . I love traditional picnic foods, but, when possible, I like to incorporate of few healthier dishes into the menu. One of my favorite dishes for picnics is oven-roasted veggies, which can be served hot or cold.  This recipe includes sweet and white potatoes, red onions, sweet peppers, squashes, asparagus and carrots, and the veggies are seasoned with an Italian garlicky vinaigrette. I guarantee these veggies will go before the potato salad and baked beans! Green Beans with Garlic and Lemon Butter

For the first time since I was a child, I have Blue Lake Green Beans in my garden! Yesterday, I went out and picked enough for supper! I only have five plants, but they are loaded and doing well! I wanted to cook them in a unique way, something other than boiled with salt and pepper. I sauted them in butter. I added garlic, a touch of lemon, and finished them off by steaming them in chicken broth. Even my teenage son said, "Those are pretty good!" Green Beans 1 tbsp butter 1 tsp garlic 1 tsp lemon juice 1/4 cup chicken broth Saute green beans in butter. Add garlic and lemon juice and cook until the lemon juice is absorbed or cooked off. Turn heat to medium/medium high and add chicken broth. Cover pan and let steam until the beans are tender. (or until they are your desired texture.) Add salt and Pepper to taste. 

Theluli Bandaidhoo ( Spicy shallow fried tuna fish belly fillets)

Ok, I have been wracking my mind on how to explain what a bandaidhoo i s. So to put it in a more easier way to  explain, its simply the underside of the fish or the belly.  Usually when they fillet they remove it but here  ,in Maldives, they give it along with the  fish fillets, tuna fish fillets to be exact. My mom makes this delicious spiced   "bandaidhoo " that goes well as a side with rice and a mild curry.  Usually the bandaidhoo comes with the skin  and is cooked with the skin.  In this simple recipe, its slathered with lonumirus or Maldivian chilli paste and then cooked in hot oil, not deep frying but shallow frying over  a medium heat till cooked through . Its absolutely delicious!! Red Velvet Crinkle Cookies

I wanted to do something different with the cake mix I had on hand. I researched how to turn cake mixes into cookie dough. I decided to turn them into crinkle cookies. They are very easy and pretty! 1 box Duncan Hines Red Velvet Cake Mix 2 eggs 1/3 cup Oil Powdered Sugar Preheat oven to 350 degrees. Combine cake mix, eggs and 1/3 cup vegetable oil using a hand mixer or wooden spoon. Form teaspoon size balls or scoop with a cookie scoop and roll in powdered sugar. Place on an ungreased cookie sheet or baking pan about 2 inches apart. Cook for 10-12 minutes.

Berry Delicious Pure Fruit Popsicles

These popsicles are made with 100% pure fresh fruit. A no guilt treat ~ absolutely no added sugar or other ingredients. Although they aren't as sweet as traditional popsicles, they're delicious ! On a hot summer day, I can't think of a more refreshing treat for kids and adults ;o) Yield: 8 popsicles (will vary based on size of molds; one pound of fruit equals about 2 cups pureed berries) Ingredients: 1 1/2 pounds of ripe fresh strawberries 1/2 pound of ripe blueberries  4 ripe kiwi fruit Simple Instructions: Clean fruit; cut strawberries and kiwi fruit in smaller pieces. Place strawberries in the blender and puree until smooth. Transfer to a measuring cup (for pouring) or bowl; rinse blender. Repeat process with the kiwi mixture; and lastly with the blueberry mixture. Hot buttered Plum Pudding ( Rachel Allen Recipe)

Now this is such an easy recipe you can do it with your eyes closed ( well almost). Its a recipe I found in Rachel Allen's Easy meals. Perfect little treat to eat when breaking your fast. The plums ooze some of their juices into the bread and it gives a yummy taste. Little bits of sugar  gives a little texture. Just double the recipe for more servings and use a larger tray or dish. Ice Lime Tea

I love ice lemon tea , but lemons are a bit pricey over here and so I used limes. There is something very refreshing about a tall glass of cold ice tea and its a great drink to serve for Iftar ( breaking fast) or  to cool off on a hot day.  I love the ice tea or Teh Ice Limau they serve in the Mamak stalls in Malaysia. There they use these tiny little limes called   Calamansi limes with loads of ice. I have tried to make ice tea various times but usually end up with too much lime or too much tea. I finally made it using slightly thin skinned limes,  if I used the darker green ones. the tea ended up a bit bitter. I like my ice tea sweet , the best way would be to adjust to your liking or serve the sugar syrup separate so everyone can adjust the sweetness to how much they like it.
