Bread Rolls

Yup, its another bread recipe, sorry my photo is a bit grainy took it during the night so the light was awful. To tell you  the truth I wasn't sure how it was going to turn out but surprisingly everyone, even the boys ,enjoyed it.
Gave some for my mom to try who loves fried bread, and she was like" you have to teach me how to make this!!!".

I found this in one of the blogs . I   added some canned tuna , hey I am Maldivian with a tuna loving husband, so its a must to add the tuna or some form of meat.

I followed the recipe I found in Ruchi's Kitchen but decided to go the unhealthy way by frying it. I did try to pan fry but it kept spitting oil, so I deep fried the rest. Check out her beautiful step by step  photos of the recipe from the link below.

Recipe : Bread Rolls recipe from Ruchi's Kitchen

12 -14 slices of sandwich bread, crusts removed ( can use old bread)
400g potatoes, boiled and mashed roughly
1/2 cup green peas, I used little  spinach  as well.
1 can (180g) tuna , flaked
2 big handful of baby spinach (optional)
1/4 tsp mustard seeds
1/4 tsp cumin seeds
8 curry leaves
1/4 tsp dried red chilli powder
1/4 tsp tumeric
2 hot green chillies, finely chopped
1 small onion chopped
1/2 tsp grated ginger
squeeze if  1/4 piece of lime
2 tbsp flour mixed  with 3 tbsp water to make a thick paste
a little water
oil for deep frying

First make the filling: Heat about 3 tbsp oil, add mustard seeds, cumin seeds  till they start to pop. Quickly add the onions, and curry leaves and stir fry till softened.

Then add the spices , a tbsp of water to prevent the spices from burning and then add the potatoes , chillies, ginger and peas and spinach if using. Mix well add lime juice and cool.

Take piece of bread( crust removed, use the crust to make breadcrumbs), dip in water.

Don't submerge in water one dip take out and squeeze between two hands to flatten and remove excess water, add a teaspoon full of filling .

Brush all the four sides with flour paste and gently fold in the sides and give a few gentle squeezes so it looks like this:

Finish all the rolls and chill till its needed to fry.  For a clearer idea to make and shape the rolls check this video  here. These need to be fried just before serving so its best to make and chill in fridge till last minute.

Deep fry till dark golden brown. Drain on kitchen paper. Serve with chilli sauce or ketchup.
