Apple Muffins


When I gave up  my job to become a stay at home wife ( no kids then)  , I wanted to do something related to food, to  keep me occupied and earn a small income. I settled to making muffins to a little Cafe'. They didn't want any thing savory saying they already had enough and wanted a sweet snack and since I wasn't a big baker then ( still struggle with baking but am getting better though)  and didn't know much sweet snacks I stuck to making muffins.
I knew  it was the easiest thing to make and less likely to have disasters . So I armed myself with this wonderful little book called Muffins and other small cakes , and started making small batches of muffins for them.

 Sadly, because I had little idea of business ( I studied science in school )  didn't make much , and then after  about 3-6 months of baking I stopped. After a year, had my little guy, and left for Malaysia with hubby...   A family friend did scold me when I told him I tried but failed to get a profit and he said '" next time you should consult me".  

Anyway, better luck next time right,  I think I am a better baker now, I envy people who have stories of baking with grandmothers stories, both my grandmothers passed away before I  turned one , so there are days when I wish I had met them so I can learn the old recipes and things etc.. 

Now this recipe is of my most frequently made muffin recipes. I have tweaked it  replacing brown sugar instead of white and usually I make half the recipe as I prefer warm fresh muffins than just making a big batch and letting them sit around. 

Recipe : Apple muffin recipe from Suzie Smith's Muffins and other small cakes book.

Makes 6-7  regular  muffins

1 cup plain flour, sifted
1/2 tbsp baking powder
1/2 tsp ground cinnamon
1/2 cup brown sugar
tiny pinch salt
4 tbsp melted butter ( 60g)
1 large egg
1/3  cup milk
1 large apple , peeled and chopped ( 1 cup)

Preheat oven 180 degree celcius, thats  about Gas mark 4

Line a muffin tin with paper cups

You need two bowls, one for the dry ingredient and the other for the wet.  In one bowl sift the flour, pinch of salt, sugar, cinnamon, and baking powder. Mix and make a well in the centre.

In the other bowl, mix eggs, butter , milk and eggs till well  mixed.  

Pour the wet mixture into the well you made in the dry mixture bowl. Using a spatula or spoon, fold the mixture well. Add the apples and fold it in. Don't over mix and it has to be lumpy batter not smooth. 

Spoon the mixture into the paper cases, it should be 3/4 full. Pop in the middle shelf of the oven, and bake 20 minutes till cooked through and a tooth pick comes out clean. 

Remove  from tray and cool . 

Store in a air tight  tin.
