Tomato and Kulhafila fai Salad



Kulhafilafai is a locally grown wild green  that has a slightly bitter taste.  More on that in a later post. I wanted to make a salad that would go with the Chicken Pilau . I decided   to use a locally grown greens, so I choosed Kulhafila fai  as the bitterness went well with the sweet tomatoes.


The boys didn't like Kulhafila fai ,  too bitter they say, but then again you can't win every time. For me  its a side dish ,  so it goes well with the rice and when its all eaten together tastes  delicious.

Recipe: Tomato and Kulhafila fai salad

3 tomatoes, nice ripe ones, sliced into slices ( round slices)
1 small onion , thinly sliced as you would for salad
1 bunch of kulhafila fai, pick the leaves discard any yellow ones , trim off the  root part.
1 green chilli , thinly sliced
Juice of 1/2 a lime
salt
pinch black pepper
 extra virgin olive oil(optional)

In a clean bowl add the onions , pinch of salt, and lime juice.  Using your finger tips squish the onions till they start to  release their juices.  Add the tomatoes,  chillies and  ground black pepper and toss in the onion mixture Set a side for a few minutes or till its time to serve.

To serve , arrange the kulhafila fai on a salad platter, drizzle some of the dressing found in the bottom of the bowl over it.  Then arrange the tomato slices and onions / chillies on top.

Drizzle a little more of the dressing and if using, a little olive oil ( the chefy drizzle where you put your finger on the top of the bottle and do a little zig zag over the whole salad ( dont pour!).
