SANDRA'S PEANUT BUTTER-MINI CHOCOLATE CHIP-CINNAMON COOKIES

A light, buttery cookie that enhances in flavor over time, they're delectable and deliciously addicting! Yields: About 42 cookies Prep 15 mins Bake: 10-12 mins INGREDIENTS 1 cup creamy peanut butter 1/2 cup unsalted butter, at room temperature 1/2 cup granulated sugar 1/2 cup packed light brown sugar 1 large egg, beaten 1 teaspoon vanilla extract 1-1/4 cups all-purpose flour 1 teaspoon double-acting baking powder (or regular) 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoon salt (omit if using salted butter) 1/4 cup semi-sweet mini chocolate chips --Sugar (1/2 cup) for rolling balls, and dipping fork to form criss-cross texture on cookie tops METHOD Preheat oven to 350 degrees. Cornbread-Sausage Stuffing with Apples

Confession: for most of my family Thanksgivings, we've mainly used commercial stuffing with a few extra things added to it (water chestnuts, sausage, etc.). And I further admit that I've even thought I liked stuffing. But after trying this homemade stuffing from a recipe given to me by my friend Rachel, I can never go back. I couldn't even wait for the Thanksgiving meal to try this because it looked so good. It is heavenly! Lemon Pepper Wings

It is game day here, and the hubby requested Lemon Pepper Wings and Raw Fries! Sounds good to me! Finger food and football! Always a big hit!  Lemon Pepper Wings Roast or fry a batch of wings or drummettes. Mix up some lemon pepper sauce. Toss and Serve with Raw Fries. (Recipe for raw fries is linked under the picture below.) Lemon Pepper Sauce 1/2 cup butter or margarine 1 tsp lemon juice 1 tsp minced garlic lemon pepper to taste Combine ingredients in a sauce pan and simmer for a couple of minutes. Its almost School Holidays!!!,  We get one  and a half month break before schools reopen to a new year. So before I head for holidays .... I am taking a break from blogging to recharge my batteries, come up with new recipes and update my blog so wont be posting any  more new recipes until January but I will to try and keep up with whats going on with other bloggers.  But then again , its holidays so lets chill and  gets some popsicle molds and make some of these yummy treats to cool off the kids . Rose syrup popsicles are very popular here in Maldives, lets say its the traditional ice lolly  recipe... Its quite sweet, made of rose syrup, condensed milk and absolutely delicious!!!. I know some of you are now in freezing temperatures  , even here we are having cooler weather with lots of rain,  but you can always make these once you get warm weather to enjoy them.... Pumpkin Pie Cake

Crust 1 box yellow cake mix (reserve 1 cup for topping) 1/2 cup butter, melted 1 egg, beaten Filling 1 large can pumpkin (3 cups) 1 1/2 cup sugar 4 eggs 1 tsp salt 2 tsp cinnamon 1 tsp ginger 1/2 tsp cloves 1 can evaporated milk Topping 1 cup yellow cake mix 1/2 cup sugar 1 tsp cinnamon 1/4 cup butter, sotftened Directions Crust: Mix and spread on the bottom of a 9x13 cake pan Filling: Blend together and pour over crust mixture Topping: Work together with hands and sprinkle over filling. Bake at 350 for 60-70 minutes until knife comes out clean. Serve warm with whipped cream, whipped topping or ice cream

Quiche with Butternut Squash, Mushrooms, Spinach and Sweet Cheddar Cheese

This savory quiche includes butternut squash, mushrooms, spinach and sweet cheddar... an ideal brunch recipe to serve at your holiday gathering ;o) Ingredients : 9" pie crust (see Pie Crust 101   for recipe) 1 cup butternut squash, peeled, seeded and cut into 1/2" pieces 1 cup mushrooms, roughly chopped 2-1/2 tablespoons olive oil, separated 1 small onion, finely diced 1 clove garlic, minced 1 cup spinach, roughly chopped 1 1/2 cups almond milk (or other milk of choice), separated 2 tablespoons all-purpose flour 6 large eggs, slightly beaten 1/2 teaspoon salt, plus additional to taste 1/4 teaspoon pepper, plus additional to taste 8 ounces sweet cheddar (and/or other cheddar), shredded Directions : Preheat oven to 375 degrees. Place butternut squash and mushrooms in a small bowl. Grilled Honey and Ginger Marinated Flank Steak

And another great recipe from Mel's Kitchen Cafe , one of my favorite food blogs. I don't cook steak very often, but when it is this easy and tasty, it's tempting to do so a lot more frequently. This is a terrific main dish on its own or you can add some slices of the steak to make a fabulous salad. Also, per a note from the original Mel's Kitchen Cafe posting, you can keep "a few of these marinating flank steaks in the freezer to thaw and grill as needed. Put the marinade and steak in a freezer bag, press out the air and freeze. Thaw overnight in the refrigerator and then grill. Tomato Shrimp Cocktail Drink

This beverage was once a fairly regular feature of the Clark family Christmas season, but we got away from it at some point and the drink was temporarily lost to history. Well, I'm bringing it back now. And not just for Christmas. In fact, I have a pitcher of this chilling in my fridge right now. It's a bit like shrimp cocktail in drink form. Or a deluxe tomato juice, if you will. With the crumbled shrimp and chopped celery, there is some texture to it, but it's delicious! 2 large (46 ounce) cans of tomato juice 2 cans of small shrimp, crumbled 2 small stalks of celery, chopped finely 2 tablespoons horseradish 1 bottle (12 ounce) Cross & Blackwell cocktail sauce 1/2 bottle (10 ounce) ketchup Salt and pepper to taste

BBQ Chicken Pizza

 My little one has been battling a very high fever for  a few days so have been busy taking care of him. Its horrible when kids fall sick, and little guy is a bit annoyed cos I keep making him wash his hands and preventing him from jumping into his little brother's bed, in order to avoid little guy from getting sick as well. This post has been sitting in my draft for ages , so finally posting it.My hubby once bought this book for me called Sandra Lee Semi Home made : the complete cook book.       He said the food inside looked nice,. Yes, the recipes had everything coming  from the packet but I have to say some of them were quite handy in giving me ideas  to try new recipes.There was a section on Pizza and Pasta,  and this pizza recipe caught my attention.
