Indonesian Chilli Eggs

Its the 10th of the month, which means its time for the monthly Muslimah Blogger Challenge! This month's challenge was to cook   something Indonesian. I havent  been to Indonesian but hubby has. According to him  the food is almost like Malaysian cuisine but sweeter.  I found lots of  recipes similar to Malaysian food and decided to try this  Egg recipe I found  in youtube called Balado Telur.
According to this  blog, Balado Telur  means chilli eggs , the recipe is pretty straightforward, the boiled eggs  are fried so it gets nice crispy coating and then  cooked in a chilli sauce. The lady in the you tube video  used long red chillies, since I cant them here in Maldives I used a red bell pepper and  added 5   small chillies to add heat.  I used a small onion , instead of shallots and since there werent any indonesian  bayleaves I didnt use any .  The dish was lovely I served it with plain cooked rice and dhal.

Recipe : Indonesian Chilli Eggs, adapted from the recipe Balado Telur  from  youtube.

Serves 4-5.

4 or 5 hard boiled eggs
1/2 a large red bell pepper
4-5 red finger lenght ( tholhi mirus)  chillies
3 fat cloves garlic
1 small onion, quartered
1 tsp sugar
1/2 tsp salt
2-3 slices galangal, thinly sliced
1/2 piece ginger, bashed up.
1 plum tomato, sliced thinly
about 4 tbsp  oil (  I used corn oil)

First, make the chilli paste,  place onion , garlic chillies and bell pepper in to a blender or food processor with a little water about 1/4 cup , and  blend to a paste.

Heat a wok or frying pan add oil so it covers the bottom, say about 3-4 tbsp. Add the eggs and  stir them around carefully . Let the skin brown and blister a bit, and yes the oil will splatter a bit so be careful.

Now once the eggs are coloured , remove and drain on kitchen paper. Return the wok on stove add the chilli paste, along with the garlic , tomatoes and ginger  and stir fry over medium heat for 5 minutes till the colour darkens. Add sugar and salt and keep stirring. the oil should separate.

Return the eggs to the wok and  stir to coat the eggs with the chilli mix. Cook 1-2 minutes and then switch off and serve!.

Enjoy.
