Bacon-Wrapped Teriyaki Chicken Livers and Chicken Bites

I was admiring a plate of fried chicken livers my friend Julia over at Julia's Southern Simply Southern blog cooked, and it made me think of my brother's creation of Bacon Wrapped Teriyaki Chicken Livers. For the liver haters out there, I also included Bacon Wrapped Chicken Bites! Check out Julia's Southern Fried Chicken Livers on her page here...  Southern Fried Chicken Livers . Bacon-Wrapped Teriyaki Chicken Livers 1 lb. chicken livers Approximately 8 oz. bacon (not thick cut) Teriyaki sauce,  Kikkoman   Teriyaki  Baste and Glaze Kebab skewers Wrap bacon around chicken liver, stretching the bacon to fit, if needed. Secure with a skewer. Repeat until skewer is full. Repeat with remaining chicken livers and skewers. Pour teriyaki sauce over skewers, reserving about 1/4 cup. Asian Peanut Noodle Slaw with Chickpeas

Serves 4 An Asian Peanut Noodle Slaw with Shredded Chicken recipe published in the April 2017 edition of Family Circle inspired me to create my own meatless version... although substitute 1 - 2 cups of shredded rotisserie chicken for the chickpeas, if you prefer. Ingredients : 4 ounces whole wheat linguine 1/4 cup creamy peanut butter 3 tablespoons rice vinegar Juice from 1 small lime 2 tablespoon sesame oil 1 tablespoon fresh ginger, finely grated 1 tablespoon packed brown sugar 1 teaspoon Sriracha 1 can chickpeas, rinsed and drained 6 cups cabbage, finely shredded 2 cups carrots, finely shredded 1 yellow pepper, finely chopped 1 bunch green onions, finely sliced 1/2 bunch fresh cilantro Salt and pepper to taste Cook linguine, according to package directions. Faloodha

I love the Faloodhas that they sell at Scoop. For those who are wondering what I am talking about let me explain. First whats a Faloodha right? Its basically a sweet drink made using rose syrup ( a kind of rose flavored pink cordial)  with condensed milk, jelly or agar agar cubes, and basil seeds ( which has a similar kind of texture as chia seeds) and topped off with a big scoop of ice cream. You might have read my day at Scoop long time ago, if you haven't you can check it out here. Vegetable Pilaf

Eid at my home is usually   breakfast down stairs with my parents, and sisters and their families, my mum would task each of us with a dish and she will sit and relax and call friends and families to wish them. Kids get presents and usually play outside in the  garden , while we cooked. I usually finish early , and instead of having lunch at my parents I head to my Mum in law's for lunch with hubby and the boys along with the rest of his sibblings. Dinner is usually at my parents.  Eid is always a joyous day, everyone is in a good mood, the smell of cooking when you walk on the  street. There is always  some activity on the street   during the late afternoon, such as boduberu , bodumas  and even maali parading on the streets. I am not a fan of people throwing water bombs on the street, it was never a custom when we were growing up. Chicken Musamma Roast

 Eid is almost here and so I have a special roast chicken recipe to enjoy on Eid day for lunch. I saw this recipe on bbcgoodfood.com, where the chicken is roasted  using the Thai massamam curry paste . We also have a Mussamma although the most popular one is tuna Musamma , chicken mussama is also  there. Its a sweet and spicy curry and I wondered if I can use the same concept of the roast but using the Maldivian mussama version.  The chicken cooked well and the tastes were delicious and its a whole new way to serve mussama, and I in the last minute I forgot to add the Indian Almonds( Kanamadu ). So I just sprinkled it as a garnish, but I think it would be even tastier if I had added it while making the gravy. Its a nice little change to the usual chicken curry, still keeping the flavors but served differently. I've created this recipe for many of  my friends, a lot of whom are lactose intolerant, even so, those who do not suffer from this are still able to enjoy this incredible dessert just the same...  Yields: (1 qt) Prep: 10 Mins. Cheesy Tuna And Vegetable Pinwheels

This is a great way to use up left over  roshi, or flat bread, something which I am sure will be in excess during Ramadhan. Its an easy to make  recipe , it can be served as a little snack  or even as a way to get kids interested in eating  vegetables, its quite cheap and can be made in advance and left to chill , just cut it up  before serving. Kopee fai is  a local green, the taste is said to be a lot like Kale. On hot summer days,  a light and healthy salad is a perfect meal! This salad includes plenty of crisp fresh vegetables and quinoa for protein. Quinoa is really a seed and considered a "complete" protein; packed with 8 grams of protein per cup. The greens are dressed with a light vinaigrette, and for some extra flavor, the salad is topped with avocado and some toasted almonds. A tasty and quick 30-minute meal that is delicious and hearty on a rainy Alaskan summer day as we've had today... Servings: (4-6) Prep: 10 Mins. Cook: 20 Mins. Lonumirus Chicken Drumsticks

My little guy used to be easier to feed but nowadays when it comes to chicken he is getting a bit picky on how its cooked. He prefers the drumstick and it has to be either roast or baked . .  I always make a  batch of lonumirus , which is a fiery hot chilli paste , and keep it stored in the fridge  to be used when needed. I decided to bake my chicken slathered with this fiiery hot paste but mellowed the chilli flavour by adding coconut milk .  The flavour was delicious with a big thumbs up from little guy. Muranga Fai Mashuni ( Tuna and Morainga leaves Sambal)

The Morainga tree in our yard has been there forever.  As a child I was literally forced to eat the leaves, which I hated back then, as most kids do.  It would be served raw  with rice or into an omelette . Or we would be made to sit and pick each leaf ( the most annoying task), no stems mind you , to make Theli fai, the leaves are deep fried and mixed with fried dried chillies and tuna chips and served as a condiment with rice and curries.  But as you grow older your tastes buds change right? and you realize the disgusting leaves you were fed as a child is actually now considered a superfood around the world and its grown in the back yard. So lately I started to head into the yard and pick  a branch or two of the morainga tree and started to incorporate them into my daily dishes. Tropical Fruit Salad

"Mom,  coach said to bring fruit tomorrow  !."   My now 10 year old was very excited  with this new change into his daily swimming work out.  Apparently the coaches are trying to get  newly appointed junior and senior squads of their swimming club  to start a healthy lifestyle and  asked the kids to bring a fruit to eat after work out everyday. The one who doesn't bring has to do an extra set of laps , (depending on the kids ability).  In my experience with my boys, I think the best way to get kids to eat fruits is to avoid the sugary foods such as sweets and  all during the first few years and introduce fruits with no sweets or chocolates for treats.  My hubby, who recently did an online nutrition  course, also commented how  one can consume the 5 a day fruit concept, my answer fruit salad!.  Its a great way to have cut fruit in hand and its good for both kids and adults a like.  So during this Ramadhan month, w...

Pumpkin and Spinach Calzone

 Calzones are just folded up pizzas , or portable pizzas. The topping goes on one side and then its folded in half and sealed , ufresh from the oven the cheese just oozes out , that is if you have used mozzarella. I made this one while trying out a recipe for pumpkin. As a child I used to hate pumpkin  but now adays I like it better than I did when growing up. Easy Chicken and Rice Foil Packets

I was looking for an easy meal to make pretty quickly this past Sunday. I basically wanted a one pot type meal with minimal effort or clean up. I hate doing a lot of dishes after a meal. These foil packets are an easy week night meal for the family or can be quickly thrown on the grill on the weekend. Super easy clean up is also a plus! 1 can (10 1/2 oz) cream of chicken soup 1 1/2 cups chicken stock 3 teaspoons Greek seasoning Salt, pepper and garlic powder, to taste 2 cups uncooked instant white rice � cup shredded carrot � cup fresh sweet peas � cup chopped onion 4 boneless skinless chicken breasts 4 slices cooked bacon, coarsely chopped 1 ? cups Colby Jack cheese 2 green onions, sliced (optional) Heat oven to 400 degrees. SANDRA'S HOT ALASKAN MOOSE TACO DIP and MINI-BISCUIT APPETIZER

I created this recipe after being inspired by several variations that I've had in the past. Here's my 'Alaska Spin' on this delightful appetizer -------- You are able to make it to your exact spiciness level versus my medium version ~ simply substitute milder salsa for a lighter dip or hotter salsa for a dip with more zest... Fish Curry

Tuna is  used  frequently to make curries here in the Maldives.  After making my home made  coconut based curry powder , I   decided to use it to make fish curry to serve along with Roshi ( local flat bread) Recipe : Fish Curry (2) 1 ( 350g) fillet Tuna, cut into small cubes 1 large onion, sliced 3"  pandan leaf , cut into large pieces 1 sprig curry leaves 1/4- 1/2 scotch bonnet ( depends on how much heat  of chilli you like) 3 cloves garlic, grated 1/2 inch ginger, grated 3 tbsp huni havaadhu ( coconut based curry powder) 2 1/2 cups water 150 ml coconut milk ( canned or packed) or if using fresh,  thick coconut milk  1/4 tsp tamarind puree or a pea size piece of tamarind. salt to taste  corn or sun flower oil about 2-3 tbsp. Cassava Cake ( Dhandi Aluvi boakibaa)

Cassava is grown around Maldives, and one of the most well known recipes using cassava is this cassava cake. Locally known as dhandi aluvi, maybe because it resembles a stick (dhandi) and is a root vegetable like potato (aluvi).  My husband once brought some very fresh Dhandi aluvi or cassava for me to cook and I have to say its probably the most freshest ones I have ever  handled. No blue veins or  stringy bits , very nice and  white flesh.  In this recipe I took a short cut when it came to ground rice as I was running out of time and needed to get it done before I headed to fetch little one from school. So I used store bought ground rice. Passionfruit Delicious

I love passion fruits and best of all its something thats grown here in Maldives.   I  love the smell and the sweet sour taste of it and the crunch of the  seed. My sister and I used to just open the passion fruit , take the pulp and mix in some sugar and just enjoy spoonfuls.   My hubby and I  attempted to grow a passion fruit  vine  on our tiny balcony. Its  amazing how the tendrils just wrap themselves around anything that comes its way so it can anchor it self to it   as it grows.  Did you know you can even eat the leaves?!? I have done the  Lemon Delicious pudding a couple of times but lemons are pretty expensive  but passion fruit , as you know its available all year around and locally.  I tried one on Australian Womens Weekly Magazine but it had coconut milk in it and I didn't really like it, it was nice but   not like wow, and I am the kind of person who goes for the wow factor when it comes to desert.  S...

Masfathafolhi ( mini tuna cakes)

 I actually prefer these little domes of tuna cakes to the usual Boakibaa .  Its best made with  smoked tuna but if you cant get your hands on them use canned tuna.  Its almost the same as a boakibaa except the size and shape is different. I prefer to grind my  rice rather than buy the pre ground packs found in the markets.  I don't know why but it just seems easier to handle and I can get the consistency I want. My mum thought I have gone bonkers when she found out I was doing this rather than the easy way. I also mix the onion mix and then pulse a few times in the processor so they are roughly chopped, the boys don't like big strings of onions .... They make good portable  snack for kids lunch box too, I mean its healthy right , its not fried , its got tuna ( which is good for you),  and its baked , not fried .Just add a few vegetables on the side  and  I think it makes a nice little snack for the kids.
