Lonumirus Chicken Drumsticks
My little guy used to be easier to feed but nowadays when it comes to chicken he is getting a bit picky on how its cooked. He prefers the drumstick and it has to be either roast or baked .
. I always make a batch of lonumirus , which is a fiery hot chilli paste , and keep it stored in the fridge to be used when needed. I decided to bake my chicken slathered with this fiiery hot paste but mellowed the chilli flavour by adding coconut milk . The flavour was delicious with a big thumbs up from little guy.
Recipe: Lonumirus Chicken Drumsticks
8 chicken drumsticks, skin removed
2 tbsp lonumirus, you can get the recipe here
1/4 cup coconut milk ( I used can, you can use fresh thick coconut milk or mix 3 tbsp coconut milk powder with 1/4cup water)
1 lime
With a sharp knife make a few slashes across the flesh of the chicken. Season the chicken pieces with a big pinch of salt.
In a small bowl mix coconut milk, lonumirus and lime juice , mix with a spoon.
Mix the prepared spice mix into the chicken pieces and leave to marinate for atleast an hour in the fridge.
Preheat the oven to about 220 degree C . Arrange the chicken pieces on a lightly oiled baking tray or in a oven proof dish.
Bake till the chicken pieces are cooked through, about 45 minutes.You can even pop these onto a barbecue !!!
Enjoy with some baked potatoes, or masala mash, or even with rice .
