Pineapple And Strawberry Pops

When it gets pretty hot ,  and you want something really cold and healthy. This is one  thing you can make!!.  I saw this recipe on Pinterest ( I know! I love it , very obvious right). This one was so colourful with the double colours. The boys weren't so sure about the strawberry layer , even hubby  commented the strawberry flavor in an ice pop was not that exciting, but then I will let you be the judge of that. Recipe : Strawberry and Pineapple icepops. 1 cup chopped fresh pineapple 4-5 tbsp sugar 1/2 cup water 1 cup fresh or frozen strawberries 3 tbsp sugar 1/2 cup water First prepare the pineapple  half, by blending  pineapple, sugar and water. You might a few extra tablespoons of water to get it blending nicely. Strain  through a sieve to remove any string bits. Spicy Octopus Curry

Okay, this was unfamiliar territory, but I love octopus , squid, prawns  ,  well basically most of the seafood. But even though I live in a country surrounded by the Indian Ocean, I rarely cook octopus, in fact I cooked it only once , and that was also in my aunt's kitchen in Kulhudhufushi when we went to visit her once. Anyway, my cousin goes octopus hunting now and then with his friends so I asked my aunt to get him to catch an octopus for me and send it to me when someone comes over to Male'. So she sent me a big one , frozen but cleaned and ready to be chopped up to cook. I called up a friend of mine, who cooks octopus often, for advice and she advised not to add any water when cooking just a tiny bit is enough as a lot of moisture will come out from the octopus it self.  The boys refused to eat it,  so it was just me and hubby, who enjoyed it with some rice and salad. I used leftover fried tenders and made myself a Fried Chicken Caesar Salad for lunch! I love Caesar Salad of all kinds. Adding fried chicken, shrimp or crab to a Caesar Salad is a real treat on a hot summer day!  Fried Chicken Tenders 6-8 chicken Tenders  2 eggs 1 1/2 cups buttermilk 1 Tablespoon Hot Sauce 2 cups all-purpose flour 2 teaspoons garlic powder 2 teaspoons onion powder 2 teaspoons salt, or to taste 1/2 teaspoon black pepper, or to taste 1/2 teaspoon cayenne pepper, or to taste Oil for frying Make an egg wash by beating the eggs, buttermilk and hot sauce together in a shallow dish. Mix flour and spices in another shallow dish. Dip chicken breast pieces in egg wash then dredge in the flour mixture. For a thicker crust on the chicken, repeat that step again... egg then flour. Passion Fruit Curd

"Mumma You love  passion fruits right?", my 10 year concluded one day.  Ok so  I love  passionfruits and its something you can get  easily here in Maldives, sadly  our passionfruit vine that my husband and I were trying to grow on our balcony back fired when  we discovered a rat had invaded the  vine and chewed off most of the leaves and was planning to use it to build a home on our balcony. We freaked out  and have taken all the plants downstairs much to my mum's delight . Anyway, I have become partial to passionfruit curd.  I love it on pavlovas , spread on victorian sponge cake instead of the usual jam  or even on its own.  I used a recipe for lemon curd which I found in  Williams and Sonoma  Tools and Technique book and used passionfruit juice instead of lemon juice. When  the Muslimah Food Bloggers group on Facebook announced that the challenge for September was to cook any dish from Pakistan I was very excited . I didn't have time to take part in the recent challenges so  was happy to be able to make something for this month's challenge. My husband and I both studied in Karachi so we both have fond food memories.  The delicious freshly  baked Naans, Chicken tikkas, Lassi  the abundant fruit and vegetable carts. I spent 2 and half years  in Karachi , while my husband , my eldest sister and a few other Maldivians  studied MBBS for 7 years in Karachi.  Karachi isn't an easy place to live,  especially if you are  female ,but if you stick to certain rules such as proper attire meaning Salwar kameez and Dupatta  and have someone with you when going out, you will be just fine. Roasted Vegetables!

Living in South Carolina all my life, I went through the eye wall of Hugo all those years ago, and I remember it all to well! The storm, the eerie calm and starry sky as the eye passed over, and the aftermath of the other side of the eye wall are still fresh in my mind with every passing storm. We are watching Irma and hoping for the best! I have a wedding Saturday to prepare for, and then we will decide what to do next. We are as prepared as we can be here in this ancient double wide mobile home. (that I hope does NOT become truly mobile!) In the mean time, I'm cooking some foods that might perish if we are left without power for any significant time. Today I roasted some vegetables I had sitting around. Awesome flavors! Potatoes, Carrots, Onions and Garlic Cloves Cut into chunks, except the garlic. Leave it whole. Tossed in oil and a little lemon. Seasoned with basil, Kosher salt and pepper, to taste. Lassi

I love Lassi, which is a yogurt drink that is  served either sweet or salty. I like the sweet one so I made my lassi sweet.  I had my first authentic Lassi in Karachi Pakistan,  it was my first time  having dinner out with my sister and her friends and we went to this  road side shop, I think there was tikka and naan and for drinks the guys ordered lassi ,so I was like I want one too! Ended up drinking two huge glasses  and the next two days I spent in bed with a raging diarrhea. Lesson learnt Lassi is delicious but never have them on the street side shop unless you have a strong stomach. One recipe I saw on a pakistani cook book was that she used water instead of milk but I prefer to use milk instead Recipe : Sweet Lassi 1 cup yogurt 3 cups milk Sugar to taste Place yogurt in  blender and milk . Vanilla Cinnamon Buttermilk Pancakes with Vanilla Cinnamon Syrup

Although i eat cereal for breakfast most days because of the convenience, breakfast is one of my favorite meals of the day when I have a little more time to make something myself. There is just something comforting about it. And while I wouldn't eat spaghetti or pot roast for breakfast, I routinely eat breakfast foods at other mealtimes. Anyway, this terrific new recipe from my friend Becky is going to be at the top of the list for future breakfasts. As Becky says, this recipe is "killer." These pancakes are light and puffy and amazing! I served them with maple syrup and fresh strawberries and Brown Sugar-Glazed Bacon . Granola Chunklets with Apricot, Almond and Coconut Flakes

Try this tasty and wholesome granola mixture. Homemade granola is easy to make and much less expensive than high-quality store brands. It's great for adding to cereal or yogurt ~ or just eating as a snack. For the past many months, my breakfast-of-choice has been a bowl of oatmeal topped with toasted coconut flakes, toasted almonds, chia seeds and a touch of honey (or a little more ;o) ... those same ingredients are included in this granola recipe. Although I created this recipe to make granola "chunklets", generally enough granola sticks together so I can manage to get several mini bars out of the mixture too.
