Rinse chicken and pat dry. Combine mustard, garlic, marjoram and maple syrup in a small bowl. Spread about 1 1/2 tablespoons mustard mixture evenly on top of each chicken thigh, being careful to cover as much of the surface as possible to form a "crust." Easy Burrito Bowls

Just an awesome, easy meal.  Fresh and fabulous! 1 lb. chicken breasts, pounded to an even thickness 15 oz. can black beans, drained and rinsed 1/2 c. water 2 med.tomatoes, chopped 1 1/2 c. sweet corn kernels shredded Monterey Jack cheese, or cheddar cheese 1 small head romaine lettuce, sliced For the seasoning mix: 1 T. chili powder 2 tsp. garlic powder 1 1/4 tsp. salt 1/2 tsp. cumin 1/2 tsp. onion powder 1/4 tsp. dried oregano 1/4 tsp. cayenne pepper For the Cilantro-Lime Rice: 2 c. water 1 T. canola oil 1/2 tsp. salt 1 c. long grain white rice 1/4 c. chopped cilantro juice of half a lime For the Quick Guacamole: 3 ripe avocadoes juice from half a lime 2 T. chopped cilantro garlic salt, to taste Mix the seasonings together in a small bowl.  Brush chicken breasts with olive oil and season on both sides with seasoning mix, reserving 1 T. of mix for the beans.  Grill until cooked, let rest a few minutes, then chop and set aside.  (If it's not grilling weather, poach t...

Baked Fish with Meyer Lemons

This recipe is wonderful! Even kids will love this flavor. I don't like a strong fishy taste, so this is perfect! It's a quick recipe to put together, leaving time for family and friends while it bakes... and it smells heavenly! You don't have to worry about the smell of fish filling your house! 2 fish fillets per person Talapia, Bass, Catfish or Whitefish (all white meat fish will work) Flour Salt & Pepper, to taste 2 yellow onions, sliced 2 Meyer Lemons, sliced thin 1 bottle Zesty Italian or Balsamic Vinaigrette salad dressing Preheat oven to 350 degrees. Mix the Flour, Salt & Pepper and dredge the fish. Place them in a shallow baking dish so they fit snug. Place lemon slices on the fish, then sprinkle with onions. Pour dressing over the fish (use about 1 cup of dressing). You can add your favorite spice such as dill, basil or garlic to the dressing if you like... just taste it and adjust the flavor. Ayi's Pork and Broccoli

This is one of our everyday fried dishes to eat with rice.  It makes me think of school days and laundry and cleaning and Peter and Monica and everyone crowding ravenously around the table at lunch time! 1/2 lb. pork salt pepper soy sauce corn starch 1 or 2 heads broccoli Cut the meat into thin slices.  Sprinkle generously with salt and pepper, a good splash of soy sauce, and a heaping tsp. of corn starch.  Stir and let sit for 20-30 minutes to marinate. Cut broccoli into florets and boil or steam until tender, but not mushy.  Drain. Heat a wok over high heat and add several T. oil.  When hot, add meat and stir fry quickly until meat is almost cooked.  Add pre-boiled broccoli and stir fry until hot.  Serve with several other fried dishes and cooked rice.

SANDRA'S CHOCOLATE-TOFFEE ANGEL FOOD CAKE (No-Bake)

An easy recipe that takes only six ingredients and no baking. It's my makeover from a popular early 1970's dessert that is ever so scrumptious and decadent as well... Servings: 12 Prep: 10 Mins. Chill: A minimum of 2 hours INGREDIENTS 1 prepared angel food cake (either store-bought or homemade) 4 tablespoons unsweetened cocoa powder 1 cup confectioners' sugar 2 (8-oz tubs) cool whip 1 teaspoon vanilla extract 6 full size Heath bars, finely crushed (by pulsing in a food processor) --Extra unsweetened cocoa powder for dusting top of frosted cake METHOD Cut the angel food cake horizontally into three even layers using a serrated knife. Sift, using a sieve, the cocoa powder and confectioners' sugar into a large bowl. Add the cool whip and vanilla extract. Whisk to combine. Using a spatula, gently fold in the finely crushed heath bars. Spread the frosting in between the layers, around the sides (including inside the center tunnel area), and on top of the cake. SANDRA'S CINNAMON-PECAN SHORTBREAD COOKIES

The most amazing buttery and flavorful cookies so you might consider preparing a double batch, as they're usually gone in a flash... Yield: (4 dozen) Prep: 10 Mins. Chill: 20 Mins. Bake: 12-14 Mins. INGREDIENTS Cream wet: 1 cup (2 cubes) unsalted butter, room temperature 1/2 cup confectioners' sugar (no need to sift) 1 teaspoon vanilla extract Sift dry: 2-1/4 cups flour 1 teaspoon ground cinnamon 1/4 teaspoon cream of tartar 1/4 teaspoon salt (omit if using salted butter) Addition: 3/4 cup pecans, finely chopped (I did so using my mini-food processor) Coating mixture: 1/2 cup granulated sugar 1 teaspoon ground cinnamon METHOD In a stand mixer with the paddle attachment, add the creaming ingredients and mix just until combined. Take care to not over mix. Add the sifted dry ingredients, and again mix just until combined. The dough will be rather dense. Add the finely chopped pecans, and pulse mixer to incorporate. INGREDIENTS For the dough 250 g flour 180g butter 90g sugar 1 teaspoon cinnamon 1 tbsp vanilla sugar caramel 30 g of butter 1 tsp honey 1 teaspoon cinnamon 80 g of sugar 1 tbsp vanilla sugar 1 can of sweetened condensed milk (about 400 ml) Chocolate: 150 g whole milk couverture 50 g dark chocolate couverture 50 g white couverture 2 tablespoons of butter lard Sea salt at will HOW TO DO IT ??First prepare the shortbread. For this, quickly process all ingredients into a dough and refrigerate for 30 minutes. Preheat oven to 180 � C top and bottom heat. Put the dough on a greased sheet (26x20 cm) and press it all over. ??Punch holes in the dough with a fork. A newly created incredible cookie that's a synch to prepare and is now my husband's favorite. What a great method in which to use the ever-infamous ripe bananas, especially when you have a 'banana lover' in house like my hubby is so we always have a never-ending supply! Yields: Appx. 4 doz. Prep: 20 Mins. Bake: 14 to 16 Mins. Bean and Ham Soup

When cold weather rolls in, I start thinking about the annual 6 mile wintry-hike through the beautiful trails at Hocking Hills State Park held early January. It's an opportunity to see some of the most beautiful scenery in Ohio, at a time when many of the tall trees and old caves are glistening with white snow.  And to top it off, at Cedar Falls, which is midway through the walk, hikers are served delicious hot bean soup cooked in iron kettles over an open fire, along with cornbread and hot chocolate. Although Hocking Hills bean soup cooked the old fashion way is my favorite, this soup is a close second. The recipe calls for grape seed oil, which is pressed from the seeds of grapes and has a light clean taste; however, olive oil is a fine substitute.
