Cheesy Sausage Strata
This yummy, make-ahead breakfast casserole serves a crowd and is easy to put together. If you want a smaller recipe it's simple to reduce to 2/3 or 1/3. I've used this recipe many times.
1 1/2 lb. bulk pork sausage
9 eggs, lightly beaten
3 cups milk
9 slices bread, cubed
1 1/2 cups shredded cheddar cheese
1/2 lb. sliced bacon, cooked and crumbled
1 1/2 tsp. ground mustard
In a large skillet, fry sausage until done. Drain.
In a large mixing bowl whisk eggs, milk, and mustard until combined. Add bread cubes, bacon, sausage and cheese. Stir gently to combine.
Transfer to a greased shallow 3qt. baking dish or 9x13" pan. Cover and refrigerate overnight.
Remove from refrigerator 30 min. before baking. Bake covered at 350� for 60-65 min. or until a knife inserted near the center comes out clean. Remove the cover for the last 10 min. of baking time to let the top brown. Let stand a few minutes before serving.
*I usually don't do the full amount of sausage and bacon, and then it needs extra salt added for flavor. And instead of ground mustard I add a squirt of prepared mustard.
