Tapioca pudding

1/3 cup small pearls
3 eggs
1 1/4 cup coconut or almond milk
1/2 cup water
1/3 cup xylitol

Rinse pearls, put milk, water, eggs and xylitol in blender. Put a medium bowl in pressure canner with about 1/2 inch of water in bottom of pressure canner then wire rack and then the bowl. Put pearls and then milk mixture. Cook for 14 minutes, stir, add vanilla. Cool in the refrigerator or eat warm.
