Steak with Black Pepper Sauce



I love steak but  very rarely do I come across a well made steak in restaurants here, most of the time I end up with tough over cooked piece of meat that leaves me regretting why I even ordered it.  It was until I tried the steak and taties at Newport that I was at least satisfied. NO I am not advertising the place I just enjoys their food!.
My cooking with steak is  not so good either,  so I usually stick to beef stews when cooking at home or a simple stir fry.  Fantasy store has some really good quality beef , pricey but tastes good. Anyway I saw this recipe on youtube , Steak au Poivre  made by Manu Feildel.
( Apparently he even holidayed here in Maldives recently with his wife!!!)  The recipe was so simple and that sauce looked divine that I had to try it. So I went and bought my self a steak piece from  Fantasy store and gave it a try.  Now here is the thing, I don't cook my beef pink I cook well done , why?, I read Toxin by Robin Cook  loong time back when I was in university and it totally freaked me out so I always make sure my beef is cooked through, which is probably why I end up with tough meat.
But here I followed the instructions as  Chef Manu has insructed, but instead of adding the whole chunk of steak  into the sauce , I cut the cooked steak into strips then added to the sauce and cooked for a minute a two. The result was nice and juicy pieces of steak with a to die for sauce!. My kids love this , but its one of those special occasion dishes I make as the beef is too pricey to cook too often.

375g -400g  good quality Steak piece
2 tbsp olive oil
2-3 tsp butter
1 small onion, chopped
1 fat clove of garlic, chopped
200 ml stock ( beef or chicken), I dissolved a stock cube in 200 ml hot water)
1 level tsp  ground black pepper
200 ml cream ( if using the Nestle cream use half the can)
pinch of salt

Heat  the frying pan till hot and add the oil and let oil heat up. Season the steak piece with salt and pepper.

Place the steak the into the hot pan and let it cook, do not touch , let it cook 2 minutes.

Turn, add a knob of butter( about 1 tsp) , and baste, that is tilt the pan and using a spoon take some of the butter and spoon onto   steak. Do this several times.   Then remove the steak after 2 minutes. Leave on a plate to rest.

Drain the excess oil in the ban. Do not wash it! .

Place the pan back on heat, add remaining butter, onions, garlic and saute' it. Cook for a few minutes over a medium heat till it starts to go translucent. Add ground pepper , stock and cook 2 minutes. Then add cream. Bring to a boil and simmer gently for a few minutes.

Slice the beef into slices, add to the pan along with the juices collected in the plate. Cook 1 -2 minutes in the sauce. Taste the sauce, adjust salt and pepper.

Serve with beans or peas or brocolli and mash potatoes or roast potatoes.  Enjoy!!
