Homemade Cake Donuts with Orange Glaze
To make this event less stressful, my sister buys the donut dough from her local grocery store bakery and has friends and children roll out and cut the dough. This year, however, I decided to mix things up by making homemade cake donuts in addition to the hundreds of raised donuts that we typically make. It's something I've never tried before. But I'm pleased to say that the cake donuts were a big hit! I'll be making these again for sure. This recipe is adapted slightly from this one on allrecipes.com.
4 cups all-purpose flour
1 cup white sugar
2 teaspoons salt
2 tablespoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 cups all-purpose flour
1 cup white sugar
2 teaspoons salt
2 tablespoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon vanilla
4 tablespoons melted butter
1 cup milk
2 eggs, beaten
1 quart oil for frying
Heat oil in deep-fryer to 375 degrees F (190 degrees C). In a large bowl, whisk together flour, sugar, salt, baking powder, cinnamon, and nutmeg. Mix in butter until crumbly. Stir in milk, egg, and vanilla until smooth. Knead lightly, then turn out onto a lightly floured surface. Roll or pat to 1/4 to 1/2 inch thickness. Cut with a doughnut cutter. Carefully drop doughnuts into hot oil, a few at a time. Fry, turning once, for 3 minutes or until golden. Drain on paper towels. Sprinkle with a mix of cinnamon and sugar or top with your favorite glaze (see the orange glaze recipe below, for example). This recipe makes about 3 dozen donuts plus holes.

Orange Glaze (this typically is one of the favorite glazes at Donuts in the Driveway)
2 cups confectioner's sugar
3/4 teaspoon grated orange zest
2 tablespoons freshly squeezed orange juice (I actually used a commercial juice with some pulp)
Whisk together in a small bowl until smooth. Adjust amounts as needed to get the desired consistency.
