Chicken Divan Recipe

Chicken Divan Recipe


INGREDIENTS :

  • 1 1/2 lbs. chicken breast chopped into bite size pieces
  • 1/4 tsp EACH salt, pepper, paprika
  • 1 16-20 oz. bag broccoli florets
  • 3 tablespoons unsalted butter divided
  • 2 tablespoon olive oil divided
  • 1/3 cup all-purpose flour
  • 2 cups low sodium chicken broth divided
  • 2 cups milk
  • 1 tablespoon cornstarch
  • 2 teaspoons chicken bouillon
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 tsp EACH onion pwdr, garlic pwdr, dried parsley
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1 1/2 cups freshly grated sharp cheddar cheese divided
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup sour cream
Panko Topping (optional)

  • 3/4 cup panko breadcrumbs
  • 1 tablespoon melted butter
  • 1 tablespoon extra virgin olive oil


INSTRUCTIONS :

  1. Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray.
  2. While the chicken is still on the cutting board, dab with a paper towel then toss with 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon paprika. Set aside.
  3. Add 1 tablespoon olive oil to a large skillet and heat over medium high heat until very hot. Add the broccoli and saut� for 30 seconds. Add 1/2 cup chicken broth, cover pan, and lower heat to medium. Steam broccoli until tender but not limp, about 2 minutes. Transfer broccoli to prepared pan in an even layer.
