Fried Carrots with Doubanjiang

An easy addition to your Chinese meal.  Even a laowai like me can manage.  I'm not sure how common it is, but I think the recipe comes from Chinese home cooking. Sliced carrots garlic, chopped dou ban jiang (chili bean paste) oil Fry 1 heaping tablespoon dou ban jiang in a little oil.  Add garlic to taste.  Add sliced carrots and stir-fry on med-high heat for several minutes.  Add some water, cover and let steam for 3-5 min. until the carrots are soft.  Uncover and stir-fry until most of the water is cooked out.  Add salt if needed. Dou ban jiang is called chili bean paste in English. (I think)  You can probably find it in the Chinese import section of your grocery store.  I know Gwen found it in Roblin after bringing a jar of it from here.  If it's too chunky, just put it on the cutting board and chop it a little before frying.

Cheddar Bacon Ranch Dinner Quiche

Quiche. It's not just for breakfast. We have quiche for dinner a couple of times a month because it's easy and super cheap. The recipe below is a combination of a couple of recipes I've found. You could omit the cheddar/bacon/ranch and add whatever else you have on hand. Vegetables, canned beans, and green chilies are good too. The possibilities are endless. We usually complete the brunch for dinner with muffins and fruit. Ingredients 6 eggs 1/4 c flour 1/2 t. baking powder 1/4 c. butter, melted (sometimes I just use the bacon grease) 1 cup cottage cheese 1 cup shredded cheddar cheese 1/2 cup ranch dressing 4 slices bacon, cooked and crumbled Beat eggs lightly in large bowl. Stir in flour and baking powder. Stir in melted butter (or bacon fat) and cottage cheese. Add shredded cheese, ranch dressing and bacon. Combine just until blended. Pour mixture in greased 9x9 baking dish or pie plate and bake at 400 for 15 minutes. Reduce heat to 350 and continue baking about 30 minute...

A wonderful recipe that's easy to prepare in which I used frozen rhubarb  I thawed beforehand, so you're able to prepare this outstanding dessert year round! Also, feel free to substitute rhubarb for apples using this same par-cooking method. Or, changing it up using stone fruit or berries  without par-cooking prior to baking...
