SUPER SLOPPY JOE BOWLS

Fry out some hamburger, slap up a can of Pillsbury's French Loaf Bread across the counter, make some coleslaw, and last but not least place some Alexia's Onion Rings on a baking sheet...and wait for the good times to begin. 1 can Manwich Sloppy Joe sauce 1  refrigerated Pillsbury French Bread Loaf homemade coleslaw Alexia's Onion Rings Set the Sloppy Joe's to cooking as per directions...beat the French bread loaf over the counter and then cut it into 3 sections. Mold each section into a ball, pinching the end seams together and placing seam end down on cookie sheet. Bake at 350 degrees until browned. Place onion rings on another cookie sheet and bake 10 minutes on one side and then turn over for 5 minutes.  Slice off the top of each bread bowl and then take a wooden spoon and poke the bread meat down all around the inside of the bread bowl. CLASSIC CHEESE TERRINE

Always popular with my summer clients, the cheese terrine is not only pleasing to the palate but to the eyes as well. 32 ounces cream cheese 2 large cloves garlic -- crushed, peeled, minced finely 2 teaspoons herbs de provence 7 ounces oil-packed sun-dried tomatoes -- julienned 3 tablespoons sliced green onions 4 ounces bleu cheese 1/2 cup sliced almonds or walnut pieces 7 ounces prepared pesto sauce 1/2 cup fresh parsley -- minced 1/2 cup fresh basil -- minced Line a loaf pan with plastic wrap. In a food processor, blend one package of cream cheese with garlic and Herbs de Provence. Spread into bottom of a plastic butter dish  and sprinkle with basil. Refrigerate for 15 to 30 minutes until firm. To make second layer, process one package cream cheese with sun-dried tomatoes and green onions. Spread on top of first layer and sprinkle with parsley. Refrigerate for 15 to 30 minutes until second layer is firm. For third layer, process remaining cream cheese, bleu ch...

Soft Sugar Cookies

3/4 c. sugar 1/4 c. karo Syrup 1/2 c. shortning 1/4 c. butter 1 egg 1 tsp vanilla 1/2 c. milk 1/2 tsp salt 4 tsp baking powder (really 4 tsp) 1/2 tsp soda 3 1/4 c. flour 1. Mix first 4 ingredients. 2. Add egg, vanilla and milk and mix. 3. Add dry ingredients. Don't over mix. Refriderate atleast 1 hour before rolling and cutting into desired shapes. Bake at 350 degrees / time varies on size and thickness of cookies, approx 8 minutes. Cool and frost. I prefer canned vanilla frosting for these.

TIPS FOR TOSSED SALADS Always handle salad greens with kid gloves. In  my humble opinion, the salad spinner is one of the greatest kitchen inventions EVER! Grab one at a yard sale for a dollar or Wally World for $4.00. Make sure that it is one that has open holes on the bottom of it so that the water can run out when it goes for a spin around the sink. Tear greens in bite-size pieces with your hands to avoid bruising with knife. I hate ordering a salad in a restaurant and it arrives in huge pieces...it is a whole lot easier to eat when the lettuce is in smaller pieces. That's my opinion and I am sticking with it! Don't cut up tomatoes either for a salad because their juices will thin the dressing and wilt the greens. Add them at the last minute or serve on the side. After you have spun your greens in the salad spinner, place a sheet of paper towel in a large zip-lock baggie and then pour the lettuce in, position it over the towel so it is all nice and even, seal it and place it...

Just a really tasty cake

Because sometimes you want cake without the frosting. This is tasty and you can tell yourself it's not so bad, cause it's got a lot of sugar free stuff...except the cake mix. 1 box of Duncan Hines Devil Food cake mix. 1 can of Diet Pepsi (I used Pepsi Max) A bit of water Mix cake mix and can of diet soda. Add water as needed until you get to the right cake batter consistency. Pour into baking pan. Bake as directed. Let cool. 1 small box of sugar free Jell-o cheesecake pudding Make as directed (skim milk) and as soon as it starts to thicken, but not set, spread over cake. Then top the cake with sugar free cool whip. Refrigerate until nice and chilled! Heavenly.

CREAMY CRAB BISQUE

There are nearly a thousand years of history in this soup."~Willa Cather 1 stalk celery, thinly sliced 1 small onion, chopped 1/2 red bell pepper, chopped 3 tablespoons butter 1 can (14.oz.) cream-style corn 2 (10 oz.) cans cream of potato soup 1 1/2 cups milk 1 cup heavy cream 1/2 cup water 2 bay leaves 1 teaspoon dried thyme, or 2 teaspoons fresh 1/2 teaspoon garlic powder 1/4 teaspoon ground white pepper 3 (6 oz.) cans crabmeat, drained and flaked In a large pot, saute the celery, onion, and red pepper in the butter over medium heat until tender. Add the creamed corn, potato soup, milk, cream and water; stir to combine. Add all seasonings and adjust to taste. Add crabmeat and stir. When heated through, remove the bay leaves. Serve warm. Great with a green salad and cheese biscuits.

SOUP ACCOMPANIMENTS CLEAR SOUPS: crisp crackers, cheese toast strips CREAM SOUPS: cheese popcorn, seeded crackers, crushed pretzels, pickles, olives CHOWDERS & MEAT SOUPS: Melba toast, oyster crackers, sour pickles, pickled okra, bread sticks, relishes, toasted garlic bread EGG BALLS: Take the yolks of three hard boiled eggs, one teaspoonful of flour made smooth with the yolk of one raw egg, and one-half teaspoonful of salt. Mix and make into small balls and drop into boiling soup just before serving.

Lemon Cream Cheese Poundcake

Doesn't the name of it sound so tempting?  "Would you like some lemon cream cheese poundcake?" Who would say no to that? I stole this from some blog and made it.  It was delicious. Mine looked better than the one pictured here (picture also stolen from blog) but I was too busy eating it to take a picture. Lemon Cream Cheese Poundcake 2 sticks butter, softened (1 cup) 1 8 oz pkg cream cheese, softened 1 1/2 cups sugar 4 eggs 1 1/2 tsp vanilla zest of two lemons 1/4 cup lemon juice 1 1/2 tsp baking powder 1 1/2 tsp salt 2 1/4 cups flour With your mixer, combine butter, cream cheese, and sugar until nicely whipped.  Add in eggs one at a time, mixing to incorporate.  Continue mixing, while adding the zest, juice, vanilla, baking powder and salt.  Slowly add in your flour until everything is mixed. In two greased bread pans (or four small bread pans) divide your batter evenly.  Bake at 325 for about 45 minutes to 1 hour, depending on the size of your loaves...

EASY CRAB CAKES

Steamed crabs, crab cakes, crab bisque... 2 1/2 finely crushed potato chips 1 lb. lump crabmeat 1/3 cup tartar sauce 1 1/2 tablespoons Dijon mustard 1/4 teaspoon black pepper 2 tablespoons butter, divided into 6 pieces 1 lemon, cut in wedges Preheat broiler. Line a baking sheet with parchment paper or a sheet of aluminum foil; set aside. Place potato chips through pepper in a bowl, stirring just to combine. Shape mixture into 6 patties and place on baking sheet. Top each pattie with a pat of butter. Broil until browned, 2 to 3 minutes, watch carefully. Serve with lemon wedges. SWEET & SOUR CHILI

Here once again is the result of venturing into my pantry and refrigerator for the makings of 'what's for dinner tonight?' Hamburger meat, red bell peppers and fresh cilantro made their selves known to me from the depths of the fridge. A savory sweet onion beckoned from it's woven bowl atop the table on the lazy Susan. The pantry served up chicken broth, my home-canned summer salsa, black beans, corn, tomatoes, sugar and vinegar; whilst visions of sweet and sour danced in my head. So with my wooden spoon in hand and favorite apron adorned I settled in for one of this long winters favorite activities...whipping up a large pot of soul satisfying chili. CHEDDAR MACARONI BEEF CASSEROLE

One of my favorite food magazines is Kraft's 'Food & Family'. Not only is it oriented around budget friendly meals but it also features recipes that are quick and simple to make. You can feed 4 people this dish with a side green salad for under $10.00. I fed it to 6 poker players last Friday night and there was none left and everybody was extremely happy. 1 pkg. (7 1/4 oz.) Kraft Macaroni & Cheese Dinner 1 lb. lean ground beef 1 can (14 1/2 oz.) Rotel tomatoes with green chiles, undrained 1/2 teaspoon dried oregano or basil 1/2 cup Kraft shredded cheddar cheese Preheat oven to 400 degrees. Prepare Dinner in large pan as directed, omitting butter. Brown meat in large skillet on medium-high heat; drain. Add tomatoes and oregano; mix well. Bring to boil. Add meat mixture to dinner; spoon into 9-inch square baking dish. Sprinkle with cheese. Bake 10 minutes or until cheese is melted and casserole is heated through. Chicken Noodle Soup

I always make this soup on a Saturday using dinner leftovers from the week before. It's a staple in our house if someone is sick. We call it our "Sickie Soup". I have given it to sick friends and relatives and it always makes everyone feel better. Chicken Noodle Soup 2-4 boxes Mrs. Grass Soup Mix 2 rotisserie chicken breasts diced Baby carrots diced Celery and the leaves diced various leftover veggies (explained below) spoonful of minced garlic from the jar My soup base is Mrs. Grass Soup Mix which comes in these 2-box sets. For each box, use 4 cups of water in a stock pot. This day I used three boxes...12 cups water. The kits come with a flavor packet and the golden nugget. I don't use the golden nugget because it is essentially chicken fat which I don't want to add, but you can decide for yourself. Add the season packet to the water, turn on high and bring to a boil. You can also use chicken broth and add 1 chicken bouillon cube per 4 cups. While that's heat...

When you remove a roast from the oven, be it beef, lamb, pork or poultry, let it sit for a little bit before slicing into it. This time allows for the juices to settle into the meat. If you start carving it right away most of the goodness will be lost on the cutting board.

 "My grandfather always said that living is like licking honey off a thorn."~Louis Adamic...never heard this quote before but you have to love it! I truly do love me some good honey...honey do this and honey do that...the best honey that I have found comes from Brunswick County on the coast of North Carolina and is made by a fellow by the name of John Smith. A reporter had written him up in the Brunswick Beacon, which we subscribe to, and my husband made a fuss about us obtaining some of this golden nectar. So on our next trip to the beach I called every John Smith in the phone book and at call # 8 I found the right one. It was during the winter and he told me to call him back in the Spring and that he would fix me up....I now have enough to last me for a spell. And now to the tip...that is what you came looking for...Rub your spoon with butter before dipping it in the honey, it will slide right off. Unless of course you are like me and prefer to lick the spoon.

When the weather outside is not cooperating for grilling your ribeye, fry it out in a pan in 1 tablespoon butter and 1 tablespoon olive oil. When done to your liking remove it and add 1 more tablespoon butter, a healthy splash each of Brandy, Grand Marnier and white wine...when the glaze coats your taste buds your tongue will do the happy dance!

Ham and Sweet Potato Hash

I like breakfast foods almost any time of the day, and this is a nice change up from traditional breakfast foods. I especially like the mix of sweet and savory in this hearty dish. Adapted from Mel's Kitchen Cafe . 2 russet potatoes, peeled and cut into 1/2-inch chunks 2 small sweet potatoes, peeled and cut into 1/2-inch chunks 2 tablespoons olive oil 1/2 teaspoon salt 1/4 teaspoon pepper 1 onion, minced 1 red bell pepper, seeded and diced 2 tablespoons light cream 10 ounces ham, cut into 1/2-inch pieces 4 large eggs In a medium microwave-safe bowl, toss the potatoes with 1 tablespoon oil, salt, and pepper. Cover the bowl with plastic wrap or a tight-fitting lid and microwave for about 6 minutes, until the potatoes are tender but not overcooked (stir the potatoes halfway through cooking). Today is my good friend Eb Pope's birthday. Happy Birthday Eb! You are one of the dearest friends I have ever had and I want you to know how much I appreciate you, and what better way than with this fabulous fusion of red velvet cake. Enjoy your day... 1 pkg. yellow cake mix 1 pkg. vanilla instant pudding, large 4 big eggs 1 1/2 cups evaporated milk 2 bottles red food coloring 2 teaspoons cocoa 1/2 stick butter, softened Combine all ingredients in mixing bowl and beat until nice and smooth. Preheat oven to 350 degrees. Pour half of batter into a 10-inch prepared bundt pan. 2 (8oz.) pkgs. cream cheese, softened 1 cup sugar 1/2 cup sour cream 2 big eggs 1 teaspoon vanilla extract Confectioners' sugar for garnish Combine cream cheese through vanilla and beat until smooth and creamy. Khandvi, Indian Cooking Challenge, Dec 2010

Gujarati cuisine mainly consists of vegetarian recipe and have unique culinary traditions of India. Gujarati cuisine is also distinctive in its wide variety of Farsans or side dishes served with the main meal. Some Farsan are eaten as snacks / light meals. Gujarati food mainly comprise of 4 major regions, North Gujarat, Kathiawad, Kachchh and South Gujarat. North Gujarat is popular for its traditional Gujarati thali consisting of rice, dal, curry, vegetables, sprouted beans, farsan, pickles, chutney and raita. Some of the popular farsans, popular for their tastes are Pathara, Khaman Dhokla and Khandvi. Khandvi is a delicious savoury made with gram flour (beasn) and curd, tempered with sesame seeds and mustard seeds and served with fresh grated coconut and chopped coriander leaves. Snow Ice Cream

Living in Michigan, we get lots of snow in the winter. If you're stuck inside with the kids on a snowy day...mix up some fun... SNOW ICE CREAM! It's quick, easy and the kids will love making and eating it. Snow Ice Cream 2 Quarts of fresh, clean snow (8 cups) 1/2 cup sugar 1 to 2 tsp. vanilla (to taste) 2 cups milk You can place a large bowl outside when it's snowing hard, or collect fresh snow being careful not to dig up any dirt. Sprinkle the sugar over the snow... Add the vanilla... Stir this into the snow until you can see the vanilla is dispersed. Slowly add the milk until it's the consistency you desire. I use the entire 2 cups. Stir this all together. The kids love doing this! Spoon it into a glass or bowl and add sprinkles. Serve immediately. Also, try SNOW SLUSHIES! My son and his pal loved adding soda or kool-aid to fresh snow. Another fun idea for kids... but adults like snow slushies too!
