Cranberry-Pecan Romaine Wedge Salad After a really fun 12 mile bike ride, along the beautiful C&O Canal to the quaint little Civil War town of Harper's Ferry, West Virginia, we were famished!  We dove into a little cafe for lunch where I had a delicious salad similar to this one.  I love this salad combination of the cranberries, pecans and blue cheese!  Plus, it's really fast and easy enough for week night dinners and elegant enough for lunches and dinner parties.  Hope you enjoy!   3 hearts of Romaine lettuce 3/4 cup chopped pecans  1/2 cup dried cranberries Blue Cheese Dressing extra blue cheese, crumbled Cut hearts of romaine in half lengthwise, giving you 6 romaine wedges. Slow Cooker Hawaiian Chicken

Delicious and easy! My crockpot broke, so I didn't make this in a slow cooker. I just cooked up the chicken first then added everything else and let it simmer for an hour or so.  Don't be in too much of a hurry. Let it simmer. I tasted it as it was getting warm and thought it was going to be terrible, too sweet!  After it simmered, it really did taste so much better. I highly suggest adding red onion (I love red onions) and the extra pineapple slice when you are serving.  I don't like cilantro so I didn't buy any, but Kenny said he would have liked that as well. My family ate it on buns last night. I just made it into a salad for lunch today and it was delicious. Hi, I know I've been a little bit absent for a while now. Sorry, things have been really busy at our house. This is a recipe that I've done before, but I wasn't completely happy with it. I got it from the Six Sisters Stuff cookbook, but I adapted it a little bit and the results were greasy. So, back to the drawing board I went. I took out quite a bit of butter and it was tons better. When I made it this time, I used some leftover Easter candy chopped up, and they were amazing. Can't wait to try it with Cinnamon Chips and White Chocolate! Chocolate Syrup

I'm not really the type of person that freaks out over what kind of processed foods my children are ingesting.  I probably should be more worried.  In fact my reason for searching for a home made alternative for chocolate milk syrup was purely because I think the Hershey's syrup I buy in Metro in Chengdu is too expensive.  But it's so utterly simple to make your own and if you really are worried about high fructose corn syrup, here's your answer!  Plus it tastes great! Chocolate Syrup (for chocolate milk) 1 1/2 cups sugar 3/4 cup unsweetened cocoa powder 1 cup water dash of salt 1 tsp. vanilla Whisk together sugar, cocoa and salt in a small saucepan.  Add water.  Bring mixture to a boil, stirring occasionally.  Reduce heat and cook 1 minute.  Remove from heat and add vanilla.  Cool and put into a squeeze bottle, or a recycled chocolate syrup bottle.

Low Sugar Pectin-Free Strawberry Jam

I've made several batches of jam here in China with my Certo from home.  (Thanks, Paula)  But when a Chinese friend asked me to teach her to make jam, I searched for a pectin-free recipe.  We first made the regular jam, because I knew it would work.  And then later I tried the pectin-free.  And it worked!  It was a little runnier than Certo jam, and kind of sour because of less sugar.  But it was bursting with flavor, a little goes a long ways.  I used end of the season strawberries (they're getting cheaper and cheaper) and lemons from Mrs. Shi.  It made beautiful, dark red jam! Low Sugar Pectin-Free Strawberry Jam 3 cups mashed strawberries 1 1/2 cups sugar juice from 1 1/2 lemons as much of the zest as you like, I grated the peel from 1 lemon Stir lemon juice, zest and sugar together in your pot.  Bring to a boil over medium heat, stirring constantly, until sugar dissolves into a syrup. Remove from heat and stir in the strawberries....

Savory Sauteed Veggie and Cheese Crepes  I adore crepes, seriously.  Any kind, any where.  (Well, let's be honest, preferably in Paris.)    1 cup favorite grated or crumbled cheese (Blue cheese,  Feta,  Swiss,  cheddar or mozzarella)   Sauteed Veggies (Have this ready before you begin cooking the crepes.) 1-2 red or yellow bell peppers 1 onion, chopped 4 cloves garlic, minced couple handfuls fresh spinach In large saute pan saute onions, garlic and peppers until soft.  Toss in spinach, saute a minute and turn off the heat.   Crepe Batter 4 cups milk 4 eggs 2 tablespoons melted butter or canola oil 1 cup, plus 2 tablespoons wheat flour   1 cup, plus 2 tablespoons white flour 2 teaspoons salt   I like to make crepe batter in a big plastic pitcher using a stick blender to blend ingredients.  That way I can easily store unused batter in the refrigerator until breakfast the next morning or for  savory crepes for ...
