William's Noodle Topping

This recipe reflects true Chinese home-style cooking.  When you ask for a recipe or about measurements from a Chinese cook, you invariably get a response something like, "Oh, Chinese people don't use recipes, just season it to your own tastes."  And so this recipe is just a guide to making a savory, spicy meat topping to spoon on top of a steaming bowl of freshly boiled noodles.  William came over and made this for us. 1-2 lb. ground pork (not too lean!) dark soy sauce light soy sauce oyster sauce cooking wine fresh garlic fresh ginger dried chilies numbing pepper large bunch of long beans, chopped fine ya cai (pickled vegetable from a packet) green onion wheat noodles Add 1 T. each of dark soy sauce and cooking wine to the ground pork, stir and let marinate while you prepare the other ingredients.  Finely chop desired amounts of garlic and ginger.  (Maybe 2-3 cloves garlic and the equivalent amount of ginger.) Smores Tart

Smores is  something I always read about in kids stories , it was until my little guy had this science project in grade 2,( I think it was in 2013) ,where he had to make something that was about alternate energy that I actually got to taste  a S'more. I know what you are thinking whats a smore got to do with a science project? You see he made a  pizza box solar oven, he was teamed up with a cousin of ours. For the  we used cream crackers instead of graham crackers , topped with chocolate and marshmallow, put it in the sun and within 10 minutes , chocolate and marshmallow had melted. The boys enjoyed the Smores and went on to win  at the science fair held that year along with another bunch of 2nd graders at the Interschool Science Fair. Speculoos Tiramisu Slices

Ingredients 2 packs of spiced biscuit cookies 5 cups of whipped cream 2 cups of sour cream 3/4 glass of powdered sugar 1 packet of vanilla sugar 4 packets of cream stabilizer 50ml amaretto liqueur 1 glass of plum jam 1 tbsp cocoa powder                                    Instructions Cover a baking tray with baking paper (about 24cm * 34cm) Whip cream, sour cream, sugar and cream stabilizer in a large bowl until stiff. SANDRA'S HOT BUTTERED RUM MIX

This hot buttered rum mix is a tradition that we serve during  our Thanksgiving and Christmas holiday season.  This particular mix is delicious with/without the rum  so everyone can enjoy this warm and comforting drink any time. Yield: Appx. 1 cup of mix Prep: 10 Mins. INGREDIENTS: 1 cup packed, dark brown sugar 1/4 cup (1/2 stick) unsalted butter, at room temp 1/4 tsp freshly ground nutmeg 1/4 tsp ground cinnamon 1/8 tsp ground cloves Pinch of kosher salt --Light Rum METHOD Place brown sugar, nutmeg, cinnamon, cloves and salt in a small bowl; blend completely using a smashing-motion. Brown sugar should be completely coated in butter and spices, until it's uniform in color (will take several minutes). Place unused mix in refrigerator in an air-tight container for up to 1 week. HOW TO MAKE A HOT BUTTERED RUM: Preheat an 8 oz. mug by filling it with HOT water, let stand a few minutes, then drain. Its the last day of school year!.  The kids are going a bit crazy around the house ,  books getting sorted out , reports being given out and  plans for the holidays.  So the last thing you want to do today is cook. I remember seeing this delicious wrap on the Hairy Dieter's Episode on TLC,  although now adays I hate the TLC channel, mostly dating shows and relationship shows and complete nonsense , I mean really a show called Undressed!!!! Gelatin Choco Cream Cakes

For the batter: 200g butter or margarine, 200g of sugar, 1 packet of vanilla sugar, 1 pinch of salt, 6 eggs, 225g of flour, 2 tbsp cocoa powder, 2 teaspoons of baking soda, 2 glasses of sour cherries ?? For the quark mass: 8 sheets of white gelatin, 750g quark, 150g of sugar, 3-4 tablespoons of lemon juice, 500g whipped cream ?? For the casting: 6 sheets of red gelatin, 500ml cherry juice, 50g sugar ?? For the dough, cream the butter with a hand mixer. Gradually stir in sugar, vanilla sugar and salt. Among further beat the eggs individually add. Mix the flour, cocoa powder and baking powder, stir in and stir in portions. Spread the dough on a baking tray covered with baking paper. Drain the cherries well, catch the juice and measure 500ml for the casting. Distribute the cherries on the dough. Bake in preheated oven at 180 degrees for about 30 minutes. Lentil Tart

Now this is something all three boys in the house ( third one being my hubby)  love!. And its an almost vegetarian dish! I say almost vegetarian as I added just  a little bit of dried tuna because it goes very nicely with this meaty flavoured brown lentils.   I found this recipe in and old Margret Fultan' s book of Vegetarian Cooking . In the book its called a quiche but for me its more like a tart  so I renamed it tart LOL.  I adapted the filling to suite our taste but  and I love the cheesy pastry,. PUDDING BROWNIES (Pudding Chocolate Fresh Bread)

Ingredients : 1 Wrap Chocolate Agar 3 Sheets of Uncooked Fresh Bread 800 ml of Chocolate Liquid Milk 1 tbsp Chocolate Powder, dissolve it with a little warm water 80 gr Dark Cooking Chocolate, chopped 1 tablespoon Sand Sugar (optional) Chocochips to taste for sprinkling (Can use other toppings or vla according to taste) Instructions 1. Blender bread with 200 ml Milk until smooth (take from milk that is 800 ml) 2. Mix all ingredients, cook over medium heat while stirring until boiling, turn off the heat. 3. Pour into a mold or a serving glass, leave until the steam heat is gone. 4. Store in refrigerator, serve cold with topping or vla according to taste.

Nestle Truffles with Nutella

- Ingredients: 1 can of milk powder (400 g) 150 g of icing sugar 1 can of condensed milk 4 tablespoons coconut milk 1 packet of grated coconut - Method of preparation: Put all the ingredients in a bowl and mix until a homogeneous dough forms (sove well) It gets a bit sticky After the dough ready, put in the refrigerator a little for about 1 hour Remove from the refrigerator, pass in milk powder or sugar and fill with Nutella using a bag of confectionery.

Spagetti With Tuna Balls and Fresh Cherry Tomato Sauce

I  saw these tuna balls  recipe in bbcgoodfood.com, where  pasta was served with these tuna balls made with canned tuna. Of course as you know canned tuna is a pantry staple in my home so I just had to give it try. The boys and hubby loved it, I tried a couple of sauces along with it, but this one , made using fresh cherry tomatoes came out the winner and didn't mask the delicate tuna balls taste. I was planning to use regular tomatoes but on my regular visit to my usual grocery shop, Seagull store I saw these gorgeous cherry tomatoes grown locally in the island of Maafahi. You can use regular tomatoes, chopped  roughly and substitute fresh basil in place of the curry leaves for a different taste. Recipe : Spagetti with Tuna Balls and Fresh Cherry Tomato sauce. Serves 12 Ingredients 200 grams digestive biscuits crushed (you can use Lotus Biscoff or Oreos if you prefer) 80 grams unsalted butter (melted) 360 grams philadelphia cream cheese (full fat) 300 ml double cream or whipping cream (lightly whipped) 1 jar (380-400g) of Biscoff biscuit spread, original or crunchy 2 1/2 tablespoons of cold water 2 1/2 teaspoons of gelatin 1-2 packets of peanut butter Oreos Extra cream for decorating (optional) ??Lightly grease a 8 inch springfoam tin or a mousse ring with unsalted butter. Put the crushed biscuits in a bowl. Add in the melted butter and mix till well combined. Lightly press the mixture over the greased tin evenly. ??Refrigerate while you make the cheesecake mixture. ??You can use 1 or 2 packets of Oreos, up to you. Homemade Pretzel Bites

I was looking for some easy recipes for baked goods. I've always said that I'm not a baker. I do bake, but it's not my specialty. I ran across a recipe for pretzel bites from King Arthur Flour. The instructions seemed a little daunting, but they are really easy when you understand the steps. I wasn't aware that boiling the dough for about 30 seconds was the way they achieve their golden brown color. I really had fun with this recipe. It's easy and really a quick recipe!  Pretty good for my first time, I think. I love pretzels!  The dough came together quickly and needed no adjustments. I let the dough rest for 30 minutes, while I prepared the water bath.  I had to work quick with the boiling water process, so I didn't get a picture. Sprinkled with Kosher Salt and then baked at 400 degrees for 18 minutes.  They are crunchy on the outside, and soft on the inside. Delicious! What you need: For The Pudding: 125g/4oz Odlums Self Raising Flour 125g/4oz Butter (softened) 125g/4oz Caster Sugar 2 large Eggs (beaten) 1 tbsp Cocoa Powder 125g /4oz Plain Chocolate (melted) 50g Shamrock Pecan Nuts (chopped) 15ml/1 tbsp Milk For The Sauce: 125g/4oz Plain Chocolate, broken into pieces 25g/1oz Butter 30ml/2 tbsp Golden Syrup How to: Preheat oven to 150�C/300�F/Gas 2. Butter and line the base of a 900ml/1� pint pudding bowl with a circle of greaseproof paper or butter wrapper. Place the butter and sugar in a large bowl and beat until pale and creamy. Gradually beat in the eggs a little at a time (add a spoonful of flour if the mixture begins to curdle). Hearty Split Pea Soup with Vegetarian Italian Sausage

When fall arrives, I love getting back to serving soups for dinner. Soups are easy to make, nourishing and delicious! Most of my soups are more like stews  ~ with beans, grains and plenty of vegetables ~ that serve as a hearty meal. This Split Pea Soup includes yukon potatoes, carrots and vegetarian Italian sausage. Ingredients : 4 cups low-sodium vegetable broth 4 cups water 1 pound baby yukon potatoes, peeled and cut in half or quarters 2 cups split peas 1 large onion, finely diced 4 carrots, peeled and cut into 2 inch pieces 4 cloves garlic, minced 1 tablespoon parsley 1 teaspoon smoked paprika 1 teaspoon oregano 1 teaspoon salt 1 bay leaf 12 ounces vegetarian Italian sausages (such as Tofurky or Nightlife ) Directions : In a large saucepan over high heat, add broth, water, potatoes, split peas, onion, carrots, garlic, and seasonings; bring to a boil; reduce heat to low, cover and simmer for one hour or until vegetables are soft. Dorayaki Japanese Pancakes

Ingredients : 1 1/4 cup all purpose flour 1 tsp baking soda 2 eggs 1/2 cup sugar 1 Tbsp honey 3/4 cup milk Anko (sweet red bean paste) Instructions Mix flour and baking soda in a bowl. In another bowl, whisk eggs, sugar, and honey together. Add milk and mix well. Stir dry ingredients into egg mixture, and whisk until batter becomes smooth. Heat non-stick frying pan with a small amount of oil and wipe excess oil well. At medium low heat, drop 1/8 of a cup of batter onto the pan, like a pancake. Cook about 2 minutes until the surface of the pancake has a lot of bubbles and the edges become dry. Flip over and cook 1 more minute. Transfer to a plate and cover with a wet paper towel. Take one cake and place a heaping tablespoon of Anko and cover with another cake. Wrap it with plastic and press with hands. Pinch to seal the edges of the pancakes together.

White Bis Oreo Chocolate Mousse Bowl

- Ingredients: 1 bar of milk chocolate or half bitter (170g) 1 pack of Bis� to milk 1 pack of white Bis� - Yellow cream: 1 can of condensed milk 1 can of milk (use the can of condensed milk to measure) 2 sifted gems 1 teaspoon vanilla extract - White cream: 2 clear 2 tablespoons of sugar 1 can of ice cream without whey (300g) - Method of preparation: - In a saucepan, combine the ingredients of the yellow cream and bring to the medium heat until thickened. Turn off and allow to cool. Chop the chocolate bar into small pieces and melt in the microwave or water bath, stirring constantly. Book it. For the white cream, whisk the egg whites in the snow, add the sugar and mix the cream delicately. In a medium refractory, place the yellow cream, arrange the Milk Chocolate Bis� on top, the white cream and finally, arrange the white chocolate Bis�. Chicken Sandwich

Yes I know , the photo doesn't really look very good, mainly because it was made for dinner and it was getting dark, so light wasn't so  good. One of those rushed days , where you want to just finish up and sit down for dinner. This is one of those recipes where that left over roast chicken gets ended up.   I wasn't sure about the apple but I had this green apple half one day ( my little fussy one always eats one half ),  so I just threw it into the mixture. You know what! it was  delicious!  I think the combination of chicken and the crunchy celery and green apple gave a nice  combo.  Its okay if you dont have celery , and replace dijon mustard with the one you use for hot dogs, although that mustard has a more sharper taste and is more yellow. ??Biscuit: 4 eggs, 160g sugar, 60g flour, 60g cornflour, 1/2 teaspoon baking powder ??apple: 750g apples, 50g sugar, 2 tablespoons lemon juice, 50ml clear apple juice, 1 sachet vanilla sauce powder ?? In addition: 750g whipped cream, 3-4 sachets of cream firm, 3 tablespoons sugar, hazelnut brittle ?? separate eggs. Beat the egg whites and 4 tablespoons of water until stiff, pour in 160g of sugar. Stir in the egg yolks. Mix flour, starch and baking powder, sieve and fold carefully. Pour the biscuit mixture into a 24cm springform pan covered with baking paper. Bake in preheated oven at 180 degrees for about 25-30 minutes. Let cool down. Peel, core and chop the apples. Steam with 50g sugar and lemon juice for about 15 minutes. Smooth apple juice and sauce powder. Mus bind with it. Let cool down. Whip cream, sugar and 3 tablespoons of sugar possibly in portions until stiff. Biscuit divide 2 times.
