Chicken Fajita

I love making mexican dinners like these. The kids love assembling it and eating can get messy.  As I told you earlier I try to make most of my recipes the kind of recipes that anyone can make. So to make  these fajita's I made my own spice  mix , hopefully it tastes just as good. Recipe: Chicken Fajita 500g boneless chicken pieces, cut into thin strips 1 tsp chilli powder 1/2 tsp smoked paprika( optional) 1/2 tspp ground cumin 1 /2 tsp ground black pepper 1/2 tsp dried oregano 1 red bell pepper, seeds and core removed and cut into strips 2 green capsicums, seeded and cut into strips 1 onion sliced 2 cloves garlic, chopped salt to taste Juice of 1/2 lime Oil ( any vegetable oil) To serve, Guacamole' see note below, shredded iceberg lettuce, tortillas or Roshi Place the chicken strips in a zip lock bag or plastic or glass bowl ( I like to use  one plastic bowl just to marinate my meats, I label it meat marinade and use it only for fresh meats.)  Into the chicken ...

So satisfying with a nice cup of tea while dipping these tasty jewels, or coffee, or hot chocolate...it's a win-win! Also, a perfect tiramisu making substitute vs lady fingers... Yields: 3 doz (appx) Prep: 15 Mins. Bake/Stand/Re-bake: Bake 30 Mins/Stand 15 Mins/Re-bake 10 Mins. INGREDIENTS Cream Wet 2/3 cup granulated sugar 6 tablespoons unsalted butter, at room temperature 2 large eggs 1 teaspoon vanilla extract Sift Dry 2 cups all-purpose flour 1 1/2 teaspoons ground cinnamon 1 teaspoon baking powder 1/2 teaspoon baking soda 2 teaspoons cream of tartar 1/4 teaspoon salt Brush tops of logs (just before baking) 1 egg, beaten Sprinkle Mix (just before re-baking) 3 tablespoons white sugar 1 teaspoon ground cinnamon METHOD Preheat oven to 325 degrees. SANDRA'S ICONIC INDIVIDUAL PEACH CRISPS

A classic family favorite, the awesome peach crisp served warm and topped off with ice cold French vanilla ice cream ~ oh so blissful... Yields: 4 Individual (1-cup) ramekins Prep time: 15 mins Cook time: 40 mins INGREDIENTS Topping 1/4 cup all-purpose flour 1/3 cup light brown sugar 1/4 teaspoon ground cinnamon Pinch of kosher salt 1/4 cup cold unsalted butter, cubed into small pieces 1/2 cup old-fashioned rolled oats (not quick cooking) Filling 3 cups (1-24 oz jar) Costco sliced peaches, drained, then cut into 1" pieces 1/4 cup granulated sugar 2 tablespoons all-purpose flour --French Vanilla Ice Cream (if desired) METHOD Preheat oven to 350 degrees. Spray 4 (1 cup) ramekins with nonstick cooking spray. Place all 4 prepared ramekins on a baking sheet; set aside. White BBQ Chicken

An amazingly delicious alternative to a ketchup-based BBQ sauce!  This makes a large batch of sauce and is the marinade as well.  Use whole chicken breasts, or cut into small pieces for kebabs. 3 cups mayonnaise 1/2 cup oil 1/2 cup lemon juice 1/4 cup Worcestershire sauce 2 T. black pepper 2 T. salt 1/2 cup sugar 1/2 cup minced onion 3/4 tsp. crushed dried chili 1/2 tsp. garlic powder Mix all ingredients.  Marinate 6 lbs. of chicken breasts all day in part of the sauce, and save the rest for serving with the grilled chicken. Another scrumptious idea from a friend: Fry chicken in small chunks and add this sauce to make a filling for a French bread chicken sandwich.  Cut the French bread open, fill with chicken filling, add shredded mozza and bake until hot and bubbly.  Slice and serve.

Onepot Chicken And Chickpea Pilaf

If you are wondering where is the new blog she was talking about , well, it turned out to be a lot more difficult to make so I finally decided I will first have to learn a few tech stuff and just gave up.  I work alone so trying to figure out wordpress  finally took its toll and I  just stopped. Maybe someday I will get some nice techie to help me to make a beautiful blog. So for now, lets get back to my usual topic, food! I love one pot recipes and this one is the kind of meal I make when I have left over  roast chicken.  I love to make this  for lunch , and serve with some raita or tzatziki sauce.  And best of all not much to wash later. So I am a happy mum. I always keep some precooked chickpeas in the freezer, the boys prefer this to the canned. You can use either. Cinnamon apple pancakes from Haley

1 cup fast metabolism baking mix 1/4 t cinnamon 4 lg egg whites whipped 1/2 cup peeled, diced apple Whip egg whites til stiff, fold in remaining ingredients. Cook in small pan makes 8 small pancakes.

Eggplant stew

2 lbs ground lamb cooked 1 large onion diced 1 large or to small eggplant-skin removed and diced 1 zucchini diced Celery diced 1 quart diced tomatoes 1 quart tomato sauce 2 cups riced cauliflour 1 T minced garlic Oregano to taste Basil Salt Pepper Add all ingredients in large pan, cook til desired doneness.

Mom�s bran muffins

6 cups bran cereal 2 cups hot water 1 cup melted butter 4 eggs 1 quart buttermilk 3 cups sugar 5 tsp. baking soda 5 cups flour 3 tsp. salt Put in a large bowl, bran cereal, and hot water let stand for a few minutes. Add buttermilk, eggs and melted butter. Then add remaining ingredients.

Luxury Strawberry Jelly Cake

INGREDIENTS: ? 11 strawberries? 1 7-inch round sponge cake? ? STRAWBERRY JELLY:? 5 ounces strawberries, quartered? 1 1/2 tablespoons granulated sugar? 1/2 tablespoon powdered gelatin plus 1 tablespoon water? ? LEMON GELATIN:? 1 3/4 cups water? 3 tablespoons granulated sugar? 5 sheet gelatin, soaked in ice water? 1/3 cup lemon juice? 2 tablespoons honey? Gold leaf, optional? ? WHIPPED CREAM:? 3/4 tablespoon granulated sugar? 1/2 tablespoon cherry fruit brandy? 3/4 cup heavy cream? ? STEPS:? ??In a 7-inch round cake pan, add the sponge cake round.
