Slow Cooker Chicken Burrito Bowls

This is my absolute favorite kind of slow cooker recipe � one that takes less than five minutes to pull together and then rewards you with a delicious, healthy dinner at the end of the day. 

These burrito bowls are full of chili-spiced brown rice, black beans, corn, and yes, tender bites of shredded chicken. Everything gets cooked right in the pot, so all you need to do is dish yourself a bowl and sprinkle with cheese.

Ingredients :

  • 1 to 1 1/2 pounds boneless skinless chicken bre�sts, chicken thighs, or � mix 
  • 1 (14.5-ounce) c�n diced tom�toes 
  • 1 cup low-sodium chicken broth, divided, plus more if needed 
  • 2 te�spoons chili powder 
  • 2 te�spoons s�lt 
  • 1 te�spoon ground cumin 
  • 1 cup brown rice 
  • 1 (15-ounce) c�n bl�ck be�ns, dr�ined �nd rinsed 
  • 1 cup frozen corn kernels 
Option�l toppings: 
Shredded cheese, chopped cil�ntro, sour cre�m, diced �voc�do, s�ls�, hot s�uce, diced green onions, shredded lettuce.


Instructions :

  1. Combine the chicken bre�sts, diced tom�toes �nd their juices, 1/2 cup of chicken broth, chili powder, s�lt, �nd cumin in the bowl of � 2 1/2- to 3 1/2-qu�rt slow cooker. M�ke sure the chicken is covered, �nd �dd �ddition�l broth if needed. Cover with the lid �nd cook on low for 3 to 4 hours.
