GG's Peanut Butter Cookies

  Hi all, I apologize for the length of time between posts.  In this time, my son was born and we have been a little busy around here.  It is the holiday season again and that gets me thinking a lot about Mom.  Of course, I think of her every day, but this time of year is magical and I wish she could be here in person to experience the magic of Christmas through the eyes of her grandkids.   Anyway, I had a hankering for some peanut butter cookies about an hour ago, so I pulled out the old recipe books searching for a recipe.  Found it! Turkey Gravy

This hardly qualifies as a recipe. It is basically turkey gravy from a mix, though slightly enhanced. But I made this for Thanksgiving this year, and it was so easy. When trying to get a lot of different dishes all ready at the same time on Thanksgiving Day, anything to simplify the process is welcome, in my opinion. The recipe comes from allrecipes.com . 2 (1.2 ounce) packages turkey gravy mix 1/4 cup all-purpose flour 2 cups water 2 cups turkey pan drippings Place the turkey gravy mix and flour into a saucepan, and gradually whisk in the water, followed by the turkey drippings. Whisk until smooth. Bring to a boil over medium heat, stirring often. Reduce heat to low and simmer the gravy until thickened, about 10 minutes (it took less than five for me, but this may depend on personal preference).

Fish Tacos

Growing up, I always thought that fish tacos sounded horrible! I think I had imagined something like a whole fish (eyes, skin, bones, fins, and all in a tortilla). The very thought grossed me out. But then when I actually got around to trying them, I loved them! So here is a homemade version that you can throw together very quickly. To be clear, this is less a recipe than instructions for combining already prepared ingredients, but I thought it turned to be both easy and delicious. Fish tacos will definitely be part of our meal rotation from now on. Frozen breaded fish fillets (whatever you like), baked according to the directions Chopped cabbage (I just used a prepared coleslaw mix) Salad dressing (a ranch dressing would probably work, but I used a Bolthouse Farms cilantro avocado yogurt dressing) Mango salsa (I used a commercial version) Flour or corn tortillas And to put this together, I simply cooked the fish fillets according to the directions and then cut them into smaller pieces...

Thanksgiving 2015 ~ Giving Thanks

Thanksgiving is one of my favorite Holidays ~ a time to gather with family and to give thanks for all the blessings received over the past year. I generally host Thanksgiving dinner for my siblings and their families ~ leaving Christmas for my oldest sister ;o)  The host prepares the turkey and dressing, ham, mashed potatoes and gravy, and guests bring a side dish or dessert.  One of our Thanksgiving traditions is for each person to share something for which they are especially thankful. This year, we watched a "surprise" family photo slideshow that played to the songs of, "The Times of your Life" (Paul Anka) and "In my Life" (The Beatles), which brought back many memories ~ and more reasons for being thankful... Twice Baked Sweet Potatoes

This is a new favorite Thanksgiving side dish at my house now! This is like a sweet potato souffle in a sweet potato skin. It is sweet and extra creamy! The little kids especially loved them. It was as if they were eating dessert for dinner! Yay! 4 sweet potatoes � cup butter 1 (8 ounce) package cream cheese, softened � cup brown sugar 1/2 teaspoon cinnamon* � teaspoon salt 1 pinch black pepper, or more to taste Mini Marshmallows Preheat oven to 400 degrees. Arrange sweet potatoes on a baking sheet. Lightly poke potatoes 2-3 times with a knife. Bake in the preheated oven until a sharp knife easily pierces the potato, 50 to 60 minutes. Cool sweet potatoes until easily handled, 10 to 15 minutes. Slice potatoes in half lengthwise and scoop insides into a large bowl. Add butter, cream cheese, brown sugar, salt, and black pepper. Mix using a stand mixer or hand mixer until smooth and creamy. Spoon mixture back into the sweet potato skins and top each with marshmallows. Place sweet ...

Sausage

Here in this land we can't buy all the familiar foods of home.  But we can buy pork.  It's the everyday meat here, with beef costing 2 or 3 times as much.  This basic sausage recipe is from the Meals Around the World cookbook, and has a similar flavor to farmer's sausage.  Of course if you want to add spices, go right ahead.  This is the basic version.  Use it to make patties to fry or grill, or fry and crumble to use in soup, gravy, pizza or breakfast casserole.  One of my favorite soups to add it to is Cheeseburger Soup . 1 lb. ground pork 2 tsp. Tender Quick 1/2 tsp. salt 1/2 tsp. black pepper 1 tsp. liquid smoke Mix thoroughly and fry in patties or crumbled.

Pancake Syrup

You can call it pancake syrup, or white sauce and put it on pancakes or waffles or crepes.  We like this one because it's not super sweet.  If you choose to use brown sugar instead of white you get a pale brown, lightly caramel flavored sauce.  Or you can use half white and half brown sugar.  The recipe is from my Aunt Marilyn, whom I remember cooking up large batches of delicious food for hungry crowds. Bring to a boil: 1/2 cup margarine 2 cups milk Add: 3 T. flour 1 cup sugar Bring to a boil again and cook until thick.  Add 2 tsp. vanilla.

Snickerdoodle Pinwheel Cookies

I know! Snickerdoodles are rolled in sugar and cinnamon. I made these inside-out. I covered the dough and then rolled them into pinwheels! 1 � cups sugar � cup butter or margarine, softened � cup shortening 2 eggs 2 � cups all-purpose flour 1 teaspoon baking soda � teaspoon salt � cup brown sugar 2 teaspoons ground cinnamon Heat oven to 350�F. Mix 1 1/2 cups sugar, the butter, shortening and eggs in large bowl. Stir in flour, baking soda and salt. Roll dough into a rectangle. Mix 1/4 cup brown sugar and the cinnamon. Sprinkle the dough with cinnamon-sugar mixture. Roll dough tightly into a log and wrap with plastic wrap. Chill for a few hours or overnight. The dough can also be frozen until needed. Cut into rounds about � inch think. Place 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or until set. Remove from cookie sheet to wire rack.

Refrigerator Potato Rolls

I 've made these homemade rolls for Thanksgiving the past 20+ years. Most of the preparation can be done the day before. I love the 3 shapes; crescents with butter; snails with poppy seeds and figure eights with sesame seeds. It wouldn't be Thanksgiving without these tasty and beautiful rolls!  Yield: 36 rolls  Ingredients 1/2 cup unseasoned warm mashed potatoes 1 1/2 cups warm water (105-115 F) 2 pkgs active dry yeast 1/2 cup sugar 1 Tbsp salt 2 eggs 1/2 cup unsalted butter, softened 6 1/2 cups unsifted all-purpose flour Melted butter, or 1 egg, beaten with 2 Tbsps water Poppy and/or sesame seed Recipe Prepare mashed potatoes for 1/2 cup, omitting salt and butter. Poor warm water into a large bowl. (First rinse bowl in hot water.) If possible, check temperature; should be 105 - 115F.  Sprinkle yeast over water; add sugar and salt, stirring with wooden spoon until completely dissolved. Let stand a few minutes; the mixture will start to bubble slightly. Add 2 eggs, softene...

Old Fashioned Bread Stuffing

This recipe is from my sister's mother-in-law and is a hands-down favorite with my family! Dot would tell us to add enough broth until we think we've added enough, and then add a little bit more (we like our dressing moist ;o) Ingredients 1 loaf white bread, dried out and cut into 1" pieces 1/2 cup butter 1 cup celery, chopped 1 cup onion, chopped 2 cups homemade turkey broth (see below) or low sodium chicken broth 1 teaspoon poultry seasoning 1 teaspoon salt 1/2 teaspoon pepper 1 egg, slightly beaten Turkey Broth Ingredients 1 quart water 1 carrot, peeled 1 stalk celery, trimmed 1 yellow onion, skin removed and cut in half 2-3 whole peppercorns Bay leaf Salt and pepper to taste If bread has not been dried out, arrange bread in single layer on baking sheet and bake at 275 degrees until dried out, about one hour.  Keep oven temperature at 275 degrees.  Break up bread into 1 inch pieces; place in a large bowl and set aside. Chocolate Pecan Pie

This is a pie you should definitely add to your Thanksgiving or pie repertoire. It is very easy to whip up and very rich and yummy. The pie is another winning recipe from Chef John over at FoodWishes.com . You can see a video demonstration here . 1 9-inch pie shell, unbaked 2 eggs 1 cup light brown sugar 1/4 cup white sugar 1/2 cup butter, melted 1 tablespoon all-purpose flour 1 tablespoon milk 1 teaspoon vanilla extract 1/3 cup semisweet chocolate chips 1 1/2 cup chopped pecans, roughly chopped Preheat oven to 400 degrees. Using a whisk, beat the eggs until pale-colored, light and frothy. Add the milk and vanilla and give the mixture a stir. Blend in the brown sugar, white sugar, and flour. Then add the hot melted butter and blend together. Finally, add the chopped pecans and mix well. Spread the chocolate chips evenly in the bottom of the pie crust and pour the pecan mixture carefully over the top so that the chocolate chips remain evenly distributed. Pumpkin Spice Cookies

I usually try to do most of my cooking from scratch, but let's face it, we need a quick fix sometimes. I while back, I did a giveaway for Krusteaz. They have some of the best quality mixes available. The hubby found a pumpkin muffin mix and brought it home. It had an alternative recipe for cookies! I needed a little dessert for my boxed dinners tonight. It worked out perfect! Krusteaz Pumpkin Muffin Mix 1 stick of Butter, softened 1 egg In a medium size bowl, blend ingredients together. Using a cookie scoop or teaspoon drop mix on an ungreased cookie sheet. Bake for 8-10 minutes or until golden brown. Makes 2 1/2 dozen!

Pie Crust 101 ~ For 1-Crust and 2-Crust Pies

I received my first cookbook from my sister in law at a bridal shower (many many years ago ;o) It's The New McCalls Cookbook. The first chapter is titled, "Introduction to Cooking" and includes about a dozen fully illustrated recipes. Nearly all of these recipes ended up being my no-fail standbys. This pie crust recipe ~ and the apple pie recipe you'll find under the "desserts" tab ~ are two of those recipes. I think pie crust made from scratch makes a pie extra special! Ingredients for 2-Crust Pie 2 cups all-purpose flour 1 teaspoon salt 3/4 cup shortening 4 - 5 tablespoons ice water Ingredients for 1-Crust Pie 1 cup sifted all-purpose flour 1/2 teaspoon salt 1/3 cup plus 1 tablespoon shortening 2 to 2-1/2 tablespoons ice water Mix flour and salt together until fully incorporated in medium bowl. Butter Bean Salad

Yield: 2 servings Pesto Ingredients 1/2 cup pine nuts 2 big handfuls of fresh basil leaves 5 Tbsps olive oil 2 cloves garlic 1 lemon Salt and pepper Salad Ingredients Handful of pumpkin seeds 2 cans butter beans 1 bag arugula and/or baby spinach 2 handfuls of pomegranates  Olive oil 2nd lemon Start by making the pesto. Peel garlic and then add garlic and all pesto ingredients into a food processor and blend until smooth. Set aside. Drain and rinse the beans and then place in frying pan with the pesto and saut� until warm, two - three minutes.While they cook, squeeze the 2nd lemon over the beans and add more black pepper. Add arugula and/or spinach, pumpkin seeds and pomegranates to your plate, drizzle with olive oil and then add the beans on top. ~deliciouslyella.com

Country Sausage Biscuit and Gravy Breakfast Casserole

I found a recipe for a biscuit and gravy breakfast casserole. It looked so good, but when I got into the recipe it was obvious that the recipe did NOT match the picture. That is the problem with some food sites. They take a picture from someone and just find a recipe with the same ingredients! That is why so many people get frustrated when their dishes look nothing like the pictures online! As I have said, "My food might not be pretty, but it usually tastes pretty good!" LOL    2 cups Sausage Gravy, recipe below 1 lb. pork breakfast sausage 1 cup Cheddar Cheese 6 eggs � cup milk Salt and Pepper 1 can Pillsbury Grands Biscuits Preheat oven to 350 degrees. Spray  a 13X9 pan with non stick cooking spray. Cut the biscuits into 1" pieces and line bottom of pan. Brown the sausage and scatter over biscuits, reserving the grease for the gravy below.  Sprinkle with Cheddar Cheese.  Ladle in the sausage gravy. Thumbprint Cookies

Yield: 3 1/2 dozen Ingredients 1 cup shortening 1/2 cup brown sugar 2 egg yolks (save whites) 1 tsp vanilla extract 2 cups flour 1/2 tsp salt 1 1/2 cups walnuts or pecans, finely chopped Preheat oven to 350 degrees. Mix shortening, sugar, egg yolk and vanilla thoroughly. Sift flour and salt together and stir into shortening mixture; mix thoroughly. Roll into 1" balls. Dip into slightly beaten egg whites. Roll into finely chopped nuts. Place cookies 1" apart on  ungreased cookie sheet. Press thumb in center  of each. Bake 8-10 minutes. After completely cooled, place a bit of tinted icing into each thumbprint. (See buttercream frosting recipe .)

Cream of Mushroom Soup

From sugary mushroom-like creations earlier this week to using actual mushrooms in this wonderful soup. This recipe comes from one of my favorite food bloggers, Chef John, over at foodwishes.blogspot.com . I love mushrooms, and this cream soup version is full of delicious mushroom flavor. 1/4 cup unsalted butter 2 pounds sliced fresh mushrooms 1 pinch salt 1 yellow onion, diced 1 1/2 tablespoons all-purpose flour 6 sprigs fresh thyme (I used 1/4 teaspoon dry thyme) 2 cloves garlic, peeled 4 cups chicken broth 1 cup water 1 cup heavy whipping cream 1 pinch salt and freshly ground black pepper to taste 1 teaspoon fresh thyme leaves for garnish, or to taste Melt butter in a large soup pot over medium-high heat; cook mushrooms in butter with 1 pinch salt until the mushrooms give off their juices; reduce heat to low. Pecan Tassies

Yield : 4   dozen  Ingredients 1 cup unsalted butter, softened 2 3-oz softened cream cheese 2 cups flour 2 cups nuts, chopped Cream together softened butter and cream cheese. Add flour and blend well. Work with fingers into a smooth dough. Place 1/2" ball of dough into miniature tart pans lined with paper cups. Press with fingers to line bottom and sides of pan. Filling 2 eggs 1 1/2 cups brown sugar 2 Tbsp butter, melted 1 tsp vanilla extract Beat eggs; add other ingredients and blend well. Place 1/2 tsp chopped pecans into dough lined paper cups. Spoon 1 tsp filling over nuts and top with another 1/2 tsp chopped pecans. Bake at 350 degrees for 20 minutes.

Mini Cheese Cake Cups

Yield : 3   dozen Crust Ingredients 4 ounces vanilla wafers 1 tablespoon granulated sugar 1 tablespoon unsalted butter, softened Filling Ingredients 2 8-oz pkgs cream cheese 1/2 cup sugar 1 tsp vanilla extract 3 eggs Topping Ingredients 1/2 pint sour cream 3 Tbsp sugar 1 tsp vanilla Marachino cherries Preheat oven to 350 degrees. Crust: Grind fine vanilla wafers and mix with sugar and butter. Put 1 tsp into miniature tart pans lined with paper cups. Filling: Beat cream cheese, 1/2 cup sugar and 1 tsp vanilla, add eggs and mix well. Put 1 tablespoon of filling on top of each cup of crumbs, bake in preheated oven for 15 minutes, or until the tops start to crack. Remove pans and increase oven temperature to 450 degrees. Topping: Mix sour cream, 3 Tbsp sugar and 1 tsp vanilla. After cheese cakes have cooled slightly, put 1 teaspoon of topping on top of each. Nut Crescents

Ingredients  1 cup unsalted butter, softened 1/3 cup granulated sugar 1 tsp vanilla extract 1 Tbsp water 2 cups all-purposes flour 1/2 cup pecans, chopped Sifted powdered sugar Cream butter, sugar, vanilla and water. Stir in flour and nuts; mix well. Shape into crescents (see note below). Place on ungreased cookie sheet. Bake at 350 for 15-20 minutes. Cool on rack; roll in powdered sugar. Makes 50-60 cookies. Note: To form into crescents, form into 1" ball with palms of hands, roll each into 2" long roll. Place on cookie sheet and curve to make crescents.

Mexican Pizza Casserole

1 pound Ground Beef 1 package Taco Seasoning, or use your own blend 4-8 lrg Flour Tortillas, torn into four pieces 1 can Black Beans 1 can Pinto Beans 1 can Diced Tomatoes 1 can Corn 1 can Green Chiles Salsa (about a cup)* 2 cups Shredded Colby~Jack Cheese ** Possible Toppings... Lettuce, tomatoes, sour cream, guacamole and/or scallions Brown hamburger, drain and season with a couple of teaspoons your favorite taco seasoning. Drain all the cans corn, tomato, chiles and beans. Combine with meat mixture, and add salsa. Season with more taco seasoning if needed. Add salt, pepper and garlic powder to taste. In a 13X9 Casserole dish, layer meat mixture, cheese, tortillas and repeat ending with cheese.  Bake for 20-30 minutes at 350 degrees or until cheese is melted and starting to get golden brown. Top with your favorite toppings and enjoy! * Add enough salsa to moisten the mixture, but not enough to make it soggy. I used about a cup, maybe a little less. ** I always use more cheese tha...

Mushroom Meringues

This is a treat that my mother always used to make for Christmas, both for the family and to give to friends and neighbors, beautifully packaged in cellophane bags. Mushroom meringues are traditionally associated with the French dessert B�che de No�l, but we like them on their own. They can be impressive looking yet are quite easy to make. My sister Emily recently demonstrated them for a Relief Society cooking class in our ward, so I thought it would be a good time to put up the recipe as well as a few pictures. � cup egg whites, room temperature � teaspoon salt � teaspoon cream of tartar 1 teaspoon vanilla extract 1 cup superfine sugar (I use regular granulated) Unsweetened cocoa 6 ounces semisweet chocolate Beat egg whites in a large bowl until foamy. Beat in salt, cream of tartar, and vanilla. With mixer set at low to medium speed, add sugar gradually until it is mixed in. Then beat at high speed, 6 to 7 minutes, until stiff.
