Blueberry And Banana Muffin

Happy New Year, and I am back to blogging !!!! Yey!!! hope you had a great holiday month and New Year....  We had a blast , visited Singapore and also our relatives in Kulhudhufushi. Now  school holidays are almost over and its back to   our usual  daily routine, well almost.... Its a New Year Year , so decided to start the year with something healthy.  Blueberries are pretty expensive over here and during our visit to Singapore I brought home a few punnets of  blueberries and strawberries, the boys wolfed down two while I hid the other two in the freezer. They did  create a fuss when they found out , but my excuse was, you two had your share now this is mine LOL, and you still get to enjoy them just a little differently. These blueberry and banana muffins are delicious as a tea time treat and also for breakfast and I am pretty sure this will be great for school snack as well... Although the Holiday gatherings have been wonderful, I'm ready to get back to healthier eating. And that means adding more cruciferous vegetables into my diet because they are among the healthiest foods available ;o) This is a light delicious salad that includes quinoa ~ a complete protein. This is a staple as I grew up, if you want the very basic recipe just leave out the optionals. A very comforting dish. My Father makes this without the options and uses canned biscuits, which is what I grew up on. INGREDIENTS: 1st Wet: 3 (medium) ripe bananas, mashed 1 tablespoon freshly-squeezed lemon juice 2nd Wet: 1 tablespoon freshly-squeezed lemon juice 1-1/2 cup 2% milk Beat: 2/3 cup unsalted butter, room temperature 1 cup granulated sugar 1/2 cup light brown sugar, packed 3rd Wet: 3 large eggs, beaten 1 teaspoon vanilla extract Dry (sift) 3 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1-1/2 teaspoon ground cinnamon 1/4 teaspoon table salt METHOD: Preheat oven to 350 degrees. Yield: 4 servings Ingredients : 4 medium sweet potatoes 1 tablespoon olive oil 1 teaspoon sugar 1 teaspoon cinnamon Salt and pepper to taste Directions : Preheat oven to 425 degrees. Line large baking sheet with aluminum foil and spray lightly with cooking spray. Combine sugar and cinnamon together in small bowl. Place sweet potatoes on baking sheet (single layer). Drizzle with olive oil. Sprinkle with cinnamon sugar and salt and pepper. Roast 35-40 minutes or until tender.

Simple Baked Chicken Drumsticks Total Time 1hr 5mins Prep 5 mins Cook 1 hr Servings 2-3 I wanted a basic way to cook drumsticks since they are cheaper than the breasts. I didn't want a lot of spice or sauce on it so if you are looking that, this is not the recipe for you. We found it just right for us, the flavor of the chicken really comes through. I served with corn and twice baked potato casserole. Ingredients 5 -6 chicken drumsticks garlic powder pepper salt olive oil Directions Put some olive oil in the bottom of a 9X13 pan (just enough to put the drumsticks on ). Add drumsticks (space enough apart so they aren't touching each other). Sprinkle generously with pepper and garlic powder. Sprinkle lightly with salt. Bake at 375 for half an hour. Turn drumsticks over and add more garlic powder, pepper and salt (same as before). Bake another half an hour (or until cooked til 160 degrees)). Source: food.com

Christmas Day has almost arrived when it's time to bake my homemade pies!  This is a traditional pumpkin pie recipe that includes more spices than many recipes... simple and delicious ! Ingredients : 1-15 ounce can whole pumpkin 1-14 ounce can sweetened condensed milk 2 large eggs, slightly beaten 1 teaspoon vanilla extract 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 teaspoon allspice 1/4 teaspoon ground ginger 1/4 teaspoon ground nutmeg 1-9" inch uncooked pie crust Directions : Preheat oven to 425 degrees. In a large bowl, with electric mixer on medium speed (or by hand), mix all ingredients together until fully incorporated and smooth. Pour pumpkin mixture into a 9" crust-lined pie pan. Bake in preheated oven for 20 minutes. Reduce heat to 350 and bake an additional 35-40 minutes, or until wooden toothpick inserted in middle comes out mostly clean. Cut after cooled; serve with whipped cream, if desired.

This cookie recipe was adapted from the Food Network magazine, December 2016. These cookies are more time consuming to make than most other cookie recipes but worth the time. They are not only cute, but delicious! I saw this idea in a video online and decided to give it a try. I didn't like their choice in spices so I changed things to our taste. It is very easy and you probably have all the ingredients on hand. You can change the spices or the type of cheese. I want to add pepperoni or sausage next time! My best advice with this recipe is preheat your oven and start at the lowest time range and keep your eye on them. If you walk away and let it go to long, you'll have a tray of hollow bites and melted cheese all over the place! It's all about moderation, right ~ and it just wouldn't be Christmas without trays of homemade cookies! Although it's hardly possible to use strictly healthy ingredients when making homemade cookies, at least you can use high quality products without any preservatives or additives. Yum ~ I love the aroma of soup simmering on the stove on a cold wintry day. Many of my soup recipes on this blog include lots of vegetables, which means a lot of slicing and dicing. This recipe includes fewer ~ carrots, celery, parsnips, kale and tomatoes. This is a great dish to serve for a Holiday brunch. You'll love the taste of the cinnamon raisin bread and sweet fontina cheese. You can prepare it the night before; refrigerate; and then bring to room temperature before baking.  Serves 8 Ingredients : 2 cups packed fresh baby spinach, stems removed 10 large eggs 3 cups half-and-half 8 slices cinnamon raisin bread, cubed 1/2 leek, finely sliced (about 1/2 cup) 8 ounces fontina cheese 2 cups butternut squash, peeled and cubed 1 tablespoon olive oil Salt and pepper to taste Directions :  Preheat oven to 450 degrees.
