Tuscan Rosemary Soup

Image
Tuscan Rosemary Soup   My friend Holly Johnson gave me a version of this soup years ago.  It is one of our family favorites!   Its unbelievably fast and utterly simple, yet so flavorful.  And it's a 'one pot' soup!    The entire family loves it, however it may be a little spicy for kids 7 and under if you use the full amount of crushed red pepper.  The Italian and hot sausage is a MUST for the best flavor. Hope you have a rosemary bush in your garden!  If not plant one as soon as you get the chance...you will use it all the time!  They make a beautiful perennial addition to your garden.  You can also plant it in a pot for your table or porch.  They also make beautiful topiaries!  You will LOVE using fresh rosemary in your recipes. 12 cups chicken or vegetable broth (I often use 12 cups water and 12 cubes chicken or vegetable bullion) 1 cup cream 2-4 unpeeled russet pota...

Cheesy Broccoli Soup

Image
This is a perfect Halloween dinner. Plenty of warmth, vegetables, and cheese to cover up said vegetables. This is one of our kids' favorites, especially when we serve it in hard rolls, they make the perfect size bread bowls for little ones! I simply use broccoli and carrots, but you could also add cauliflower. I cook the vegetables before hand, because they get nice and soft and make the cooking go way fast. It's also awesome with potatoes and ham.  Cheesy Broccoli Soup 6 cups water 4 bouillon cubes (or equivalent Better than Bouillon) 1/8 cup minced onion (optional) 1 Head of Broccoli, steamed 4 Carrots, steamed (or just use a bag or two of California blend instead of fresh vegetables) 1/3 cup margarine or butter 3/4 cup flour 7 1/2 ounces Cheese Whiz (or 1 cup grated cheddar cheese) Garlic Salt, to taste Heat bouillon and onion in the water until just steaming. Add broccoli, and carrots, being careful not to boil. When your vegetables are nice and soft make a roux using by me...

Soft Breadsticks

Soft Breadsticks              Grandma Carroll makes these breadsticks to go alongside her Best Chili.  They are so soft and delicious, my kids love them!   This recipe is so easy and quick you can have homemade breadsticks for dinner any time.  Simply mix, roll out and let rise 30 minutes and bake!   For a heartier flavor I like to  add some whole wheat flour in place of some of the white.  The large recipe makes two 11x17 inch rimmed baking sheets full, perfect for serving a large group of family or friends.   The small recipe makes 6-12 breadsticks on a rimmed baking sheet, which is often the perfect amount on a week night!                                          Small Batch (fi...

Broas

Image
Broas (ladyfingers) are commonly made from the simplest ingredients: eggs, sugar and flour. Like other sponge cakes, ladyfingers traditionally contain no chemical leavening agent, and rely on air incorporated into the eggs for their "sponge" texture. The mixture is piped through a pastry bag in short lines onto sheets, giving the cookies their notable shape. The finished ladyfingers are also commonly given to infants, being soft enough for teething mouths but easy to grasp and firm enough not to fall apart.

Greens with Blackberries, Blueberries, Sugared Walnuts and Feta

Image
Greens with Blackberries, Blueberries, Sugared Walnuts and Feta and Pink Poppy Seed Dressing The summer my husband and I were married, we worked for the Forest Service in the Sawtooth Mountains of Idaho, up near Sun Valley.  I worked a second job at The Rocky Mountain Ranch, a rustic hotel/lodge nearby.  The chef at the restaurant served a lot of wonderful salads, which were topped with gorgeous berries, fragrant cheeses, sugared nuts and homemade dressings.   I was in heaven!  (And took lots of notes!)  I was totally inspired and came away with a whole new approach to salad!  "Say goodbye to tomatoes and carrots and say hello to berries!"  To this day berries, fruits, nuts and cheeses are the first thing I think of throwing on a salad.  If you have children who hate salads...forget the tomatoes and cucumbers and add some favorite seasonal berries, and the Poppy Seed Dressing!...

Image
One of our family's favorite traditions is to eat breakfast for our meal after Church each Sunday, we usually just have pancakes or waffles, but sometimes I like to change it up. M & M's Cookies

Image
I got a new cookbook last week, and I've had a great time looking through it. It's called the Romney Family Table by Ann Romney. There were tons of recipes in this one that I wanted to try and I loved hearing about Ann's family traditions. This recipe was one of those that I marked to try. The best thing for me was they actually turned out in our oven! I halved the recipe and still ended up with almost 5 dozen cookies. I think next time I will take out about a half a cup of oatmeal and add the extra bit of light corn syrup, because when they cooled they were crispier than I would have liked. They still tasted delicious, and there's no flour in this recipe, looks like it's gluten free to me! M & M's Cookies The Romney Family Table by Ann Romney, page 18 2 cups sugar 2 cups brown sugar 1 cup butter 6 eggs 1 teaspoon vanilla 3 cups peanut butter (recipe calls for crunchy, but I only use light and it worked fine!) 2 to 4 tablespoons light corn syrup 4 teaspoons ...
