Unbaked Cheesecake

Raspberry, cherry, blueberry, wild berry, strawberry... What's the best kind of fruit to top this with?  How about trying 5 different pans to find out?  And invite me over to help sample them!  Home made pie filling or fruit sauce works, too.  Then top each piece individually in the serving plate.  Mmm... Base:        2 cups graham crumbs                  1/4 cup sugar                  1/2 cup melted butter Topping:  1 (8 oz.) pkg. cream cheese                  1 cup powdered sugar                  1 1/2 cups milk               ...

Pizza Crust

I love, love making pizza!  There are so many kinds to be tried.  This crust recipe is from Pioneer Woman's kitchen.  Or pretty much the same.  And it's really, really easy! 1 tsp. yeast (I use instant) 4 cups all-purpose flour 1 tsp. salt 1/3 cup olive oil 1 1/2 cups warm water Mix yeast and water.  In a mixing bowl combine flour and salt.  Drizzle olive oil over top and mix until combined.  Next, pour in yeast and water mixture and stir until just combined into a ball.  Toss the ball of dough in a little more oil and cover bowl tightly with plastic wrap.  Store in the fridge until you need it.  Note:  PW says it's best to make the dough at least 24 hours ahead of time.  I usually don't plan that far ahead so I like to make it in the morning to use later in the same day.  But you can leave it in the fridge for 3-4 days. To use:  This makes two large crusts.  Preheat oven to 450 or hotter....

Cheeseburger Soup

Simple Fresh Fruit Salad

Image
Simple Fresh Fruit Salad Cantaloupe Watermelon Honeydew Melon Strawberries Grapes, Red and Green Granny Smith Apples Gala Apples Pineapple (can/cans of  DOLE chunk) Mint, optional Simply cut the fruit into bites size chunks and toss. I used  DOLE  canned pineapple and use part of the juice as a sauce for the salad. If you use apple or a fruit that might brown, quickly toss in the pineapple juice after slicing.

Caesar Salad

Serve this crisp, flavorful salad with a pan of juicy lasagna and fresh French bread!  1 bunch Romaine lettuce, cut or torn 1/2 cup crumbled bacon Parmesan cheese Caesar flavored croutons Mozzarella cheese Dressing: 1 cup mayonnaise 1/3 cup sugar 1-2 T. red wine vinegar 1/2 tsp. garlic salt 1/4 cup cream 1 tsp. fresh ground pepper Mix salad ingredients in a large bowl.  Mix dressing ingredients by shaking or stirring.  Toss as much as needed with the salad, and keep the rest in the fridge for next time.

Snowy Evening Cinnamon Rolls

I'm sure a recipe with a name like this has got to be genuinely Canadian, but please don't wait for snow to make these!  I like this recipe because it makes so many rolls you have some to share with someone else, AND some to put in the freezer for later. 2 cups warm water 2 cups milk (or 4 cups warm water and some milk powder) 3/4 cup shortening 3/4 cup sugar 2 T. yeast 1 T. salt 2 beaten eggs 10 cups flour margarine cinnamon brown sugar Sauce: 3/4 cup milk 3 cups brown sugar 3/4 cup margarine Warm milk and add shortening to soften.  Add warm water, sugar, yeast, salt, beaten eggs and 4 cups flour.  Mix thoroughly and then knead in the rest of the flour.  Let rise until double. Heat sauce ingredients until boiling.  Pour into 3 greased 9X13 pans. Divide dough into three parts.  Roll each out into a rectangle and spread with margarine.  Sprinkle with cinnamon and sugar.  Roll up and slice.  Place on prepared pans.  Let rise...

French Bread

Mmmm... the smell of fresh baked bread!  Quickly grab some butter and honey and cut yourself a nice thick slice. 2 1/2 cups warm water 1/4 cup oil 1/4 cup sugar 2 T. yeast 2 tsp. salt 6 1/2 cups flour Stir together water, oil, sugar, yeast and 2 cups flour.  Add salt.  Add rest of flour.  Stir until it forms a ball, then dump on the table and knead until smooth, sprinkling with more flour as needed.  (Or if you happen to have such luxuries like a dough machine in your kitchen, I'm sure you know very well how to use it!)  Work the dough down every 10 min. for an hour. (set the timer) This is what gives the bread a nice texture.  Divide into either two or three equal pieces, depending on whether you want bigger or smaller loaves.  Roll out to less than 1/2" thick on a floured table top.  Roll up like a jelly roll.  Place on greased cookie sheet and slit 3 or 4 times.  Let rise until double.  Bake at 400 degrees for 25 min.  ...

Greek Lemon Chicken Soup

Image
2 baked chicken leg quarters, skin removed and shredded 6 cups chicken broth 1 grated carrot 1 small onion, diced 2 garlic cloves, minced 1/4 cup fresh lemon juice 3 teaspoons corn starch, dissolved in the lemon juice 1 teaspoons of Greek Seasoning 1 cup ruffles pasta cup heavy cream Salt and pepper to taste Place chicken and broth in a stock pot. Add the carrots, onion, garlic and Greek seasoning. Bring to a boil. Add pasta, and simmer until the pasta is tender. Slowly add in the lemon juice/corn starch mixture. Stir until thickened. Remove from heat and add heavy cream. Taste and adjust salt and pepper to taste. I served it with Hush Puppies .

BBQ Meatballs

I've made this quite a few times for potlucks, because I can make the meatballs earlier in the week and freeze them. Then on Sunday all I have to do is put them in the slow cooker with sauce and turn it on.  They are very well loved! Meatballs: 3 lbs. hamburger or ground pork 2 cups oatmeal 2 eggs 1 cup chopped onion 1/2 tsp. garlic powder 2 tsp. salt 1/2 tsp. pepper 2 tsp. chili powder Sauce: 2 cups ketchup 1 cup brown sugar 1 T. liquid smoke 1/2 tsp. garlic powder Mix and form into small balls.  Arrange in a large, lightly greased pan.  At this point you can bake them uncovered until done and put into the freezer for later.  Or pour the sauce over, cover with foil and bake at 350 for 1 1/2 hours.

Mustard Sauce

Eat it with your sausage, Eat it with your ham, Put it in a sandwich, Make it if you can... This has become a family tradition for Christmas and Easter ham dinners.  It would also be good as a dipping sauce for chicken fingers.  And, yes, it's very good cold in a ham sandwich made with leftover ham! Mix 1 cup sugar and 3 tsp. dry mustard Add 2/3 cup vinegar Fold in 3 beaten eggs Boil 5-15 minutes.  Add 1 T. margarine and a pinch of salt. Note: I usually use a squirt of prepared mustard instead of dry.

(Almost) Swig Sugar Cookie Recipe

Image
I will NEVER make these cookies again!!  (Unless it's a giant gathering so I can be sure that all cookies are eaten and will not find a cozy spot in my fridge to taunt me day after day!) These are so good and pretty much just like the cookies you find at Swig.  I didn't have sour cream so I used vanilla greek yogurt (don't tell Kenny or I will kill you!) in it's place in both the cookies and frosting. Turned out wonderfully! I liked the extra vanilla flavor.  I didn't use almond extract because I don't like almond extract and Swig doesn't use it either. *see tips below.  I cooked, cooled, frosted, then put them in the freezer to harden up the frosting so I could stack them and store them in the fridge, since Swig cookies are cold. D-E-L-I-C-I-O-U-S! I ate them for breakfast, lunch, and dinner and made my kids take a bunch to school to get them out of my house! They are evil. You should give them a try! :)  Thanks lady in Bountiful that figur...
