Smoked Salmon Ball

8 oz. cream cheese, softened 16 oz. can of red Salmon, drained 1 bunch of green onions, minced 2 tablespoons lemon juice 1 teaspoon liquid smoke dash hot red pepper sauce chopped nuts or parsley directions: Mix all ingredients except nuts or parsley.  In small bowl lined with plastic wrap, chill mixture until firm.  Shape into a ball.  Remove plastic wrap.  Roll in nuts or parsley. Serve with crackers or chips.

Chocolate Blueberry Muffins Recipe for Autism Awareness Day.

LIGHT AS A CLOUD LEMON SAUCE

This wonderfully tart lemon sauce would be a lively accompaniment to angel food cake, gingerbread or pound cake. 1 stick butter~only butter will do 4 eggs 2 cups sugar 1/2 cup freshly squeezed lemon juice~strained 1 tablespoon cornstarch 1 tablespoon lemon zest Melt butter in saucepan (not aluminum) over low heat. Blend eggs, sugar, lemon juice and cornstarch in a blender. Add to melted butter and cook on low heat, stirring constantly. Cook until mixture is thick and bubbly, about 8 minutes. Remove from heat and add lemon zest. Serve warm or cold. Yield: 2 cups...keeps a long time...if it lasts that long.  "When life gives you lemons, make lemon sauce."~Adele Forbes

Applesauce Cake

 I opened a huge number 10 can of applesauce for my boys as a part of last nights dinner.  So then I needed to use it up.  I found a recipe for applesauce cake and made one for them and altered a few things to make one for me. So I started with a bunch of almonds and put them in my bosch with the blades.  Then I ground it into a finer flour with my handy dandy mill.  The recipe called for 2 Cups of flour so I substituted 2 Cups of almond flour which has about 6 carbs per cup instead of 40 carbs per cup in the white flour.  The only other substitution I made was using Splenda instead of the Brown Sugar. OLD-FASHIONED DOUBLE-CRUST APPLE PIE

For some odd reason visions of apple pie have been meandering through my poor ol' brain this entire day. I kept trying to slap them away but one by one they marched right through my brain and into my subconscious, so I finely decided that the best way to beat them was to join them. So here it is....Enjoy! Pastry for double crust 9-inch pie 8 tart apples, peeled, cored, and sliced Juice and zest of 1 lemon 1/2 cup sugar 1 teaspoon cinnamon 3 tablespoons butter, cut into small pieces Fill pastry-lined pie shell with sliced apples. Mound them up high. Sprinkle with lemon juice and zest, sugar and cinnamon. Dot with butter. Cover top with second pastry, use knife to make vents, seal and crimp rim. Bake in pre-heated 350 degree oven for 60 minutes, or until crust is golden brown. Cool well before serving. Yield: 8 slices

When life gives you stale bread....

MAKE BREAD PUDDING!!! you need bread that is stale or dried out. It can dry at room temp. just by hanging around a bit past its prime, or, you can dry it in a low oven. This is a very tasty way to use old bread. you need 6 to 8 slices. Can use white, whole wheat, or a mixture of different breads. I used homemade Oatmeal bread. Mmmmm..... Bread pudding is a very frugal, homey thing. Its not fussy. Just use what you have. Anyway, the bread needs to be "dried out". Then cut it up into cubes. Throw them in a 8" or 9" square pan that you have buttered. Throw in a handful of raisins. Or other dried fruit. Oven at 350*. In another bowl, pour 2 cups heavy cream. Or milk. Whatever. 4 eggs, beaten 3/4 cup brown sugar 1 tsp. vanilla 1 heaping tsp. cinnamon Whip this mixture up good with a wire whip. Pour it over the bread and raisins in the pan. VELVETY CHEESE SOUP

Kids of ALL ages love this soup! It is velvety, rich, and very possibly the creamiest soup you have ever had the pleasure of eating. 1 stick butter 1 cup finely diced celery 1 cup finely sliced carrots 1 cup finely diced onion 1/2 cup flour 3 tablespoons cornstarch 8 cups chicken broth 4 cups evaporated milk 4 cups water 1 lb. grated Cheddar cheese 1 lb. cubed Velveeta cheese 1/4 teaspoon baking soda 2 tablespoons chopped parsley salt & pepper to taste Melt butter in large soup pot. Saute vegetables until tender. Stir in flour and cornstarch. Cook for 1 minute, stirring constantly. Add broth, milk and water gradually, blending until smooth. (A wire whisk works well for this.) Cook over low heat, stirring constantly until cheese is melted. Add cheeses and soda, stir constantly until cheese is melted. Season with salt and pepper. Garnish with additional cheese. 2 pounds ground beef ...1 (1.25 ounce) package taco seasoning mix 1 1/2 cups water 1 (15 ounce) can mild chili beans 1 (15.25 ounce) can whole kernel corn, drained 1 (15 ounce) can pinto beans, rinsed and drained 1 (14.5 ounce) can stewed tomatoes 1 (10 ounce) can diced tomatoes with green chile peppers 1 (4 ounce) can chopped green chilies 1 (1 ounce) package ranch salad dressing mix Directions: In a Dutch oven or large kettle, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients. Simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.

Swedish Pancakes

I should probably begin this post with three confessions. First, even though I call this a recipe blog, this post does not offer a recipe. It's more of a referral or a recommendation. Second, I can't say that I know anything about authentic Swedish pancakes, so take what I say here with a grain of salt. I think of these more as crepes. Finally, I'm probably recommending something here that you already make at home and do so easily and cheaply. I have made crepes before, and I love them, but this is a shortcut for when I'm feeling lazy. That being said, I dropped by IKEA on a whim yesterday and found that they sell pre-made Swedish pancakes (Pannkakor) in the frozen food area. There are a dozen to a bag and each bag costs about $4.30. All you do to reheat them is to put them in the microwave for a few minutes. Voila! EASY ANTIPASTO PLATTER

Antipasto is my favorite appetizer....I love all the meats, cheeses, olives, peppers, pickles and crackers that you can pile on a platter. Use your imagination and the ingredients that please your palate! Serve with ice cold beer and wine. 1 log goat cheese coated in 2 tablespoons fresh chopped parsley 1 jar each of pickled asparagus, beets, green beans and okra Any Boar's Heads meats and cheeses that you like~mix it up kalamata olives roasted red bell peppers~cut into pieces little balls of fresh mozzarella Assorted crackers and breadsticks Arrange everything decoratively on a pretty platter. Place crackers and breadsticks in a cloth covered basket. Enjoy!

Speedy Lorraine's luscious chocolate birthday cake

Searching the internet you can find thousands of chocolate chip cookie recipes so why should you try this one, you should try this because it's big and yummy,chocolatey and delicious and easy to make this recipe makes around 20 cookies so there's plenty for you to take to work during the week just store in a air tight container. Meat Loaf

My dear daughter Tabetha called today asking for my meatloaf recipe. This presents a bit of a problem. Which one? I use a variety of recipes, and I also use no recipe. Meatloaf is: meat, some sort of bread, eggs, seasoning, tomatoes (or not). With these basic ingredients you can make meatloaf. Add to it, take from it as you wish. But there are several recipes that I also use. I will start with this one, your basic Mom-style meatloaf. This one comes from one of my favorite cookbooks. Farm Journal's Country Cookbook. I got it used, and the covers have since fallen off. But it has some great recipes! Pasta Salad

Pasta Salad is one thing I have missed over the last two months and now I don't have to any more!  This Pasta is Dreamfields pasta.  You can buy it at Albertsons and it only has 5 digestible carbs per 3/4 cup serving.  I am thinking this can be a great filler in recipes when it calls for rice or other starches. The recipe I use for Pasta Salad is. Pasta Olives Cucumbers Cheese Broccoli Cauliflower or any other low carb cheese or vegetable Add Italian Salad Dressing and top with Parmesan Cheese.

Cheese Cake

I wish I had taken a picture of this.  When I make it again I will do just that.  Next time I will make cupcake sized portions that I can freeze and take out whenever I feel the need and top with strawberries. There is no crust for this cheesecake but you can make a low-carb crust by using ground almonds, butter and Splenda.  FYI about 30 almonds equal three carbs. -24 ounces of softened cream cheese -1 Cup extra-fine whole milk ricotta cheese (or cottage cheese that has been processed in the food processor -1/2 Cup Sour Cream -1 1/2 Cups Splenda -1/3 Cup of Heavy Cream -1 Tablespoon vanilla extract -1 Tablespoons Fresh lemon juice -2 eggs -3 egg yolks Spray your Springform pan or I used a glass round cake pan with nonstick cooking spray.  Set aside.  In a shallow roasting pan big enough to fit the cake pan, pour about 1-inch of water and place it on the center rack of the over to preheat. Zucchini Bread

Ingredients: Vegetable oil spray for greasing baking pan 1 cup soya powder 1 cup almonds, finely ground 1 cup granular sugar substitute 1 1/2 teaspoons ground cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 cup vegetable oil 4 large eggs 1 medium zucchini, coarsely grated (about 1 1/2 cups) 1 teaspoon vanilla extract Directions: Preheat oven to 350 F. Grease an 8x 4 loaf pan generously with oil spray; set aside. In a large bowl whisk together bake mix, ground almonds, sugar substitute, cinnamon, nutmeg, salt, baking soda and baking powder. In a medium bowl, whish together oil, eggs, zucchini and vanilla extract. Mix zucchini mixture into dry ingredients until just combined. Pour batter into prepared pan. Bake 45 minutes until golden brown and a cake tester inserted in center comes out clean. Cool in pan for 10 minutes before removing loaf from pan. Cheese soup

Cheese Soup 5 cups chicken broth 1 package of California blend vegetables (broccoli, cauliflower, carrots) While this is coming to a boil make a roux of 1/2 cup flour and 1/2 cup butter (cook until it starts to turn brown) cut up 8 oz. of Velveeta into cubes Add your flour/butter slowly stirring well Add the velveeta and stir until it melts Add pepper if you like. I serve it to my family in bread bowls. Of course, I go without the bread. Yummy!

Meat and Celery Soup

For lunch today I made some delicious soup.  Spike keeps thinking about going on this low carb diet with me but just can't quite commit.  He gets what I get for lunch and if he wants to indulge himself in more carbs he has to get his own ;)  He was pretty satisfied with this soup though Swanson Chicken Broth doesn't have any carbs in it so it is a great start to any soup.  Just dice up the celery and chicken or pork.  I had some left-over pork chops so I used those.  Put then in a pot together and add about 2 table spoons of butter and bring it to a boil.  Soups On! To balance out the lunch I had some sugar free Jello. No carbs there and had a can of diet Shasta Grapefruit, mmmm, my favorite.

Strawberry Sorbet

Here is another recipe for those of us who are cutting down on carbs.  I am thinking this would be a great replacement for when the rest of the family is eating ice cream.  Just put a lite topping on this and is should be great. Sorbets are such a fantastic dessert.  They are quick and easy to make, fairly healthy (for a dessert), and are a great ending to just about any meal.  This sorbet had a great texture � very fruity, smooth and not too icy.  I did not strain out the seeds because I like them, but you certainly could if you want an even smoother texture.   Kind of a strawberries and cream thing going on � yum!  The only thing I will change next time will be to make a double batch, as the original recipe doesn�t yield much more than a pint and I like to make more than that at once. Sour cream beans

2 pieces of bacon 1 can of green beans 1 plop of sour cream 8 or 10 chunks of cheddar cheese Fry the bacon and remove from pan. Put the drained green beans into the pan. Add in the plop of sour cream and the cheese. Stir it around and put the lid on until the cheese melts. Break up the bacon and add it back into the beans. Stir one more time.

Chocolate Roll Cake

I got online and found a flourless recipe for a chocolate roll cake. I figured if I substituted the Sugar it called for with Splenda and the chocolate chips with splenda and cocoa powder and butter, then all would be well. It is better than I ever hoped for. Now I can have my chocolate fix without any added carbs, except for the little bit of carbs in the Lite Whipped Topping. Here is the recipe if anyone wants to make it. My boys even liked this better than the Brownies that I made them. Al Forno's Roasted Asparagus

This recipe for roasted asparagus is only slightly different from a recipe I posted previously. In this case, there is no Parmesan cheese or black pepper, and the asparagus is cooked at a higher temperature. But I like both versions. This recipe comes from The Essential New York Times Cookbook . "You'll love the strategy in this recipe. By placing your oven rack on the highest shelf and roasting the asparagus on it with the oven cranked to 500 degrees, you get perfectly roasted sprouts--shocked with heat on the outside, moist as morning grass on the inside. 1 1/2 pounds asparagus 2 to 3 tablespoons olive oil Kosher salt 1. With  St Patrick's day fast approaching tomorrow. I thought  I would post this delicious recipe and with Baileys being my favourite liqueur it would be nice to share it with you all, but you can't pinch my Baileys buy your own cheeky. Found this recipe in my files it's along time since I've made it so I thought I give it another go and yes it still works even though the kids are a lot older now. Suruttai Poli - Indian Cooking Challenge, Feb 2011

Suruttai poli, a traditional sweet preparation of South India, was chosen by Srivalli as the recipe for Indian Cooking Challenge for the month of February, 2011. This recipe is suggested by Nithya of 4th sense cooking, who stated her mother?s traditional, tried & tested recipe. I had never heard about this dish so it was a real challenge to attempt. When I searched the net for pictures, I came across Pavithra's recipe on how the final dish will look. Suruttai means rolled up and poli, generally refers to the sweet poli. It somehow resembled patisapta (a traditional sweet / savoury preparation in Bengali), stuffed with fillings of khoya & kheer / grated coconut, mixed with jaggery and rolled tightly. EASY WHITE WINE CAKE

When presented with their first taste of a white wine cake, most individuals don't have a clue as to what ingredient is lending it's uniqueness to the exceptional flavor of the cake, but you can count on them requesting the recipe each and every time. 1 box yellow cake mix 1 (3 � ounce) box instant vanilla pudding 4 eggs � cup canola oil � cup water � cup  dry white wine like Riesling or Sauvignon Blanc 1 � cups chopped pecans Preheat oven to 325 degrees. Mix all ingredients, except nuts for 1 minute on low speed. Scrape sides of bowl, and mix on medium speed for two minutes. Fold in 1 cup of pecans. Grease and flour a 10-inch tube pan, and sprinkle remaining pecans on bottom of pan. Add cake batter and place in oven. Bake for 50 to 60 minutes. Cool on baking rack. FETTUCINI ALFREDO with PEAS AND CHICKEN

Here at the Forbes house we get strong cravings for pasta from time to time, so I try not to fight it and just go with it. Yesterday thoughts of a creamy, dreamy Alfredo sauce kept invading my brain so last night I came up this mighty tasty pea and chicken pasta dish. I sincerely hope that you will enjoy it as much as we did. It is finger licking good! 8 oz. fettucini pasta 10 oz. frozen green peas 1 large boneless, skinless chicken breast, pan-fried in Amish butter and cut in chunks 1 (28 oz.) jar light or regular Alfredo sauce Bring a large heavy stockpot full of salted water to a rolling boil over high heat. Break the fettucini in half and add to boiling water one half at a time. Never add pasta all at one time to the water, you always want your water to remain at the boiling point. AMAZING JALAPENO PIMIENTO CHEESE

"I Never Ever met a pimiento cheese that I did not like!"~ Adele Forbes....From Ruth's Famous Salad Dressing's, Pimiento Cheese Spread, to this rockin' hot and savory version of down home Southern comfort, just place it in front of me and I will eat it. I love it just plain on a spoon or in a sandwich or on top of a cracker or lying snug as a bug in a rug on a spear of celery....just bring it on! 8 oz. cream cheese, softened 1/3 cup chopped jalapeno pepper 1/4 cup Duke's mayonnaise 2 tablespoons pickled jalapeno juice 2 cups shredded cheddar cheese 2 cups shredded white cheddar cheese 2 (7oz.) jars diced pimiento, drained 12 oz. jar roasted red bell pepper, chopped and drained In bowl of electric mixer combine cream cheese, jalapenos, mayonnaise and pepper juice. Stir in cheeses, pimientos and bell peppers. Cover and refrigerate at least 4 hours. Yield 6 cups

MARASCHINO CHERRY BROWNIES

There is absolutely nothing quite like a maraschino brownie. The red jewels of the cherry fit into the double chocolate batter just like your hand fits into a satin glove.... 2 c semisweet chocolate chips 1 jar maraschino cherries (reserve the juice) 1 stick butter 1 c sugar 1 1/4 c flour 1/2 tsp baking powder 1/2 tsp salt 1 tsp vanilla shop 3 eggs, beaten 1 12 oz. bag chocolate chunks or pieces 1 to 2 Tbsp. reserved maraschino juice 1/2 cup confectioners sugar 2 Tbsp. butter Drain the cherries, saving the juice for the icing. Coarsely chop the cherries and set aside. Melt the chocolate chips and butter in large saucepan; remove from heat. Stir in flour, vanilla, baking powder, eggs and salt. Stir in chocolate chunks and chopped cherries. Spread into a 9x13 baking pan and bake about 35 minutes at 350 degrees. Cool. For icing, combine reserved cherry juice, icing sugar, and butter. Mix to form a glaze then drizzle over brownies decoratively.
