Trip to Srilanka, (Nuwara Elliya/ Kandy)

During the school holidays, we decided to visit Sri Lank, much to the surprise of one of my  friends from the school group. " most parents in our school doesnt go to sri lanka"? I was like , whats wrong with Sri Lanka? ".   We don't visit Sri Lanka that often, the last time we went was two years ago and that was for my father's heart bypass surgery, so it wasn't really a vacation , the kids were stuck in an apart ment and kept them selves entertained indoors. So this time , I booked a tour with Aitken Spence   Travels to tour the hillside towns of Nuwara elliya and Kandy.  The tour operator was very helpful but its pricey so I would advise  parents with slightly older kids to take it so you can go on long hikes and all. Maybe next time I will just book one of the taxi services  like Kangaroo Kabs  to the hill towns, but over all it was a nice trip. White Brigadeiro, Strawberry and Nutella Lasagna

INGREDIENTS BRIGADEIRO 2 cans of condensed milk 2 tablespoons butter room temperature GANACHE 500 grams of melted milk chocolate 200 ml of cream without milk 1 tablespoon butter room temperature CREAM OF NUTELLA 200 ml of nutella 150 grams of cream without milk Strawberries METHOD OF PREPARATION BRIGADEIRO: Make the brigadier white. Mix the condensed milk in a pan, with low heat When you begin to release from the sides, turn off the fire. Take to freezer for one hour GANACHE: Put the chocolate in the microwave every 30 seconds, to melt. Melt the butter and then the cream. Mix well until smooth Refrigerate for 40 minutes CREAM OF NUTELLA Mix the 200 grams of Nutella with the 150 grams of cream without the serum until diluted. BLT salad

Any kind of lettuce mixture Cooked bacon crumbled Avocado diced Tomatoes-cherry or chopped or diced Dressing White wine vinegar Olive or avocado oil Honey Honey Dijon mustard Stir or whip together

Tapioca pudding

1/3 cup small pearls 3 eggs 1 1/4 cup coconut or almond milk 1/2 cup water 1/3 cup xylitol Rinse pearls, put milk, water, eggs and xylitol in blender. Put a medium bowl in pressure canner with about 1/2 inch of water in bottom of pressure canner then wire rack and then the bowl. Put pearls and then milk mixture. Cook for 14 minutes, stir, add vanilla. Cool in the refrigerator or eat warm.

Lentil stew

1 cup lentils 2 1/2 cups water 1 bay leaf 1 tsp. salt Beef, turkey, chicken sausage cut in chunks about 1/2 pound 3-4 cups stewed tomatoes or 1/4 cup tomato paste with 2 cups water 1/4 tsp oregano 1 T minced garlic 1 minced onion 1 cup celery Mushrooms sliced Put in pressure cooker for 14 minutes.

Almond bars

1/2 pound almond paste crumbled 2 sticks butter 2 cups sugar 2 eggs 2cups flour Combine ingredients in order given. Bake 350 degrees for about 30 minutes in a 9 x 13 pan.

Cinnamon rolls

5 tsp. yeast in 2 cups lukewarm milk Add 1/2 cup sugar 1 cups bread flour Add 1 tsp. salt 1/2 cup melted butter 4 beaten eggs 4-5 cups flour Put in greased large bowl covered with a clean towel til doubled in size. Divide in half, roll out into a rectangle with dough about 1/2 inch thick. Brush on melted butter, brown sugar, white sugar, and cinnamon. Roll up tightly and cut in about 1 - 1/2 inch slices, place in greased baking pan about 1/2 inch apart, let rise about 10 - 15 minutes. Bake 350 degree oven for about 30 minutes.

Zucchini Bread

3eggs 2cups sugar(you can use 1/2 unsweetened applesauce) 1cup oil 1T vanilla 2cups flour 1T cinnamon 2tsp. baking soda 1 tsp. salt 1/4 tsp. baking powder 1 cup walnuts chopped 2 cups shredded zucchini Mix together all ingredients except nuts, and zucchini. Fold in shredded zucchini and nuts. Pour into 2 greased tins. Bake at 350 degrees for 45-60 minutes.

Banana Bread

3/4 cup butter 1 1/2 cups sugar 4 eggs 4 large bananas 1 1/2 tsp. Baking soda 1 1/2 tsp. Salt 1 1/2 tsp vanilla 3 cups flour 3/4 cups walnuts Cream butter and sugar. Add eggs, mix well. In separate bowl mash bananas and soda. Mix bananas with batter mixture, add salt, vanilla, and nuts. Grease 2 bread tins. Bake 350 degrees for 60-75 minutes.

Beer Bread

1 12oz. can light beer Add 3 cups flour(use self rising flour) 3 T sugar Put in loaf pan and bake at 350 degrees till done.

Cheesy Sausage Strata

This yummy, make-ahead breakfast casserole serves a crowd and is easy to put together.  If you want a smaller recipe it's simple to reduce to 2/3 or 1/3.  I've used this recipe many times. 1 1/2 lb. bulk pork sausage 9 eggs, lightly beaten 3 cups milk 9 slices bread, cubed 1 1/2 cups shredded cheddar cheese 1/2 lb. sliced bacon, cooked and crumbled 1 1/2 tsp. ground mustard In a large skillet, fry sausage until done.  Drain.  In a large mixing bowl whisk eggs, milk, and mustard until combined.  Add bread cubes, bacon, sausage and cheese.  Stir gently to combine. Transfer to a greased shallow 3qt. baking dish or 9x13" pan.  Cover and refrigerate overnight. Remove from refrigerator 30 min. before baking.  Bake covered at 350� for 60-65 min. or until a knife inserted near the center comes out clean.  Remove the cover for the last 10 min. of baking time to let the top brown.  Let stand a few minutes before serving. *I usually don't do the fu...

Lanae's Crockpot Chicken

This delectable chicken comes from the Koehn family's kitchen.  The ingredient list is long, but the moist, savory result is totally worth it. chicken legs or wings flour salt Salt the chicken pieces, dredge in flour, and fry in a small amount of oil until browned. Sauce: 1/2 cup yellow or orange jelly (apricot or pineapple) 1/4 cup cooking wine 1/4 cup oil 1/4 cup vinegar 1/4 cup water 1 T. soy sauce 1/2-3/4 cup chopped onion 1 T. chopped celery 2 tsp. beef bullion 1 1/2 tsp. garlic powder 1 1/2 tsp. oregano 1 1/2 tsp. parsley 1/2 tsp. basil 1/2 tsp. black pepper 1/8 tsp. thyme (opt.) Stir sauce ingredients together.  Add more water if needed.  Place fried chicken in slow cooker, pour sauce over, and bake on high for 2-3 hrs until done.

Beef Fondue

A few weeks ago, I made cheese fondue for the first time in many years and loved it (see Family Fondue )! But I also have fond memories of eating beef fondue as a child, so I found some recipes and gave it a try. Two thumbs way up! Part of it is just that I like the fondue experience itself--sitting around a table with family or friends and chatting while you cook your food and eat it. But the fondue itself is very tasty. The meal seemed to be a hit with everyone. Two changes I may make the next time I do this. First, I think I may marinate half of the meat and leave the other half unmarinated, so that the flavors of the sauces come out more. Second, I'd like to try cooking the meat in broth rather than vegetable oil. Vegetable oil is the tradition I grew up with, but I presume it is less healthy than broth, and the oil spattered a little every now and then. Anyway, you should give this try. Tuna and White Bean Stew

In Maldives we get tuna fresh from the surrounding sea and although we make it into curries and smoke them, I wanted to make something different. I saw this recipe , via pinterest where some white fish is cooked with white beans in tomato sauce and flavored with basil.  I decided to use tuna instead and basil can be easily found  in Maldives, White beans is not especially in the islands. So the second time I did this recipe I used a can of baked beans. I drained (yes I can hear a few gasps) the tomato sauce and used just the beans instead. I used a chilli to give a bit of heat . Ingredients: 1-1/2 cups butter (no substitutes) 6 squares (1 ounce each) unsweetened chocolate 3 cups sugar 5 eggs 1-1/2 teaspoons vanilla extract 1-1/2 cups all-purpose flour 3/4 teaspoon salt FROSTING: 2 packages (8 ounces each) semisweet chocolate 3 cups heavy whipping cream 1/2 cup sugar, optional 2 milk chocolate candy bars (1.55 ounces each), shaved TOTAL TIME: Prep: 30 min. + chilling Bake: 25 min. + cooling Ingredients Directions ?In a microwave or double boiler, melt butter and chocolate. Chicken, Spinach And Cherry Tomato Pasta

Yes, finally back to blogging , but suffering from a severe cold and cough, so my mind is a bit fuzzy. So how was the holidays! Now its back to reality and the school runs and other daily activities!. You know I noticed I say a lot of times," a handful or two "of something , well I never realized this until my hubby one day  brought it to my notice. He was out doing some grocery shopping and I asked him to bring a handful of chillies, He had taken out 9 year old little guy with him. He calls me up and goes , "whose hand am I to use, my hand size,  little guy or  yours (meaning me although my little guy's hands are almost my hand size now)??" So really it did get me thinking, I mean even Jamie Oliver sometimes  says take a couple of handfuls  and I pretty sure his hands are pretty big. A recipe from my favorite cooking vlogger--Chef John at Foodwishes.com. His sense of humor is kind of folksy and corny, but the cooking is solid and he makes things fun. Anyway, I just tried this recipe for the first time yesterday, and I really like it! It might well be my new favorite pie! There is another chocolate pecan pie recipe on this blog that I posted years ago, and it's still a good one, but I like the texture of this pie even better. It's so simple and so delicious. Recipe for the tiramisu cake ?? The recipe is for a small sheet about 20cm � 25cm For the floor you need: 2 eggs 50g sugar 45g of flour 15g cocoa powder 1 pinch of baking soda For the cream: 250ml whipped cream 400g of mascarpone 2-3 tablespoons of powdered sugar 60ml espresso Also: 12 spoonfuls cocoa powder Strawberries ?? 100g whole milk and 50g dark chocolate And this is how it is done: Beat the eggs, sugar and 2 tablespoons of cold water for about 5 minutes until creamy. Mix the flour, cocoa and baking powder, sieve and fold carefully. Spread on a baking tray covered with baking paper and bake in a preheated oven at 175 degrees for about 10-15 minutes. Allow to cool and drizzle with 2 tablespoons of the espresso. Beat the cream until stiff. Mix mascarpone with powdered sugar. Fold in cream. Spread half of the cream on the biscuit. Minute Tapioca the Way Mom Makes It (She triples these amounts for her large pot) 3 T Minute Tapioca 2 3/4 cups milk, divided 1/3 cup sugar 1 egg 1 tsp vanilla Mix tapioca and 2 cups of milk in large saucepan or pot. Add sugar and let sit for 5 minutes to allow the tapioca to soften a bit. Beat egg in bowl and mix in remaining milk. Add egg/milk mixture to pot. Stir until combined.
